"PITA THE GREAT" - TUNA SALAD

I found this recipe in the "Looney Spoons" cookbook and it has become a family favourite. There are a few more ingredients than your standard tuna salad but it is well worth the extra time. An equivalent amount of chopped, cooked chicken breast may be substituted for the tuna with equally delicious results. My 9 yo DD, especially, loves these, so I send the components in her school lunch and she assembles it when she's ready to eat. I hope you enjoy!

TUNA PITA MELT - AT-EASE-RECIPES.WEBFLOW.IO
This meal hits the spot, and is deliciously satisfying. It brings a little variation to a "typical" tuna melt. The warm, toasted pita, melted cheese, hints of dill, pepper, lemon, garlic, and combination of the other ingredients makes this dish so tasty. The crunchiness of the shallot and celery is a nice addition to this meal. The leftovers are just as scrumptious.

TUNA PITA MELT - REVIEW BY POMPLEMOUSSE - ALLRECIPES.COM
Not bad. I didn't have pockets in my pita, so I just made it an open faced sandwich and toasted it all at the end since I prefer not to melt cheese in the microwave.
