This creamy chestnut soup, or "Soupe Aux Marrons" is a wholesome soup and a French favorite all throughout Winter. Fresh chestnuts are simmered in an aromatic broth and then pureed until smooth, creating a luxuriously thick, creamy texture with the full-on sweet buttery taste of fresh chestnuts. This is a delicious starter to cozy up to and impress with over the Holiday season. Fresh chestnuts are the stars of this soup. 2lbs (900g) fresh chestnuts (*or 800g peeled, cooked chestnuts - see cooking note above)3 cups (750ml) low-sodium chicken stock (or vegetable stock)1 bay leaf1/2 cup (125ml) heavy cream (35% m.f)¼ tsp salt½ tsp freshly ground black pepper¼ tsp freshly grated nutmegCrème fraiche (for garnish)Chive, finely chopped (for garnish)

Steps:

  • Step 1 (to unpeel fresh chestnuts, see section above for detailed instructions*) - Score your chestnuts with an "X", deep enough to cut through the outer skin and transfer the chestnuts to a pot of cold water. Bring the water to a boil and simmer for 10 minutes. Remove the chestnuts from the water, wrap them in a kitchen towel and let cool until cool enough to handle and peel the chestnuts.
  • Step 2 - Fill a large pot over medium heat with the chicken stock and chestnuts. Add the bay leaf, bring to a boil, lower the heat to medium-low and simmer for 25-30 minutes with a lid on (or only 15-20 minutes if using already cooked chestnuts), until the chestnuts are fork-tender.
  • Reserve about 4-6 chestnuts aside and chop them roughly (for garnish later). Discard the bay leaf.
  • Step 3 - Using an immersion blender, mix the chestnuts until smooth. - or, working in batches, purée soup in a blender until smooth and return soup to saucepan. Stir in the heavy cream, salt, pepper and nutmeg. Cook soup for 3-5 extra minutes until slightly thick. If the soup is too thin for your liking, continue to cook it. If the soup is too creamy-thick for your liking, stir in more water or heavy cream, one tablespoon at a time.
  • For serving, ladle soup into individual bowls. Top each bowl with 1 tablespoon of crème fraiche, chopped chive and the reserved chopped chestnuts. Enjoy immediately.

1 potato, diced
1 stalk celery, finely sliced
1 onion, finely chopped
2 cloves garlic, sliced
40 g unsalted butter
1 kg chestnuts, peeled (yield will be half a kilo)
1 liter chicken stock
100 m creme fraiche
sea salt
fresh ground black pepper
1 tablespoon armagnac or 1 tablespoon amontillado sherry wine
freshly ground young parsley

Steps:

  • On low heat, sweat the potato, celery, onion and garlic in butter in a heavy based pot for 5 minutes.
  • Add the chestnuts, stock and simmer, covered, for 25 minutes until the nuts and vegetables are tender.
  • Strain through a colander into a bowl and puree the solids in a food processor.
  • Return the liquid to the solids while holding back about 1 cup in case the soup is too liquid for your taste.
  • Strain back into the pot.
  • Add the creme fraiche for extra tang and simmer the soup for 15 minutes to allow it to reduce slightly.
  • Season to taste.
  • Before serving, add the liquor to the hot soup.
  • Garnish with choppsed parsley.
  • The French would add a little shredded duck confit warmed in the alcohol into each bowl just right before serving.

3 tablespoons unsalted butter
1/2 cup finely chopped celery
1/2 cup finely chopped carrot
1/2 cup finely chopped onion
3 fresh flat-leaf parsley sprigs
2 whole cloves
1 Turkish or 1/2 California bay leaf
6 cups low-sodium chicken broth
1 (14- to 15-ounce) jar peeled cooked whole chestnuts, crumbled (3 cups)
1/4 cup Sercial Madeira
1/4 cup heavy cream
1/4 teaspoon black pepper
N/A kitchen string
Special Equipment
cheesecloth; kitchen string

Steps:

  • Melt butter in a 3-quart heavy saucepan over low heat, then stir in celery, carrot, and onion. Cover surface of vegetables with a buttered round of wax paper or parchment (buttered side down) and cover pan with lid, then sweat vegetables 15 minutes (to soften).
  • Wrap parsley, cloves, and bay leaf in cheesecloth and tie into a bundle with string to make a bouquet garni.
  • Discard buttered paper from vegetables, then add broth and bouquet garni and bring to a boil. Reduce heat and simmer, covered, 20 minutes. Add chestnuts and Madeira and simmer, covered, 3 minutes.
  • Purée soup in small batches (4 or 5) in a blender until smooth (use caution when blending hot liquids), transferring to a 3- to 4-quart heavy saucepan. Stir in cream, pepper, and salt to taste and reheat soup over moderate heat, stirring occasionally.

4 slices thick-cut bacon, diced (about 4 ounces)
1 tablespoon unsalted butter
1 carrot, sliced
1 celery stalk, sliced
1 small leek (white and light-green parts only), split lengthwise and sliced (about 1 cup)
2 small shallots, roughly chopped (about 1/2 cup)
Kosher salt and freshly ground pepper
5 cups low-sodium chicken broth, plus more as needed
1 15-ounce jar whole roasted chestnuts
1/2 cup heavy cream
Crème fraîche, snipped chives, and grated nutmeg, for garnish

Steps:

  • In a large saucepan over medium heat, cook bacon until rendered and crisp, 8 to 10 minutes. Transfer bacon to a paper towel-lined plate. Pour off all but 1 teaspoon of the fat. In the same saucepan, melt the butter, and add the carrot, celery, leek, and shallots. Season with salt and pepper. Cook over medium-low heat until softened and golden brown, 8 to 10 minutes.
  • Add broth and chestnuts to the saucepan. Bring to a simmer, partially cover, and cook until all the ingredients are soft, about 30 minutes. Let cool slightly, and purée in batches in a blender until very smooth. Return to saucepan, add the cream, and heat thoroughly, adding stock to thin if needed. (A spoon should not leave a trail on the surface of the soup.)
  • Season with salt and pepper and ladle into warmed shallow bowls. Garnish with the reserved bacon, a dab of crème fraîche, chives, and a pinch of nutmeg.

Closely identified with French cuisine, chestnut soups are low in fat. For a velvety smooth texture, pass soup through a fine strainer after the mixture has been processed and before adding the cream.

1 pound fresh chestnuts
6 ounces cremini mushrooms
2 ounces shiitake mushrooms, stems removed
2 tablespoons unsalted butter
1 tablespoon extra-virgin olive oil
Coarse salt and freshly ground pepper
1 small onion, chopped
1 garlic clove, halved
8 sprigs fresh thyme, plus leaves for garnish
6 cups homemade or store-bought low-sodium chicken stock
2 cups water
1/2 cup heavy cream

Steps:

  • Preheat oven to 350 degrees. Using a paring knife, make an incision in each chestnut about 1/8-inch deep through the shell and into the flesh, cutting almost all the way around nut. Transfer to a rimmed baking sheet. Roast until chestnuts are tender when pierced with the paring knife, about 35 minutes. Turn off oven. Leaving sheet in oven, remove several chestnuts at a time. Working quickly, place each chestnut in a kitchen towel, and remove and discard shell and inner skin.
  • Roughly chop all but 2 cremini and 2 shiitake mushrooms. Heat 1 tablespoon butter with olive oil in a small stockpot over medium-high heat. Add chopped mushrooms, and season with salt and pepper. Cook mushrooms, stirring occasionally, until they start to brown, about 5 minutes. Add onion, garlic, and thyme sprigs. Reduce heat to medium-low; cook, stirring occasionally, until onions are translucent, about 8 minutes. Add all but 4 peeled chestnuts, and cook until golden, about 5 minutes. Add stock and the water, raise heat to high, and bring to a boil. Reduce heat; simmer until chestnuts are falling-apart tender, about 1 hour. Remove and discard thyme sprigs, and let soup cool slightly.
  • Pass soup through a fine sieve into a bowl; transfer solids in batches to a food processor or blender, and puree until completely smooth. Add strained liquid, and process 1 minute. Return soup to stockpot, and season with salt and pepper.
  • Cut the remaining 4 chestnuts and 4 mushrooms into 1/4-inch-thick slices. Melt remaining tablespoon butter in a small skillet over medium-high heat. Saute sliced chestnuts and mushrooms until crisp and golden brown, 3 to 4 minutes.
  • Just before serving, heat soup over low. Stir in cream, and remove from heat. Ladle soup into shallow bowls; garnish with sauteed chestnuts and mushrooms and the thyme leaves.

This is from an idea in a French women's magazine. I want to make chestnut soup for my French inlaws for Christmas dinner instead of those nasty, hard chestnuts they are always serving. I have been auditioning soups. This is the winner. Would be great garnished with some very crispy bacon or pancetta.

2 lbs chestnut meats (canned or frozen)
1 onion, chopped
2 leeks, sliced
6 -8 cloves garlic
2 cups cream or 2 cups creme fraiche
8 cups vegetable stock
salt, to taste
pepper, to taste

Steps:

  • This is really easy.
  • Put everything except the cream, salt and pepper in a soup pot.
  • Bring to boil, turn dow, and cook gently for 30 minutes.
  • Mush up the chestnuts a bit with a fork.
  • Decide if you want the soup a bit chunky, or really smooth.
  • I prefer the smooth version.
  • For both, use immersion blender to the point where you like the look of the soup for a chunky version.
  • For the really smooth version, blend in blender after using the immersion blender until it reaches the consistency you like.
  • Taste, check for seasoning, add salt and pepper, stir in cream.
  • If it is too thick, add a bit of stock or water.
  • I liked it best a bit thick.
