My mother-in law makes this for my husband when he comes home, for his special dessert. He likes it straight from the freezer- I like to let it thaw a bit. And I must admit- instead of the whipping cream and sugar, I use 1/2 container of Cool Whip.

1 (20 ounce) can crushed pineapple
1 (1/4 ounce) envelope unflavored gelatin
1 (10 ounce) jar mint jelly
1 cup whipping cream
1 teaspoon confectioners' sugar

Steps:

  • Drain pineapple, reserving syrup.
  • In saucepan, soften gelatin in the reserved syrup.
  • Add jelly; heat and stir until gelatin is dissolved and jelly is melted.
  • Stir in pineapple.
  • Chill until mixture is thickened and syrupy.
  • Whip cream with sugar and fold into thickened gelatin mixture.
  • Tint with a few drops green food coloring, if desired.
  • Spoon into a loaf pan/dish.
  • Freeze overnight.
  • Let stand at room temperature 10-15 minutes and unmold.
  • Slice and place on lettuce lined salad plates.

Fried rice with an Asian accent goes well with many things. Perfect alongside chicken and beef, but equally good with salmon, shrimp, or scallops. This comes together quickly, so get all of your ingredients prepped before you start cooking.

2 tablespoons vegetable oil
½ cup diced sweet onion
1 tablespoon grated ginger root
1 clove garlic, minced
1 ½ cups fresh pineapple chunks
½ diced red bell pepper
⅓ cup thawed frozen peas
2 cups cold, cooked white rice
2 tablespoons low-sodium soy sauce, or to taste
1 teaspoon sesame oil
2 tablespoons sliced green onion
1 teaspoon toasted sesame seeds

Steps:

  • Heat a large skillet over medium heat and add oil. Add diced onion and cook for about 1 minute. Add ginger and garlic, and cook, stirring constantly, for 1 minute.
  • Increase heat to medium-high; add pineapple, red bell pepper, and peas. Cook, stirring constantly, for 3 to 4 minutes. Stir in rice and soy sauce, and cook until sauce is well incorporated, 1 to 2 minutes. Stir in sesame oil and remove from heat.
  • Garnish with sliced green onion and sesame seeds before serving.

Pineapple and rum add rich, sunny flavor to this take on the daiquiri. It's the perfect cocktail for a hot day.

Yield Makes 2 drinks.

Number Of Ingredients 7

⅓ cup rum, or to taste
1½ cups 1-inch pineapple chunks
2 tablespoons superfine sugar, or to taste
2 teaspoons fresh lime juice, or to taste
3 fresh mint leaves
2 cups ice cubes
Garnish: mint sprigs and/or pineapple chunks skewered with wooden picks

Steps:

  • In a blender blend all ingredients until smooth but still thick. Divide mixture between 2 large stemmed glasses and garnish with mint and/or pineapple.

8 teaspoons Amaretto or 8 teaspoons raspberry liqueur

Steps:

  • Pour pineapple and its juice into an 8 inch square baking pan. Freeze 2 hours or overnight.
  • Position knife blade in a food processor bowl; spoon frozen mixture into processor bowl; Process mixture until smooth and slushy.
  • Pour mixture into 4 individual dessert dishes. Spoon 2 tsp liqueur over each portion.
  • Serve immediately.

  • A day ahead, choose a freezer container or large pan that is large enough to hold the wine. Find a flat space in the freezer that can fit that container. Let it sit for 10 minutes. Then stir in 20 mint leaves. Leave it alone once again for another 20 minutes, so the flavors can get into the syrup. Strain the syrup through a fine-mesh sieve into a small bowl. Do not press on the pineapples. Just gently stir around to let the syrup drip down. Cover the bowl with plastic wrap and chill in the fridge, about 30 minutes. Save the pineapples for other uses. Discard the mint.
  • In a blender, add lemon juice, 5½ ounces (½ cup plus 3 tablespoons) pineapple mint syrup, frozen rosé, 5 fresh mint leaves, and 1 cup of ice cubes. Blend until smooth. Cover with a lid and transfer the blender jar along with the frosé into the freezer. Freeze until thickened, about 25 – 35 minutes.
