4 slices whole-wheat sandwich bread
1 banana

Steps:

  • In a large shallow bowl, whisk together milk, egg, sugar, cinnamon, and a pinch of salt.
  • Dip bread, one slice at a time, into egg mixture, pressing down so bread absorbs liquid. In a large nonstick skillet, melt butter over medium heat. Place all 4 slices in skillet; cook 2 minutes per side or until golden brown.
  • Meanwhile, cut banana crosswise into 1/4-inch-thick rounds. Divide bread between two plates; top with banana and syrup. Serve.

2 ripe but still firm bananas

1 cup 2% milk
3 eggs
1 tsp ground cinnamon
1 Tbsp vanilla extract
8 slices sturdy whole-grain bread like sourdough (day-old bread works great)

Steps:

  • Heat the butter in a medium nonstick pan over medium heat. Add 2 tablespoons of the bourbon and all of the brown sugar and stir to dissolve. Cook for 1 to 2 minutes until bubbly. Add walnuts and cook for an additional 2 minutes; add the bananas and heat through. Stir in 1⁄4 cup milk and keep warm. Whisk together the remaining 3⁄4 cup milk, eggs, cinnamon, vanilla, and the remaining 2 tablespoons bourbon. Heat a large cast-iron skillet over medium heat. When the skillet is warm, spray with a light coating of nonstick cooking spray. Working 2 pieces at a time, dip the bread into the bourbon-egg mixture. Let soak for 30 seconds. Flip each piece over and soak the other side for 30 seconds. Add the bread to the hot skillet. Cook until golden brown on the bottom, about 3 minutes. 1 tbsp double cream

Steps:

  • Slice the banana into a small bowl and mash using a fork. Add the chopped chocolate and mix to combine.

2 in large bananas cut half horizontally, so 8 slices of bananas total, then sliced lengthwise
4 slices french bread, 8 halves total, cut in half
3 eggs
3/4 c whole milk
3/4 tsp pure vanilla extract
3/4 tsp cinnamon
pinch salt
butter for pan
maple syrup to drizzle
powdered sugar to dust

Steps:

  • Whisk the eggs, milk, vanilla, cinnamon, and salt together in a wide bowl until thoroughly combined. Warm a tablespoon of butter in a pan or griddle over medium heat.
  • Cut each of your french bread slices into half, creating 8 halves total. Use a fork to dip the bread into your egg-milk mixture long enough to be fully immersed and coated, but not so long that it starts to disintegrate and fall apart. Gently transfer the bread onto the pan to fry.
  • Work with 2 bread halves at a time. Fry each side for approx. 1-1/2 minutes, or until golden brown. Once both halves have been fried, set them aside on a plate.
  • Now, dip 2 new bread halves into the egg-milk mixture, but this time, fry only one side of each piece of bread. Before flipping to fry the other side, assemble your sandwiches: Add 2 of the banana slices you've cut up to the completely fried toast halves that were initially made. Then top the sandwiches with the half-fried slices of bread that are in the pan, making sure the non-fried sides are facing up. Gently transfer these sandwiches back into the pan and place the non-fried side of the sandwich down on the pan. Repeat this step for the remaining sandwiches to-be made.

  • Preheat your oven to 350°F
  • Combine the egg and milk in a bowl. Mix well.

1 cup banana slices
1 loaf of thick sliced vegan or gluten free bread (For Gluten Free - I like Schar, Sourdough I'd great too)
1 cup oat milk or almond milk
4 tbsp flax seed meal
4 tbsp hot water
2 tsp vanilla
1 tsp cinnamon
3 tbsp vegan butter for frying

Steps:

  • Peanut Butter and Banana French Toast
  • Using 16 slices of bread, prepare 8 peanut butter and banana sandwiches by spreading 2 tbsp of peanut butter only each slice and topping with banana slices.
  • In a small bowl, mix the flax seed meal and hot water together until a very thick paste forms.
  • Add the flax mixture, oat milk, vanilla, and cinnamon to a bowl. Whisk until completely combined.
  • Bring a skillet with about a tablespoon of vegan butter to medium heat. Once the butter sizzles, use your spatula to push it around the pan until it is evenly coated.
  • Dip the sandwiches into the mixture for about 1 second so that it is coated on both sides. Don't let it stay in the mixture too long or it'll be soggy. Immediately place the coated bread into the skillet and cook for about 2 or 3 minutes (or until golden). Use your spatula to flip the bread over.

1/2 cup heavy cream
1/4 cup fresh orange juice (from about 1 medium orange)

Pinch of freshly grated nutmeg
Salt
8 slices Texas toast or other thick white bread
3 large ripe bananas
2 tablespoons unsalted butter, melted
3 tablespoons vegetable oil
Confectioners' sugar, for garnish

Steps:

  • Whisk together the eggs, milk, cream, orange juice, vanilla, cognac, granulated sugar, cinnamon, nutmeg and a pinch of salt in a bowl.
  • Place the bread in 2 shallow baking dishes in a single layer. Pour the egg mixture over the bread; let soak for 10 minutes.
  • While the bread is soaking, preheat a grill to medium. Place a flat cast-iron skillet on the grill. Steps:

  • Preheat the oven to 350°F. Place the walnuts on a rimmed baking sheet, and toast until lightly browned and fragrant, about 10 minutes. Set aside. When cool, chop the walnuts coarsely.
  • Whisk together the eggs, cream, vanilla extract, cinnamon, nutmeg, and salt in a medium bowl, and set aside. Combine the bananas, dark brown sugar, and walnuts in another bowl; set aside. Add 4 tablespoons butter, and stir to combine; keep warm.
