EASY FRESH PEAR CAKE
Steps:
- In a bowl combine sugar with diced pears and mix together with a spoon. Add the eggs, cooking oil, vanilla and melted butter. Mix all with a spoon. In a large bowl whisk together the flour, salt, baking powder, ground ginger, cinnamon and cloves. Combine the flour mixture with the pear mixture and stir all ingredients together with a spoon until all ingredients are wet.
- Spray an 8 x 8 baking dish with cooking oil. Pour in cake batter and sprinkle nuts on top. Bake in a preheated 350 degree oven for 35 to 40 minutes or until center tests done. We don't think this cake needs frosting but we do sprinkle on some powdered sugar before serving.

- Preheat oven to 350 F.
- Peel and slice the Pears.
- In an electric mixer bowl, whip up the sugar and butter until well combined for about 1 minute.
- Add in the vanilla, lemon zest and eggs. Continue mixing on high speed for 1-2 minutes until they are well combined.
- Add in the baking powder, sifted flour and a pinch of salt. Mix again for about 1 minute. Gradually add ½ cup of milk and ⅓ cup oil while mixing on low speed. Mix for another minute or two on low speed.
- Line the bottom of the pan with parchment paper and grease or spray a round spring foam baking pan then pour the batter in. Ideally, a 10 x 3 inch deep pan is the best size.
- After placing the batter in your pan, spread a layer of the sliced pears to cover the whole batter. Sprinkle some cinnamon and the brown sugar on top of the pears.
- Bake in a pre-heated 350 F oven for 40 minutes then lay over an aluminum foil wrap on top to cover the cake and bake for another 10-15 minutes depending on your oven. Insert a wooden skewer to make sure it's completely clean before removing the cake. It may take less or a bit more time depending on your oven.
- Remove the cake from the oven and cover with a kitchen towel to let it cool down. It may take up to 1 hour to completely cool down. Dust with some confectioner sugar right before serving.

FRESH PEAR CAKE

- Combine the pears and the sugar and let stand for one hour.
- Preheat oven to 325 degrees F (165 degrees C). Spray a 10 inch bundt pan with non-stick cooking spray.
- Slightly beat the egg whites and combine them with the oil, chopped pecans and pear mixture.
- Stir the flour, salt, baking soda, nutmeg, cinnamon and cloves. Stir in the pear mixture. Pour batter into the prepared bundt pan.
- Bake at 325 degrees F (165 degrees C) for 1 hour and 10 minutes. Remove from oven ant let cool on a wire rack for 10 minutes before removing form pan.

- Peel and core the pears and cut into eighths; set aside.
- In a medium-size saucepan, combine the brown sugar, cornstarch and cinnamon or allspice. Stir in the juice or fruit nectar and mix well. Place the pan on medium-high heat and cook the sauce, stirring, until the mixture is smooth. Add the pears and bring the sauce to a gentle boil.
- Reduce the heat to medium-low and continue cooking, stirring occasionally, for 15 - 20 minutes or until the pears are just tender, almost translucent, and the syrup is thick. Stir in the rum and butter and heat a few minutes longer.
COMPOTA DE PERAS (PEAR COMPOTE)
Pear Compote (called Compota de Peras in Spain) is a dessert that is very easy to make. It's served all throughout the various regions of Spain, and is especially common in fall and winter when some of the best pear varieties are in season. In some homes in Spain, it is a traditional to serve this at Christmastime and other special occasions. It can be served warm or at room temperature, which is great because you can save a lot of time by making it in advance and serving it later. I've seen this recipe on various websites, but I got these exact measurements from the Just Spain tourist website. I use Bosc pears because they retain their shape during cooking, but you can use any variety of firm pear.

- Place pears in saucepan with all the remaining ingredients, and bring to a boil over medium heat. Cook 10 to 15 minutes or until the pears are very soft but still hold their shape.
- Remove from heat and let cool a little.
- Serve warm or at room temperature with some of the cooking sauce.
- NOTE: For a birthday celebration, I served these with the pears whole (which I peeled but didn't core, and I cooked them whole). It provided only 2 servings though. But you can cut the pears in half, remove the core, and you'll get double the servings.

- 1. Soak raisins in hot water for 5 minutes. Meanwhile, combine pear, walnuts and Cardamom in a small bowl. Drain raisins and add to bowl.
- 2. Melt the butter in a large skillet over medium-high heat. Season one side of the pork cutlets with 1/8 teaspoon each of the salt and pepper.
- 3. Place pork, seasoned side down in hot skillet and cook 2 minutes. Season with other side with another 1/8 teaspoon each salt and pepper. Flip over pork and cook an additional 2 minutes. Remove to a plate or platter. Cover with foil to keep warm.
- 4. Add pear mixture and sugar to skillet cook 1 minute. Remove skillet from heat and spoon pear compote over pork. Serve immediately.

- Preheat the oven to 350 F and parchment line the bottom of a 9-inch cake pan or two 5 or 6-inch cake pans.
- To brown the butter, melt the butter in a saucepan over medium heat. Stir the butter every once in a while so the milk solids on the bottom of the pan don't burn. You will start to see the milk solids turn brown and will notice a delightful change in smell – be careful not to burn it, but definitely make sure they're brown. This could take anywhere from 5 – 10 minutes depending on your stove top. Pour the butter into a heat proof bowl and place in the fridge. You want the butter to mostly solidify, but it should still be soft. I like to stir mine every once in a while to help it along. Remove from the fridge when it gets to this point.
- Add the brown butter to a stand mixer fitted with the paddle attachment (or a handheld mixer). Cream the butter and one cup of the powdered sugar on medium speed for 1 minute.
- With a large serrated knife, slice the cake evenly in half on the horizontal. If the top layer of cake has a large dome on top, follow the same steps to cut the dome off so it’s a completely flat piece of cake.
