SUMMER CORN CHOWDER
This Summer Corn Chowder is creamy, comforting and full of flavor. Made with bacon, garlic and cheese it's pretty hard to resist and can be enjoyed all summer long! Serve in big bowls with a side of crusty bread.

Steps:
- Melt butter in a large pot over medium heat. Add the onion and bacon and cook, stirring frequently, until onion has softened and just starting to brown around edges, about 8 - 10 minutes.
- Add in the flour and garlic and cook 1 1/2 minutes. While whisking, slowly pour in 5 cups water or broth.
- Bring mixture to a boil, stirring constantly, then stir in corn kernels and potatoes. Add in thyme and bay leaf and season with salt and pepper to taste.
- Bring to a light boil, then reduce heat to medium-low and allow to simmer, stirring occasionally, until potatoes are tender, about 20 minutes.
- Remove bay leave then transfer 2 1/2 cups of the chowder to a blender and blend until smooth.
- Stir the mixture back into the pot then stir in half and half and honey. Sprinkle each serving with chives and optional cheddar.

- Pull the leaves from the celery stalks and set them aside. Chop your celery and onion. Heat the olive oil in a medium saucepan over a medium heat. Add the celery (not the leaves), onion, and thyme. Stir until the vegetables start to brown.
- Sprinkle the flour over the veggies and stir for a few more minutes. Pour in the milk, add the potato and bring to a boil, stirring the whole time so the soup doesn't stick to the pot. Cook until the potatoes are tender, but not mushy - this will take around 10 minutes.
- Meanwhile, chop the celery leaves, trim the ends off the spring onions and slice them thinly. When the potatoes are tender, stir in the corn, spring onion and celery leaves. Bring the soup back to the boil, then serve.
- This is delicious with a crusty brown roll or a Parmesan crisp.

- Remove corn kernels from cobs and place in a bowl. Scrape 'milk' from cobs into bowl with the kernels. Reserve 1 cob.

- Preheat the oven to 350 degrees F (175 degrees C).
- Roast whole ears of corn directly on the rack of the preheated oven until kernels feel tender when pressed, about 25 minutes. Cool briefly, then peel back the husks and cut the kernels off the cobs.
- While the corn is roasting, dice 1/2 the bacon slices. Heat a skillet over medium-high heat and saute bacon until evenly browned, 5 to 7 minutes. Drain on paper towels and reserve 1 tablespoon of the fat.
- Add onion and garlic to the pan; saute until transparent, but not brown, about 5 minutes. Add roasted corn kernels, chicken stock, and potatoes; bring to a simmer.
- Meanwhile, melt butter in a small skillet over medium heat. Whisk in flour and stir until the mixture becomes smooth and light golden brown, 3 to 4 minutes. Let cool.

SWEET CORN CHOWDER

- Heat the oil in a 4-quart pot until shimmering. Add the onion and saute until lightly golden, 1 to 2 minutes. Add the corn, potatoes, sage and chile pepper flakes; saute for 1 minute. Season with salt. Stir in the broth and bring to a boil. Reduce the heat to medium low and simmer until the potatoes are tender when pierced with a fork, about 5 minutes.
- Carefully pour half the mixture into a blender and puree until smooth-remember the soup is hot, so be careful. Stir the pureed mixture back into the pot with the remaining soup. Taste the soup and add more salt, if desired. Ladle into bowls, garnish with a few chile flakes and serve hot.
- Using a sharp knife, cut the kernels off the cob (see Cook's Note); reserve the kernels for a later use.
- Using the side of a spoon or a butter knife, scrape down the sides of the cobs into a deep stockpot to release the "milk" and loosen any bits of corn. Add 8 cups water to the pot, along with the salt, peppercorns, garlic, bay leaf and onion. Bring to a boil over medium-high heat. Reduce the heat to medium low and let the broth cook for 20 minutes. Let cool slightly.
- Pour the broth through a fine-mesh sieve to strain out the vegetables and bits of corn (a pot lined with cheesecloth works well too). The broth is now ready to use as a base for soups, stews and sauces. If not using immediately, transfer to glass jars and let cool completely. Store tightly covered in the fridge for up to 1week, or in the freezer for up to 2 months.

- Cook the bacon: Place butter and bacon into a large, heavy-bottomed soup pot. Heat on medium heat until the bacon renders its fat, 3-4 minutes.
- Cook the vegetables (except the corn and potatoes): Add the chopped onions, red bell pepper, carrot, and celery, lower the heat to medium low and cook until vegetables soften, about 5 minutes.
- Add corn cobs and bring to a simmer: Break the corn cobs in half (after you've stripped off the corn) and add the cobs to the pot. Add the milk and the bay leaf. FRESH CORN AND CRAB CHOWDER
I adapted this recipe from a camping cookbook, Simple Foods for the Pack, by Claudia Axcell, Diana Cooke and Vikki Kinmont. Originally almost all the ingredients were dehydrated (except for the canned crab) so that you can just throw them all in a ziplock and heat them in camp with water. This is probably a great idea for OAMC, but this recipe is also very fast to put together if you haven't made it ahead. I had it on the table within half an hour from start to finish, and that included time to cook the potatoes in the microwave. This chowder is very rich even without any dairy in it, and obviously you could make it vegetarian without the crab.

HOMEMADE CORN CHOWDER

- Cut all your veggies according to the directions above. Make sure to reserve the corn cobs once the corn kernels have been cut off. This soup moves fast, so it's helpful to have everything ready to go.
- Heat a large Dutch oven, or soup pot, over medium low heat. Add the oil. Once the oil is heated add the chopped onion, and celery, sprinkle with a bit of salt to help the onion release it's liquid. Sauté for 5 to 6 minutes, stirring occasionally, or until the veggies are tender and a bit translucent. Add the garlic and sauté for another 30 seconds.
- Add the butter, once melted add the cornmeal, stirring constantly for 3 minutes, or until the raw flour smell has been cooked out.
- Add the wine and deglaze the bottom of the pot using a wooden spoon to scrape up any cooked on bits.
- Stir in the chicken or vegetable broth, along with the milk. Add the reserved ears of corn (with the kernels already removed). If needed, you can brake the corn cobs in half to fit in your pot. Cover, and bring to a simmer. Simmer covered, stirring occasionally for 15 minutes.
- Once the soup has simmered for 10 minutes, stir in the corn kernels, the potatoes, salt, pepper, and the chopped red pepper. Bring the soup back to a simmer, cover and allow it to simmer for 8 to 10 minutes, or until the potatoes are fork tender.
- Remove the corn cobs, using tongs, and discard. The soup should have thickened up nicely by now. Taste and adjust seasoning as needed. I usually find I need to add an additional 1/2 teaspoon of salt.
- To serve garnish with chopped parsley, and any extra corn kernels, if desired. I like to serve this soup as a side dish to whatever kind of protein we are having that evening.
- Leftovers keep nicely for up to 1 to 2 weeks when stored in the fridge in an air tight container.

- Instructions Stand a shucked corn cob in the center of a bundt pan and use a sharp chef's knife to cut off the kernels, top to bottom. The pan will catch all the kernels. If you don't have a bundt pan, place a small bowl upside-down inside a larger bowl. Be sure to save the cobs after cutting off the kernels, as they'll simmer in the soup base to add lots of flavor. Heat olive oil over medium heat in a large, heavy pot. Add the carrot, celery and onion and sauté for 5 minutes, stirring often. Stir in the garlic and cook for 30 seconds, stirring constantly. - If using cashews, soak 3/4 cup of raw cashews in warm water for 5 minutes. Drain. Puree the cashews with 3/4 cup of water. Set aside. If using canned coconut milk, skip this step.

- In a large stock pot or Dutch oven or medium-high heat, cook bacon until crisp, about 5 minutes. Remove from pot and reserve. Add onions and butter and cook until softened, about 10 minutes.
- Stir in flour and turmeric and cook 1 minute. Stir in chicken broth, potatoes, and 1 teaspoon salt. Bring to boil, reduce heat, and simmer uncovered until potatoes are tender, about 15 minutes.
- Stir in corn, half-n-half, cheese, and bacon. Cook until corn is heated through and cheese is melted, about 5 minutes. Season to taste with salt and pepper (I like 1 teaspoon salt and 1/2 teaspoon pepper). Garnish with chives if desired.

Add the scallion bulbs, bell pepper, and celery and cook, stirring occasionally, until the vegetables start to soften, about 10 minutes. Stir in the potatoes, 2 cups of the corn, the bay leaf, broth, and salt. Bring to a boil. Reduce the heat and simmer, stirring occasionally, for 15 minutes.
- In a blender or food processor, puree the remaining 2 cups corn with the milk. Stir the puree into the soup along with the black pepper. Simmer until the soup thickens slightly, 5 to 10 minutes. Remove the bay leaf. Stir in the scallion greens. Top each serving with a dollop of sour cream, if using.

- Heat olive oil over medium heat in stock pot and cook onions for 5 minutes or until soft. Add butter and melt. Add garlic and red pepper and cook for a few minutes, stirring occasionally. Add red pepper flakes, parsley, and flour and stir constantly for 5 minutes.
- Add the milk, water, reserved potatoes, and the corn. Heat the soup to a simmer and turn down the heat and let cook over low heat for another 30 minutes. Add salt and pepper to taste.
