SUMMER CORN CHOWDER

This Summer Corn Chowder is creamy, comforting and full of flavor. Made with bacon, garlic and cheese it's pretty hard to resist and can be enjoyed all summer long! Serve in big bowls with a side of crusty bread.

8 ears fresh sweet yellow corn, (husked and silks removed and kernels cut from cob)
3 Tbsp butter
5 slices bacon, (cut into 1/4 to 1/2-inch pieces (see note*))
1 medium yellow onion chopped ((1 1/2 cups))
1/4 cup all-purpose flour
1 clove garlic, (minced)
5 cups water (or low-sodium chicken broth)
1 lb Yukon Gold potatoes, (cut into 1/2-inch pieces)
1/2 tsp dried thyme
1 bay leaf
Salt and freshly ground black pepper
1 cup half and half
1 Tbsp honey
2 - 3 Tbsp chopped fresh chives
Shredded cheddar cheese, (for serving (optional))

Steps:

  • Melt butter in a large pot over medium heat. Add the onion and bacon and cook, stirring frequently, until onion has softened and just starting to brown around edges, about 8 - 10 minutes.
  • Add in the flour and garlic and cook 1 1/2 minutes. While whisking, slowly pour in 5 cups water or broth.
  • Bring mixture to a boil, stirring constantly, then stir in corn kernels and potatoes. Add in thyme and bay leaf and season with salt and pepper to taste.
  • Bring to a light boil, then reduce heat to medium-low and allow to simmer, stirring occasionally, until potatoes are tender, about 20 minutes.
  • Remove bay leave then transfer 2 1/2 cups of the chowder to a blender and blend until smooth.
  • Stir the mixture back into the pot then stir in half and half and honey. Sprinkle each serving with chives and optional cheddar.

1 stalk celery
1 medium onion
olive oil
½ teaspoon dried thyme
1 tablespoon plain flour
840 ml semi-skimmed milk
1 medium potato, peeled and cut into little cubes
3 spring onions
175 g frozen corn
¼ cup fresh chives, chopped, or parsley

Steps:

  • Pull the leaves from the celery stalks and set them aside. Chop your celery and onion. Heat the olive oil in a medium saucepan over a medium heat. Add the celery (not the leaves), onion, and thyme. Stir until the vegetables start to brown.
  • Sprinkle the flour over the veggies and stir for a few more minutes. Pour in the milk, add the potato and bring to a boil, stirring the whole time so the soup doesn't stick to the pot. Cook until the potatoes are tender, but not mushy - this will take around 10 minutes.
  • Meanwhile, chop the celery leaves, trim the ends off the spring onions and slice them thinly. When the potatoes are tender, stir in the corn, spring onion and celery leaves. Bring the soup back to the boil, then serve.
  • This is delicious with a crusty brown roll or a Parmesan crisp.

1 medium onion, chopped
1 pound red potatoes (about 3 medium), cubed

2 green onions, thinly sliced
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper

  • In a large saucepan, heat butter over medium-high heat. Add onion; cook and stir 2-4 minutes or until tender. Add potatoes, corn, broth, 1 cup cream, green onions, salt and pepper; bring to a boil. Reduce heat; simmer, covered, 12-15 minutes or until potatoes are tender., In a small bowl, mix flour and remaining cream until smooth; stir into soup. ¼ pound unsalted butter
1 medium onion, diced
2 bunches scallions, thinly sliced

1 cup chopped fresh cilantro

Steps:

  • Remove corn kernels from cobs and place in a bowl. Scrape 'milk' from cobs into bowl with the kernels. Reserve 1 cob.
  • Melt butter in a large saucepan over medium-low heat. Add onion, scallions, and garlic; cook until soft but not brown, about 3 minutes. Add corn kernels, corn milk, potatoes, and jalapeno. Cook, stirring frequently, for 10 minutes. Add milk, broth, and reserved cob. Simmer until potatoes are completely soft and soup is slightly thick, 15 to 20 minutes. Remove and discard cob.

4 ears fresh corn, in the husks
4 slices bacon, diced
1 tablespoon diced onion
1 tablespoon chopped garlic
4 cups chicken stock
2 medium Yukon Gold potatoes, peeled and diced
6 tablespoons butter
6 tablespoons all-purpose flour
1 ½ cups heavy cream
1 cup shredded cooked chicken
coarse salt and ground black pepper to taste
1 dash hot sauce, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Roast whole ears of corn directly on the rack of the preheated oven until kernels feel tender when pressed, about 25 minutes. Cool briefly, then peel back the husks and cut the kernels off the cobs.
  • While the corn is roasting, dice 1/2 the bacon slices. Heat a skillet over medium-high heat and saute bacon until evenly browned, 5 to 7 minutes. Drain on paper towels and reserve 1 tablespoon of the fat.
  • Add onion and garlic to the pan; saute until transparent, but not brown, about 5 minutes. Add roasted corn kernels, chicken stock, and potatoes; bring to a simmer.
  • Meanwhile, melt butter in a small skillet over medium heat. Whisk in flour and stir until the mixture becomes smooth and light golden brown, 3 to 4 minutes. Let cool.
  • Add the cooled flour mixture to the simmering stock, mixing with a whisk. Simmer, stirring often to keep from sticking to the bottom of the pan, until potatoes are tender, 30 to 40 minutes. Add cream and cooked chicken; simmer for 10 minutes.
  • Season chowder with salt, pepper, and hot sauce. Ladle into bowls and top with bacon.

Summer calls for lighter meals, and this chowder delivers with a healthier take on a classic. The soup is thickened by pureeing part of it in a blender, eliminating the need for flour or cream. Fresh sage and a hint of chile pepper flakes give it a subtle, smoky flavor. We suggest using grilled or roasted corn but thawed frozen kernels will work well in a pinch.

2 teaspoons olive oil
1 medium onion, chopped fine
2 cups cooked corn kernels (from 2 large ears)
2 medium Yukon gold potatoes, diced 3/8 inch thick
6 fresh sage leaves, chopped
Generous pinch of chile pepper flakes, plus more for garnishing
1/2 teaspoon sea salt, plus more as needed
3 cups vegetable stock or Corn Broth, recipe follows
5 cooked ears of corn
1 teaspoon kosher salt
10 whole peppercorns, black or white
2 cloves garlic, smashed
1 dried bay leaf
1 medium onion, peeled and cut in half

Steps:

  • Heat the oil in a 4-quart pot until shimmering. Add the onion and saute until lightly golden, 1 to 2 minutes. Add the corn, potatoes, sage and chile pepper flakes; saute for 1 minute. Season with salt. Stir in the broth and bring to a boil. Reduce the heat to medium low and simmer until the potatoes are tender when pierced with a fork, about 5 minutes.
  • Carefully pour half the mixture into a blender and puree until smooth-remember the soup is hot, so be careful. Stir the pureed mixture back into the pot with the remaining soup. Taste the soup and add more salt, if desired. Ladle into bowls, garnish with a few chile flakes and serve hot.
  • Using a sharp knife, cut the kernels off the cob (see Cook's Note); reserve the kernels for a later use.
  • Using the side of a spoon or a butter knife, scrape down the sides of the cobs into a deep stockpot to release the "milk" and loosen any bits of corn. Add 8 cups water to the pot, along with the salt, peppercorns, garlic, bay leaf and onion. Bring to a boil over medium-high heat. Reduce the heat to medium low and let the broth cook for 20 minutes. Let cool slightly.
  • Pour the broth through a fine-mesh sieve to strain out the vegetables and bits of corn (a pot lined with cheesecloth works well too). The broth is now ready to use as a base for soups, stews and sauces. If not using immediately, transfer to glass jars and let cool completely. Store tightly covered in the fridge for up to 1week, or in the freezer for up to 2 months.

1 strip bacon, or 1 teaspoon bacon fat
1/2 large yellow onion, chopped (about 3/4 cup)
1/3 cup diced red bell pepper
1/2 cup small diced carrot
1/2 cup small diced celery
4-5 ears of sweet corn, kernels removed from the cobs (about 3 cups), cobs reserved (see steps for taking corn off the cob )
1 bay leaf
4 1/2 cups milk, whole or low fat
2 medium Yukon Gold potatoes, peeled and large (1-inch) diced (about 3 cups)
3 teaspoons of Kosher salt
1/2 teaspoon freshly ground black pepper
1 teaspoon fresh thyme leaves

Steps:

  • Cook the bacon: Place butter and bacon into a large, heavy-bottomed soup pot. Heat on medium heat until the bacon renders its fat, 3-4 minutes.
  • Cook the vegetables (except the corn and potatoes): Add the chopped onions, red bell pepper, carrot, and celery, lower the heat to medium low and cook until vegetables soften, about 5 minutes.
  • Add corn cobs and bring to a simmer: Break the corn cobs in half (after you've stripped off the corn) and add the cobs to the pot. Add the milk and the bay leaf. Bring to a boil and reduce heat to a bare simmer. Cover the pot and cook for 20 minutes. Make sure the heat is as low as can be and still maintain a gentle simmer (on our stove we had to use the "warm" setting) to prevent scalding the milk on the bottom of the pan.
  • Add potatoes: After 20 minutes, add the potatoes, salt, and thyme to the pot. Increase the heat to return the soup to a simmer, then lower the heat to maintain the simmer and cook for another 10 minutes.
  • Finish the soup: Discard the cobs, the bacon strip, and the bay leaf. Add the corn kernels and black pepper. Again raise the heat to bring the soup to a simmer, then lower the heat and cook for another 5 minutes, until the potatoes are fork tender. Add more salt and pepper to taste.

3 slices center-cut bacon
1 cup chopped red bell pepper
1 cup chopped onion
4 cloves garlic, minced
2 cups fresh corn kernels (3-4 ears)

2 cups low-sodium chicken broth, divided
¼ cup dry white wine
8 ounces Yukon Gold potatoes, peeled and diced
5 sprigs fresh thyme, plus leaves for garnish

Steps:

  • Cook bacon in a large saucepan over medium heat until crisp, 8 to 9 minutes. Transfer the bacon to a paper towel-lined plate, reserving 1 Tbsp. drippings in the pan. Crumble the bacon and set aside.
  • Add bell pepper, onion, and garlic to the pan; cook, stirring often, until browned and tender, 6 to 8 minutes. Transfer the bell pepper mixture to a medium bowl; set aside. Add corn, 2 Tbsp. water, and salt to the pan; cook, stirring often, until the corn is golden, 4 to 5 minutes. Stir in the remaining 1 Tbsp. water, scraping the bottom of the pan to loosen any browned bits.
  • Return the bell pepper mixture to the pan. Stir in flour; cook, stirring constantly, for 1 minute. Stir in 1/4 cup broth and wine; cook, stirring constantly and scraping the bottom of the pan to loosen browned bits, for 1 minute. Stir in potatoes, the remaining 1 3/4 cups broth, and thyme. Cover and bring to a boil. Reduce heat to low and simmer until the potatoes are fork-tender, 15 to 18 minutes.
  • Remove and discard the thyme sprigs. Transfer 2 cups of the soup to a blender. Remove center piece of lid (to let steam escape), secure the lid on the blender, and cover with a kitchen towel. Puree until smooth (use caution when blending hot liquids). Return the blended soup to the pan. Stir in half-and-half and butter. Divide between 4 bowls; sprinkle with pepper and garnish with the crumbled bacon and thyme leaves, if desired.

FRESH CORN AND CRAB CHOWDER

I adapted this recipe from a camping cookbook, Simple Foods for the Pack, by Claudia Axcell, Diana Cooke and Vikki Kinmont. Originally almost all the ingredients were dehydrated (except for the canned crab) so that you can just throw them all in a ziplock and heat them in camp with water. This is probably a great idea for OAMC, but this recipe is also very fast to put together if you haven't made it ahead. I had it on the table within half an hour from start to finish, and that included time to cook the potatoes in the microwave. This chowder is very rich even without any dairy in it, and obviously you could make it vegetarian without the crab.

8 ears fresh corn (raw and cut off the cob)
1 qt chicken broth or stock
6 slices bacon (finely chopped)
1 medium onion (finely choped)
1 medium green pepper (finely chopped)
1 teaspoon salt (plus additional, to taste)
1/2 teaspoon pepper (plus additional, to taste)
1 lb. red potatoes (scrubbed and diced)
1 cup heavy cream

Steps:

  • Cook the bacon in a large pot or Dutch oven until crisp. Remove to a paper towel to drain, leaving the bacon fat in the pot.
  • Add the corn kernels, diced onion, diced pepper, and salt and black pepper to the bacon fat. Cook over medium heat, stirring frequently, about 8 minutes, until onions and peppers are soft.
  • Add the diced potatoes and chicken broth. Bring pot to a boil over high heat. Cover, reduce to simmer, and allow potatoes to cook, about 15 minutes. Poke with a fork to make sure they are tender. Add the cream and the cooked bacon, heat over medium until heated through.
  • Test for seasonings and add more salt and pepper as desired.

The perfect recipe to use up end-of-summer sweet corn in a way that will keep you warm on cold fall nights. Packed with sweet, crunchy corn, potatoes, and a thick, creamy broth this corn chowder is a seasonal favorite.

1 tablespoon avocado oil, or grapeseed oil
1 medium white or yellow onion, chopped
2 celery stalks, chopped
3 to 4 cloves garlic, minced
1/2 cup (1 stick), unsalted butter
1/2 cup fine stone ground cornmeal
1/2 cup dry white wine (such as a chardonnay )
3 cups low sodium chicken broth, or vegetable broth
2 cups milk (I used 2% skim milk)
4 to 6 ears sweet corn, kernels cut off corn (4 cups kernels total) - reserve corn cobs
1/2 pound (1 cup), yokun gold potatoes, cut into 1 inch pieces
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1 red bell pepper, chopped
chopped parsley
extra reserved sweet corn kernels

Steps:

  • Cut all your veggies according to the directions above. Make sure to reserve the corn cobs once the corn kernels have been cut off. This soup moves fast, so it's helpful to have everything ready to go.
  • Heat a large Dutch oven, or soup pot, over medium low heat. Add the oil. Once the oil is heated add the chopped onion, and celery, sprinkle with a bit of salt to help the onion release it's liquid. Sauté for 5 to 6 minutes, stirring occasionally, or until the veggies are tender and a bit translucent. Add the garlic and sauté for another 30 seconds.
  • Add the butter, once melted add the cornmeal, stirring constantly for 3 minutes, or until the raw flour smell has been cooked out.
  • Add the wine and deglaze the bottom of the pot using a wooden spoon to scrape up any cooked on bits.
  • Stir in the chicken or vegetable broth, along with the milk. Add the reserved ears of corn (with the kernels already removed). If needed, you can brake the corn cobs in half to fit in your pot. Cover, and bring to a simmer. Simmer covered, stirring occasionally for 15 minutes.
  • Once the soup has simmered for 10 minutes, stir in the corn kernels, the potatoes, salt, pepper, and the chopped red pepper. Bring the soup back to a simmer, cover and allow it to simmer for 8 to 10 minutes, or until the potatoes are fork tender.
  • Remove the corn cobs, using tongs, and discard. The soup should have thickened up nicely by now. Taste and adjust seasoning as needed. I usually find I need to add an additional 1/2 teaspoon of salt.
  • To serve garnish with chopped parsley, and any extra corn kernels, if desired. I like to serve this soup as a side dish to whatever kind of protein we are having that evening.
  • Leftovers keep nicely for up to 1 to 2 weeks when stored in the fridge in an air tight container.

Extra-virgin olive oil
1 onion, diced
2 garlic cloves, minced
6 sprigs fresh thyme, leaves only
1/4 cup all-purpose flour
6 cups canned vegetable stock
2 cups heavy cream
2 Idaho potatoes, peeled and diced
6 ears corn
Salt and freshly ground black pepper
1/4 cup chopped fresh parsley leaves

Steps:

  • Heat the butter and 1 tablespoon olive oil in a soup pot over medium heat. Add the onion, garlic, and thyme and cook until the vegetables are good and soft, 8 to 10 minutes. Dust the vegetables with flour and stir to coat everything well. Pour in the vegetable stock and bring to a boil. Add the cream and the potatoes, bring to a boil and boil hard for about 7 minutes, until the potatoes break down (this will help to thicken the soup and give it a good texture).
  • Cut the corn kernels off the cob and add to the soup. Season with salt and pepper and simmer until the corn is soft, about 10 to 12 minutes. Stir in the parsley and give it another little drink of olive oil. Ladle the soup into bowls and serve.

1 cup celery, chopped
1 cup onion , chopped

4 ears of corn, shucked, silks removed and kernels cut from the cobs (cobs reserved)
2 bay leaves
4 cups vegetable or chicken broth
1 lb. golden potatoes, peeled and cubed
1 tsp. smoked paprika
Kosher salt and pepper
¼ cup heavy whipping cream
Sliced green onions, for garnish

Steps:

  • Instructions Stand a shucked corn cob in the center of a bundt pan and use a sharp chef's knife to cut off the kernels, top to bottom. The pan will catch all the kernels. If you don't have a bundt pan, place a small bowl upside-down inside a larger bowl. Be sure to save the cobs after cutting off the kernels, as they'll simmer in the soup base to add lots of flavor. Heat olive oil over medium heat in a large, heavy pot. Add the carrot, celery and onion and sauté for 5 minutes, stirring often. Stir in the garlic and cook for 30 seconds, stirring constantly. Add the 4 corn cobs (not the kernels) and 2 bay leaves. Pour in the broth and bring to a boil. Cover the pot, reduce to a simmer and continue to cook for 15 minutes. Remove the cobs and stir in the corn kernels, potatoes and smoked paprika. Cover and continue to simmer for 10-15 minutes, or until the potatoes are tender. Remove the bay leaves. Ladle 3 cups of the soup into a high-powered blender. Carefully blend until very smooth and return to the pot. Season the soup to taste with salt and pepper. Remove from the heat and stir in the heavy cream. Serve topped with sliced green onions and freshly cracked black pepper.

1 tablespoon olive oil or 1/4 cup water
1 medium onion, diced
3 - 4 garlic cloves, minced
1 medium red bell pepper, diced
2 celery ribs (or green bell pepper), diced
1 teaspoon thyme
1/2 - 1 teaspoon smoked paprika
2 bay leaves
4 1/2 cups vegetable broth
8 ears of corn, shucked (or 6 - 7 cups frozen or canned)
1lb. potatoes (any regular or sweet), cubed into 1/2 inches*
3/4 cup raw cashews or 1 can (14oz) coconut milk or cream
salt + pepper, to taste
chopped fresh parsley, chives, or green onions
red pepper flakes
a sprinkle of smoked paprika or nutritional yeast
Coconut Bacon
shredded vegan cheese

Steps:

  • If using cashews, soak 3/4 cup of raw cashews in warm water for 5 minutes. Drain. Puree the cashews with 3/4 cup of water. Set aside. If using canned coconut milk, skip this step.
  • In a large dutch oven, heat oil/water over medium heat, add onion, celery, and red bell pepper, saute for 7 minutes. Add the garlic, thyme, and optional smoked paprika after 5 minutes.
  • Add the corn, potatoes, bay leaves, and vegetable broth, bring to a boil, reduce heat, cover askew, and simmer for 15 minutes (or until potatoes are fork-tender). Add the vegan cream or coconut milk 5 minutes before soup is done. Remove from heat.
  • Let chowder cool a few minutes and remove the bay leaves. Transfer 2 - 3 cups of the soup to a blender and puree. Add back to the soup, stir well, and season to taste with salt and pepper. For a thicker soup, puree up to half. Soup will thicken upon standing.
  • Ladle into individual bowls and top with your favorite toppings.
  • Serves 4 - 6
