Haystacks -- chow mein candy -- are always a hit. They are simple to make, with only four ingredients, and the candy is crunchy and delicious!

Ingredients

1 cup butterscotch chips
1/2 cup creamy peanut butter (or chunky peanut butter)
1/2 cup peanuts
2 cups chow mein noodles (crumbled slightly, if desired)

Steps:

Gather the ingredients.
Lay a sheet of waxed paper or parchment paper on the countertop.
Put the butterscotch chips in a medium microwave-safe bowl or container. Microwave at 50% power for about 3 to 5 minutes, or just until the butterscotch chips are melted.
In a large bowl, mix the peanut butter, peanuts, melted butterscotch chips, and chow mein noodles, stirring gently to coat the noodles thoroughly.
Drop teaspoons of the mixture onto the parchment paper. Let them stand at room temperature until set.
Transfer candies to a container, separated by sheets of waxed paper.
Cover and store in the refrigerator. Enjoy!

Chocolate and peanuts are two of my favorite treats, and the combination in this recipe, along with butterscotch, gives this candy a special flavor. My mother made these for Christmas every year, but they're so easy to fix, you can enjoy them anytime.

1/2 cup semisweet chocolate chips
1/2 cup butterscotch chips
1/2 cup chow mein noodles
1/2 cup salted peanuts

Steps:

In a microwave, melt chocolate and butterscotch chips, stir until smooth. Stir in chow mein noodles and peanuts until well coated. , Drop by rounded tablespoonfuls onto a waxed paper-lined baking sheet. Refrigerate for 2 hours or until set.

This is simply the best! A lot of recipes on here seem to list chow mein as being a rice dish, but I've always known it as noodles, like this one. Use as a side dish or main dish. Easily made vegetarian.

Ingredients

6 ounces chow mein noodles or 6 ounces thin spaghetti
1 cup chicken broth
2 teaspoons cornstarch
1/2 teaspoon salt
16 ounces cooked chicken
1 teaspoon olive oil
1 onion, chopped
1/4 teaspoon ginger
3 garlic cloves, minced
1 cup frozen mixed vegetables

Steps:

Cook noodles according to directions. Drain and set aside.
In a small dish, combine the broth, cornstarch and salt; set aside.
Heat the oil in a large skillet or wok, then add the onion, ginger and garlic. Stir-fry until you can smell it, about 1 minute. Add the veggies, until thawed, maybe 4 minutes.
Add the chicken and broth. Cook, stirring constantly, until the mixture boils and thickens, about 2 minutes. Remove from heat.
Stir the veggie mixture into the noodles.

1 (5 1/2 ounce) package chow mein noodles
1 (6 ounce) package butterscotch chips
1 (6 ounce) package semi-sweet chocolate chips
1/2 cup chopped pecans

Steps:

In a large pot melt butterscotch chips and chocolate chips together.
When all is melted and smooth add chow mein noodles and pecans.
Drop onto wax paper using two teaspoons and let set.
Then put into air tight container.
Freezes good as well.

1/4 cup raisins
1 cup pecans, chopped
1 can chow mein noodles
1/2 cup coconut

Steps:

Melt almond bark in microwave.
Heat at 1 minute intervals, until smooth.
Add rest of ingredients to bowl of melted almond bark.
Drop by spoonfuls to form mounds on waxed paper and cool.
