BAKED FETA PASTA

Baked Feta Pasta image

Whether you're an avid TikTok user or just a casual Instagram consumer, you've probably seen the feta and tomato pasta taking the social media world by storm. It has an interesting history. In 2018, Finnish blogger Tiiu Piret (@tiiupiret) shared a recipe for a pasta containing prosecco, baked feta and tomatoes. In 2019, another Finnish blogger, Jenni Häyrinen (@liemessa), shared her simplified version of the dish on her blog and Instagram using the hashtag #uuifetapasta. (Afterward, sales of feta in Finland apparently increased by 300 percent.) American food influencer MacKenzie Smith (@grilledcheesesocial) eventually heard about the dish from a friend with a Finnish boyfriend. In January 2021, she posted a translation of the popular recipe on her blog and Instagram, which led to it going viral in the United States. It's easy to see why the recipe has achieved such fame: Cherry tomatoes and a whole block of feta are baked until soft and melty, then tossed with garlic, basil and cooked noodles for a beautifully cheesy dish. We opted to use a short tube pasta so the sauce can get trapped inside each piece and added a pinch of flaky sea salt on top to perfectly balance the dish.

Provided by Food Network Kitchen

Time 45m

Yield 4 to 6 servings

Number Of Ingredients 9

2 pints (20 ounces) cherry tomatoes
1/2 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
One 8-ounce block feta cheese, drained (see Cook's Note)
10 ounces mezze rigatoni
1 clove garlic, finely grated
Pinch crushed red pepper flakes, optional
1/4 cup fresh basil leaves, thinly sliced
Flaky sea salt, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Toss the cherry tomatoes and olive oil with 1/4 teaspoon of salt and several grinds of black pepper in a medium bowl until combined. Transfer to a 2 1/2- to 3-quart baking dish, place the feta in the center of the tomatoes and season with a pinch of black pepper. Bake until the tomatoes have burst and the feta has softened, about 30 minutes. Raise the heat to 450 degrees F and continue to cook until the tomatoes and feta are golden brown, 10 to 15 minutes more.
  • Meanwhile, bring a large pot of generously salted water to a boil over high heat. Add the pasta and cook until al dente, about 13 minutes. Reserve 1/2 cup of the cooking water, then thoroughly drain the pasta.
  • As soon as the tomatoes and feta come out of the oven, stir in the garlic and red pepper flakes (if using). Use the back of a spoon to smash the tomatoes and feta into a smooth and creamy sauce (it's okay if some of the oil isn't fully integrated). Add the pasta and half the basil and toss until evenly coated. If the sauce is too thick, stir in some pasta water a couple tablespoons at a time. Taste and adjust the seasoning with salt and pepper. Serve topped with the remaining basil and a pinch of sea salt.

STUFFED TOMATOES

Stuffed Tomatoes image

Provided by Michael Symon : Food Network

Categories     main-dish

Time 50m

Yield 4 servings

Number Of Ingredients 13

4 large heirloom tomatoes
Extra-virgin olive oil
Kosher salt and freshly ground black pepper
8 ounces 80/20 ground beef
2 cloves garlic, minced or grated
1 small red onion, diced
Zest of 1 lemon
1/2 cup finely chopped mint
1/2 cup finely chopped parsley
1 1/2 cups cooked long grain rice
1/4 cup toasted pine nuts
4 ounces goat cheese
2 tablespoons panko breadcrumbs

Steps:

  • Set up your grill for indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
  • Cut the tops off of each tomato and scoop out the inside flesh into a bowl. Set aside the tomato shells. Roughly chop the inside tomato flesh or break it up with your hands, yielding 1 cup. Drizzle with olive oil and season with salt and pepper.
  • Place a large saute pan over the direct heat side of the grill and add a drizzle of olive oil. Season the ground beef with salt and pepper. When the oil is hot, add the ground beef and cook until it begins to brown, breaking it up into smaller pieces as it cooks, 3 to 4 minutes. Add the garlic, onions, lemon zest, another drizzle of olive oil and a pinch of salt. Give it a stir and cook until fragrant and the onions are translucent, 2 to 3 minutes. Then stir in the reserved tomato insides. Cook for about 1 minute, scraping the bottom of the pan for any brown bits. Add the mint and parsley. Give it one more stir and remove from the heat. Add the rice, pine nuts and goat cheese.
  • Fill each reserved tomato shell to the top with the beef mixture and place into a cast-iron skillet. Sprinkle with the panko and drizzle with olive oil. Place on the indirect heat side of the grill and close the lid. Bake until golden brown on top, 20 to 25 minutes. Serve with olive oil drizzled over the top.

BAKED FETA PASTA

Baked Feta Pasta image

An easy to make pasta with baked feta inspired by current TikTok trends.

Provided by My Hot Southern Mess

Time 1h

Yield 6

Number Of Ingredients 15

2 pints cherry tomatoes
½ cup sliced red bell pepper
½ cup sliced red onion
½ cup olive oil
4 cloves peeled garlic, or more to taste
2 tablespoons freshly squeezed lemon juice
1 tablespoon lemon zest
½ teaspoon red pepper flakes
½ teaspoon freshly ground black pepper
½ teaspoon Italian seasoning
½ teaspoon dried basil
¼ teaspoon sea salt
1 (8 ounce) package Cheese, feta
1 (12 ounce) package penne pasta
1 cup baby spinach

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine cherry tomatoes, bell pepper, onion, olive oil, garlic, lemon juice, lemon zest, red pepper flakes, black pepper, Italian seasoning, basil, and sea salt in a 13x9-inch baking dish.
  • Make room in the middle of the pan and add block of feta cheese. Flip in oil, making sure cheese remains intact and becomes well coated.
  • Bake in the preheated oven until the cherry tomatoes begin to blister and split, 40 to 45 minutes.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain and reserve about 1 cup of the pasta water.
  • Remove feta-tomato mixture from the oven. Mash garlic, tomatoes, onions, and peppers with a heavy spoon and mix with the feta cheese, creating a sauce. Stir in spinach and cooked pasta. The spinach will get cooked from the heat of the pasta sauce and pasta. Add pasta water, a little at a time if needed, to reach desired consistency. Mix well and serve.

EASY FETA STUFFED TOMATOES

Easy Feta Stuffed Tomatoes image

This is a basic simple recipe that I use very often in the summer with my huge tomato harvest. Please use large firm tomatoes that will stand up to the oven temperature, if anything they can be slightly underripe, just don't use soft mushy overripe ones. Tomatoes such as Supersonic or Big Beef are good to use for this. This complete recipe can be doubled to 8 tomatoes.

Provided by Kittencalrecipezazz

Categories     Cheese

Time 55m

Yield 4 tomatoes

Number Of Ingredients 9

4 large firm tomatoes, scoop and reserve pulp
3 -4 tablespoons onions, finely chopped (can use more)
1/4 cup breadcrumbs
2 tablespoons oil (can use olive or vegetable oil)
2 tablespoons dried parsley
salt and pepper
1 tablespoon chopped fresh garlic (can use about 1/4 teaspoon dry garlic powder, fresh is better!)
4 -5 ounces feta cheese, crumbled
grated parmesan cheese (to taste)

Steps:

  • Cut the tops off of the tomatoes; carefully scoop out and reserve the pulp (try not to slice into the tomato skin when scooping out the pulp).
  • Chop the pulp and then mix with the onion, bread crumbs, oil, dry parsley, salt, pepper, garlic and feta cheese (except the Parmesan cheese) in a bowl.
  • Carefully stuff the tomatoes with the breadcrumb/pulp mixture (be careful not overstuff and tear the tomato skins).
  • Sprinkle with Parmesan cheese.
  • Bake in a 350 degree oven for about 20 minutes (can bake longer if desired).
  • Serve hot.
