FRIED APPLE PANCAKE RINGS(CARLA HALL)

Fried Apple Pancake Rings(Carla Hall) image

This recipe uses pancake batter to coat apple rings, then fried to perfection with an apple cider syrup! You can substitute whole wheat pancake batter or make your own. I have added my own recipe for apple cider syrup. The original called for reducing the cider by half and gave no amounts. This one is much quicker and yummy. I didn't have Bisquick, so made my own from a recipe on this site, substituting about 1/3 of the flour with whole wheat flour. From Carla Hall on the new ABC program, the Chew. Hootie!

Time 30m

Yield 4 serving(s)

Number Of Ingredients 12

1 cup Bisquick baking mix (or whole wheat pancake mix)
1 egg
1/2 cup milk (I used soy)
1 teaspoon pumpkin pie spice (or apple pie spice)
1/2 lemon, zest of
2 medium apples, pared and cored
1 3/4 cups apple cider (or juice)
1/4 cup packed brown sugar
1 -2 teaspoon lemon juice (optional)
2 tablespoons cornstarch
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg

Steps:

  • To make hot apple cider syrup:.
  • Bring juice and brown sugar to a boil, and simmer until sugar is dissolved. Stir in lemon juice(if using), cornstarch, cinnamon and nutmeg.
  • Reduce heat to medium low and simmer about 5 minutes, till syrup consistency.
  • Beat baking mix, egg and milk with whisk until smooth. Add pumpkin pie spice(or apple pie spice) and lemon zest to batter and mix until incorporated.
  • Grease griddle.
  • Core and cut apples crosswise in 1/8-inch slices.
  • Using a toothpick dip slices into batter(I used my fingers, but you could also use a fork or spoon). Cook on medium hot griddle until golden brown, turning once(about 3-5 minutes each side). Serve hot with apple cider syrup.
  • Enjoy!

Time 1h10m

Yield 6-8

Number Of Ingredients 22

1/3 cup water
1 teaspoon salt
1 tablespoon sugar
2 cups all-purpose flour
1 cup chilled butter (8 oz.-cut into 1/2-inch cubes)
4 granny smith apples (peeled and diced)
1/2 cup frozen cranberries
1/2 cup dried cranberries
1 pinch salt
1/4 cup brown sugar
1/4 cup granulated sugar
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
1 lemon (zest and juiced)
2 tablespoons cornstarch
1 teaspoon vanilla
1/4 cup water
1 cup brown sugar
3/4 cup all-purpose flour
1/2 teaspoon cinnamon
1/3 cup pecans (chopped)
1/2 cup chilled butter (cut into 1/2 inch cubes)

Steps:

  • For flaky pie crust(if using storebought crust, skip this):.
  • Combine water, salt, and sugar in measuring cup. Stir and place cup in fridge for at least 15 min (to chill water and to dissolve sugar and salt). If possible, chill mixing bowl and paddle attachment if possible.
  • Combine flour and butter pieces in mixing bowl. On medium speed with mixer, cut butter into flour until butter pieces are the size of small pebbles. With the mixer running, pour the water from previous step into the butter mixture. Mix until the dough comes together.
  • Separate the dough into 2 disks. Wrap each with film and chill.
  • Roll chilled pastry dish out to fit a 9-inch pie dish. Prick all over dough with a fork. Bake on 375 for 10-15 minutes, or until it is lightly golden. Set aside to cool.
  • For Cranberry Apple Filling:.
  • In a large bowl, combine apples and cranberries (frozen and dried) Stir in salt, sugars (brown and granulated), nutmeg, and cinnamon. Stir in the zest and juice of 1 lemon. If you don't like cranberries try dried cherries or raisins instead.
  • In a small bowl, combine water, cornstarch, and vanilla. Quickly stir mixture into apples. Adjust seasoning if desired.
  • Fill pie dish with apple filling.
  • For Crumble Topping:
  • Place all the topping ingredients into food processor and process until butter has been cut into the mixture. Carla tip: if you overmix your crumble just add extra nuts or oatmeal.
  • Sprinkle topping over top of pie filling. Bake at 375 degrees F for 30 minutes.
  • Enjoy!

PANCAKES FROM SCRATCH

Pancakes from Scratch image

My own pancake recipe. My grandsons always ask for these. I have been making them in a "farm animal" pancake pan.

Provided by Hag chef

Categories     Breakfast

Time 15m

Yield 4 serving(s)

Number Of Ingredients 8

2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 tablespoon sugar
2 eggs
2 tablespoons vegetable oil
2 cups milk (not quite)
vegetable oil

Steps:

  • Stir the flour, baking powder, salt and sugar together in a mixing bowl.
  • Beat the eggs and oil together in a 2 cup measuring cup. Add the milk, until it reaches the 2 cup level.
  • Add the milk mixture to the dry ingredients, stirring until it is just mixed, there will be some lumps.
  • * Do not over stir, you will have tough pancakes if you do!
  • Preheat a frying pan for 2 or 3 minutes.
  • Lightly oil the frying pan on medium to medium high heat. This may be trial and error, depending on your own stove. Ladle the batter onto the hot pan, turn over when most of the air bubbles have popped, or the bottom of the pancake is nicely browned. Brown the other side until the pancakes are cooked through.
  • Variations: add in some blueberries, chocolate chips or raisins before cooking, or just sprinkle some over the pancakes before you turn them over.

I think I practically lived on these when I was a kid...grandma made them for us all the time:) When served as a dessert, they are great with a dollop of whipped topping.
