250g macaroni
1 head cauliflower , broken into pieces
25g butter
2 tbsp plain flour
2 tsp English mustard powder
450ml milk
100g cheddar , grated

Steps:

  • Cook the macaroni following pack instructions, adding the cauliflower for the final 4 mins.
  • Melt the butter in a pan, then stir in the flour and mustard powder and cook for 2 mins. Gradually add the milk, stirring all the time to get a smooth sauce. Add three-quarters of the cheese and some seasoning to the sauce.
  • Drain the macaroni and cauliflower and stir into the cheese sauce. Transfer to an ovenproof dish, then sprinkle over the remaining cheese and flash under a hot grill until golden and bubbling. Serve with a green salad, if you like.

Cauliflower

Somewhere between macaroni and cheese, British cauliflower cheese and a cauliflower gratin is this burbling dish of tangy, creamy cauliflower. Cauliflower florets cut into noodle-size pieces step in for macaroni in this pasta-less macaroni and cheese; they're roasted and draped in a mixture of melty Cheddar, heavy cream, garlic and cayenne. You could also add mustard, thyme or rosemary, or even caramelized onions, and swap out the Cheddar for Gruyère or another cheese. As the cauliflower cooks in the cream mixture, the cream thickens slightly and the cauliflower continues to brown. Serve it with a bright, crisp salad to offset the richness.

1 large cauliflower (2 1/2 pounds), cut into small florets the size of macaroni
3 tablespoons extra-virgin olive oil
Kosher salt and black pepper
1 1/2 cups grated Cheddar (about 6 ounces)
1 cup heavy cream
1 garlic clove, finely grated
1/4 teaspoon cayenne

Steps:

  • Heat the oven to 450 degrees. Toss the cauliflower with the olive oil on a baking sheet. Season with salt and pepper, spread in an even layer and roast until browned and cooked through but retaining some bite, about 15 minutes.
  • Transfer the cauliflower to an 8-inch or other 2-quart baking dish. (You could also bake this in individual ramekins; just mix the cauliflower with the other ingredients in a medium bowl before dividing.) Reserve 1/4 cup Cheddar. Add the remaining 1 1/4 cups Cheddar, heavy cream, garlic and cayenne to the cauliflower and stir to combine. Season with salt and pepper, then top with the reserved 1/4 cup Cheddar.
  • Roast until the cream has thickened, the cheese has melted, and some of the cauliflower is browned on top, 15 to 20 minutes. Let sit 5 minutes before serving.

½ cup cauliflower florets
cooking spray
1 tablespoon olive oil
1 tablespoon all-purpose flour
½ cup milk
1 ½ cups shredded Cheddar cheese
½ (8 ounce) package cream cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until tender yet firm to the bite, 8 minutes. Drain.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, 5 to 6 minutes. Place cauliflower in a blender or food processor; blend until smooth.
  • Coat a large saucepan with non-stick cooking spray; place over medium heat. Add oil and flour; cook, stirring constantly, until a thick paste forms, 1 to 2 minutes. Add milk; cook and stir until mixture thickens, 3 to 4 minutes.
  • Mix cauliflower, Cheddar cheese, cream cheese, salt, and pepper into milk mixture; stir until sauce is smooth. Fold macaroni into sauce.

I've written this recipe to serve 6, but it's easy to double up if you want to get into the batch-cooking vibe and get an extra meal or two in the freezer, or if you want to safely drop a dish on a neighbour's doorstep (just don't forget to back away once you've rung the bell. Social distancing, people!). You can get this prepped in the morning, ready to bake up for lunch or dinner. Happy days.

15 g unsalted butter
1 leek
1 stick of celery
½ a bulb of fennel, optional
1 small head of cauliflower, (600g)
450 g dried pasta
1 tablespoon plain flour
500 ml semi-skimmed milk
1 teaspoon English mustard
100 g mixed cheese, such as Cheddar, Parmesan, feta, halloumi
100 g stale bread
2 cloves of garlic
a few sprigs of fresh herbs, such as thyme or oregano, optional
olive oil

Steps:

  • Preheat the oven to 180ºC/350ºF/gas 4.
  • Put a large shallow ovenproof casserole pan on a medium heat with the butter.
  • Trim, halve, wash and slice the leek and add to the pan. Stir regularly while you trim, slice and add the celery, then trim, chop and add the fennel, if using.
  • Break the cauliflower into florets, then cut into 2cm-thick slices and finely slice the stalk and any nice leaves. Add the stalk and leaves to the pan and cook for 10 minutes, or until soft but not coloured, stirring regularly.
  • Meanwhile, cook the pasta in a large pan of boiling salted water for 8 minutes (5 if using macaroni). Reserving a mugful of starchy cooking water, drain the pasta and pour into a 25cm x 35cm baking dish (or divide between smaller ones), along with the cauliflower florets.
  • Stir the flour into the veg pan for 30 seconds, then gradually pour in the milk, stirring all the time, followed by 500ml of water. Simmer for 5 minutes, then stir in the mustard and season with sea salt and black pepper.
  • Let the sauce blip away until thickened while you coarsely grate the cheese.
  • Stir the cheese into the sauce, then blitz until smooth with a hand blender, or in batches in a food processor.
  • Pour over the pasta and cauliflower florets then, if you need to loosen it, add a little reserved pasta water - the sauce will thicken up as it bakes.
  • Blitz your stale bread into crumbs in the processor (or smash up in a clean tea towel). Peel and grate the garlic. Pick the herb leaves, if using, and mix it all together with 1 tablespoon of olive oil.
  • Scatter the crumbs over the pasta, grating over more cheese, if you've got it, then bake for 30 minutes, or until golden and bubbling.

7 tablespoons unsalted butter, plus more for the dish
Kosher salt
1 medium head cauliflower, cut into florets (about 4 cups)
1 pound elbow macaroni
2 stalks celery, finely chopped
1 small onion, finely chopped
2 cloves garlic, minced
3/4 cup hot sauce, plus more for serving, preferably Frank's RedHot
2 tablespoons all-purpose flour
2 teaspoons dry mustard
2 1/2 cups half-and-half
1 pound sharp yellow Cheddar, cut into 1/2-inch cubes (about 3 1/2 cups)
8 ounces pepper jack cheese, shredded (about 2 cups)
2/3 cup sour cream
1 cup panko
1/2 cup crumbled blue cheese
2 tablespoons chopped fresh parsley

Steps:

  • Preheat the oven to 350 degrees F and butter a 13-by-9-inch baking dish.
  • Bring a large pot of salted water to a boil and fill a large bowl with ice water. Cook the cauliflower until just tender, about 5 minutes. Use a slotted spoon or spider to remove the cauliflower and immediately submerge it in the ice water to cool completely, then drain. Bring the salted water back to a boil and cook the pasta until al dente, about 7 minutes. Drain and set aside.
  • Meanwhile, melt 3 tablespoons butter in a large skillet over medium heat. Add the celery and onion and cook until soft, about 5 minutes. Stir in the blanched cauliflower and garlic and cook 2 minutes, then add 1/2 cup hot sauce and simmer until slightly thickened, about 1 minute more.
  • Melt 2 tablespoons butter in a medium saucepan over medium heat. Whisk in the flour and mustard until smooth. Whisk in the half-and-half, then add the remaining 1/4 cup hot sauce and stir until thick, about 2 minutes. Whisk in the Cheddar and pepper jack cheeses, then whisk in the sour cream until smooth.
  • Spread half of the macaroni in the prepared baking dish and pour over about half of the cheese sauce. Top with the cauliflower mixture and the remaining macaroni. Pour the remaining cheese sauce evenly on top.
  • Put the remaining 2 tablespoons butter in a medium microwave-safe bowl and microwave until melted, about 30 seconds. Stir in the panko, blue cheese and parsley. Sprinkle over the macaroni and bake until bubbly, 30 to 40 minutes. Let cool 10 minutes, then serve with additional hot sauce on the side.

1 tablespoon extra-virgin olive oil
1 large head cauliflower
1 cup chicken stock
3 tablespoons butter
1 onion, finely chopped
4 cloves garlic, finely chopped
3 tablespoons flour
About 2 1/2 cups whole milk
Freshly ground black pepper
Freshly grated nutmeg
3 to 4 sprigs fresh sage leaves, very thinly sliced
2 tablespoons Dijon mustard
1 cup sharp white Cheddar cheese
1 cup Gruyere cheese
1 cup shredded Parmigiano cheese
1 small bundle watercress, washed and chopped

Steps:

  • Bring water to a boil for pasta. Salt the water and undercook the pasta by 2 minutes, about 5 to 6 minutes.
  • While the water comes to a boil, in a covered Dutch oven heat extra-virgin olive oil over medium to medium-high heat. Cut the core away from the cauliflower and set the head into the pot and add 1 cup stock, cover and steam 12 to 15 minutes until tender. Remove and separate the cauliflower into florets. Discard water from pot.
  • Over medium heat in the same pot, melt the butter, then add onions and garlic. Saute for 3 to 4 minutes, until tender. Add in the flour and whisk for 1 minute. Whisk in the whole milk and season with salt, pepper, nutmeg, and sage. When thickened, stir in the Dijon mustard and 2/3 of the combined cheeses.
  • Drain the pasta, add to the cauliflower, stir in the cheese sauce, transfer to baking dish, top with remaining cheese. Cool completely and cover for a make-ahead meal.
  • Preheat the oven to 400 degrees F.
  • Bake until brown on a baking sheet to catch the bubble-over. The casserole will take 40 to 45 minutes to heat through.
  • Garnish bowls of cauli-mac-n-cheese with chopped spicy watercress.

2 ounces light cream cheese, at room temperature

Steps:

  • Heat 1 tablespoon butter and 1 grated garlic clove in a small nonstick skillet over medium heat until foamy. Stir in the panko, season with salt and pepper and cook, stirring, until golden, about 5 minutes. Transfer to a small bowl and stir in the parsley.
  • Bring a large pot of salted water to a boil. Add the macaroni and cook as the label directs for al dente, adding the cauliflower during the last 4 minutes of cooking. Reserve 1/4 cup cooking water, then drain the macaroni and cauliflower; set aside. Carefully wipe out the pot.

1 cup whole milk

Hot sauce, as needed
1 cup grated pepper jack cheese
One 4-ounce log fresh goat cheese
1/4 cup grated Parmesan

Steps:

  • Bring a large pot of salted water to a boil. Preheat the oven to 375 degrees F. Grease a baking dish with butter.
  • Cook the cauliflower in the boiling water until just crisp-tender, about 10 minutes. Drain well.
  • In a large saucepan, heat the milk and butter over medium heat. Whisk in the dry mustard and add some hot sauce, salt and pepper. 1 1/4 teaspoons kosher salt, divided
1 1/2 cups whole milk
6 ounces cream cheese
1 1/2 teaspoons curry powder
1 teaspoon Dijon mustard
6 ounces mozzarella, shredded (about 1 1/4 cups)
6 ounces sharp cheddar, shredded (about 1 1/4 cup), plus more for sprinkling
1 tablespoon finely chopped chives (optional)
Special Equipment
1 (2-quart) or 4 (2-cup) freezer-to-oven-safe baking dishes

Steps:

  • Toss cauliflower and 1/4 tsp. salt in a large microwave-safe bowl. Cover with plastic wrap, pierce plastic with a knife a few times to vent, and microwave on high 10 minutes. Carefully remove plastic and transfer cauliflower to a colander. Let cool to room temperature, then transfer to a large bowl.
  • Meanwhile, cook milk, cream cheese, curry powder, mustard, and remaining 1 tsp. salt in a medium saucepan over medium heat, stirring constantly, until smooth, about 4 minutes. Let cool to room temperature, about 30 minutes. Add cauliflower and toss to combine. Add mozzarella and 6 oz. cheddar and toss to combine-mixture should be cool enough so cheese doesn't melt.   • If baking immediately, preheat oven to 350°F. Cover dish with foil and bake casserole until heated through and just beginning to bubble, about 45 minutes for large dish, or about 30 minutes for small dishes. Remove foil and sprinkle cheddar over. Heat broiler and broil until top is browned and bubbling, 2-5 minutes.
  • If freezing to bake later, cover dish with an airtight lid or double layer of plastic wrap and freeze up to 3 months. To cook, preheat oven to 350°F. Cover dish with foil and bake casserole 45 minutes for large dish, or 30 minutes for small dishes. Remove foil and stir well with a rubber spatula. Continue to bake, uncovered, until just bubbling and heated through, 10-15 minutes more. Sprinkle cheddar over. Heat broiler and broil until top is browned and bubbling, 2-5 minutes.
  • To cook individually portioned frozen casseroles in the microwave, partially cover and microwave on high 4 minutes. Uncover, stir, and microwave at 1-minute intervals until heated through, 4-5 minutes more.
  • Top with chives, if using, before serving.

While on a trip, I read a recipe in a magazine in the airport, but when I checked the recipe after I made it - I had actually combined parts of 2 different recipes in the magazine. My family loved it and this will be a staple in our house in the future. Hope you enjoy it as much as we did!

1 medium head cauliflower (chopped to 1-inch pieces)
8 ounces sliced mushrooms
2 large tomatoes (rough cut into large pieces)
6 tablespoons butter (2 to saute cauliflower, 4 reserved)
1 1/2 teaspoons garlic salt
6 green onions (chopped 1/4-inch slices)
13 1/4 ounces whole wheat pasta (boiled & drained)
1 1/2 cups kerrygold irish dubliner cheese, shredded
1 cup swiss cheese, shredded
2 cups extra-sharp cheddar cheese, shredded (1 for sauce, 1 reserved for topping)
4 tablespoons flour
4 cups milk
1/2 cup parmesan cheese, grated (Kraft or store brand is fine)
3 cups seasoned bread crumbs

Steps:

  • NOTE: After I post this recipe, one of the cheese names keeps getting changed to Kerrygold Dubliner Irish Farmhouse cheese and I have corrected it several times, but it won't stay correct. The cheese you want is really called Kerrygold Irish Dubliner cheese NOT Farmhouse. If you cannot find it try using 3/4 cup parmesan AND an extra 3/4 cup Extra Sharp Cheddar as a substitute in place of the Kerrygold Irish Dubliner in the cheese sauce.
  • Boil & drain 1 box Whole Wheat Pasta and set on the side in a very large bowl.
  • Cut 1 medium head Cauliflower to 1" pieces and boil in hot water until fork tender, drain completely. Then saute the Cauliflower for 5 minutes with 2 Tablespoons of Butter. Transfer to a different bowl and hold separately.
  • Using same pan you sauted the Cauliflower in, add 8oz sliced Mushrooms to the pan and saute until cooked completey. Return Cauliflower to the pan with the cooked Mushrooms.
  • Rough cut 2 large Tomatoes into large pieces and add to Cauliflower and Mushroom mixture . Heat three ingredients through for approximately 5 - 7 minutes on a medium high heat, stirring frequently. Once done, dump Veggies in large bowl on top of the pasta.
  • Cut 6 Green Onions (both white & green parts) into 1/4" slices and add to large bowl of Veggies and Pasta.
  • In a separate large pot, melt 4 Tablespoons of Butter (be careful not to brown). Once melted, add 4 Tablespoons Flour and stir constantly to cook Flour for 5 - 10 minutes over medium heat being careful not to brown until flour looks frothy and bubbly.
  • Slowly add 4 cups Milk to Flour and Butter mixture, making sure to whisk quickly while adding Milk slowly and constantly to avoid lumps. Heat Milk mixture on low to medium heat until it almost comes to a boil and continue for approximately 20 minutes being careful not to burn Milk or over-boil.
  • Once Milk is done and appears to look like it is thickening to a sauce, add 1-1/2 cup Shredded Kerrygold Irish Dubliner Cheese, 1 cup Shredded Swiss Cheese and 1 cup Shredded Extra Sharp Cheddar Cheese and stir slowly until completely melted to a cheese sauce.
  • Pour Cheese Sauce over Veggies and Pasta and gently mix to combine thoroughly. Transfer Cauliflower Veggie Mac 'n Cheese to a 9 x 13 baking dish.
  • Top evenly with 1 cup Shredded Extra Sharp Cheddar Cheese, 1/2 cup Parmesan Cheese (again Kraft or store brand is fine) and 3 cups seasoned bread crumbs.
  • Bake in a 350 degree oven until entire dish is hot bubbly and the edges are browning for about 1 hour and Enjoy!

1 medium head cauliflower
1/2 white onion, sliced

Steps:

  • Pre-heat oven to 375°F.
  • Wash cauliflower and break up into medium sized pieces (florets).
  • On a sheet tray toss with onion and garlic and dress with olive oil.
  • Roast in the center of the oven until tender -- about 20-23 minutes.
  • Puree cauliflower with 1 cup of whole milk until you have a creamy-textured sauce.
  • Pour in a saucepan over medium heat and add grated cheddar cheese.
  • Stir well until melted then add cooked macaroni elbows.
  • Season with salt and pepper.
  • Pour into a medium-sized gratin dish. In a mixing bowl combine garlic with panko bread crumbs and season with salt and pepper.
  • Fold in parsley and wet with olive oil.
  • Sprinkle evenly over the mac n cheese and bake in a 350° oven for 30-25 minutes until cheese is bubbly and top is golden brown.

  • Preheat oven to 400 degrees F.

This is one of Jamie Oliver's quick pasta meals, from his Ministry Of Food cookbook. You can either serve the dish unbaked so it is silky and gooey, or you can grill it so it has a crispy, golden topping. You can add a grated hard-boiled egg, flaked smoked haddock, or cooked prawns if you want.

1/2 medium cauliflower
200 g cheddar cheese
100 g parmesan cheese
1 bunch fresh flat leaf parsley
sea salt
400 g macaroni, uncooked
200 g creme fraiche

Steps:

  • TO PREPARE YOUR PASTA:.
  • Remove the outer green leaves from the cauliflower and discard.
  • Slice the end off the cauliflower stalk.
  • Cut the head into small florets.
  • Halve the thick stalk lengthways then slice thinly.
  • Grate the cheddar cheese and parmesan into a large bowl.
  • Finely chop the parsley stalks and leaves.
  • TO COOK YOUR PASTA:.
  • Bring a large pan of salted water to the boil.
  • Add the macaroni and all of your cauliflower and cook according to the macaroni packet instructions.
  • Place the bowl of cheese over the saucepan and add the creme fraiche.
  • Carefully stir every so often until the cheese is smooth and melted.
  • If the water boils up underneath the bowl, just turn the heat down slightly.
  • Add all the chopped parsley to the melted cheese and season with a pinch of salt and pepper.
  • Carefully remove the bowl of cheese using a towel or oven gloves and set aside.
  • Drain the macaroni in a colander over a bowl, reserving the cooking water.
  • Return the pasta to the pan, pour in the melted cheese and stir.
  • It should have a lovely silky consistency, but if it's too thick, add a splas of your cooking water to thin it out a bit.
  • At this point you can either serve the macaroni as it is, or finish it under the grill to make it crispy and golden on top.
  • To do this, preheat your grill to medium heat.
  • Add 150ml of the reserved cooking water to the macaroni, stir in, then transfer to a baking dish.
  • Place under the grill until golden and bubbling.
  • TO SERVE YOUR PASTA:.
  • Divide the pasta between plates or bowls, or place the baking dish in the middle of the table next to a nice green salad and let everyone help themselves.

1 cauliflower (about 800g/1lb 12oz), cut into small florets
1 tbsp olive oil
½ small pack thyme , leaves picked
300g macaroni
50g butter
50g plain flour
2 tsp mustard powder
700ml semi-skimmed milk
140g cheddar , grated
50g parmesan (or vegetarian alternative), finely grated
50g macadamia nuts , roughly chopped

Steps:

  • Heat oven to 190C/170C fan/gas 5. Toss the cauliflower with the oil and half the thyme, and spread out on a large non-stick baking tray. Roast for 20 mins until softened and golden brown. Meanwhile, bring a large pan of salted water to the boil and cook the macaroni following pack instructions. Drain.
  • Melt the butter in a medium saucepan, stir in the flour and mustard, and cook for 2 mins. Remove from the heat and gradually whisk in the milk and remaining thyme. Return to the heat and cook for 4-5 mins, whisking all the time, until you have a thick, smooth sauce. Remove from the heat for 2 mins, then stir in the cheddar and half the Parmesan.
  • If the macaroni is sticking together, pour a little boiling water over it, then drain and add to the sauce with the cauliflower. If the sauce is a bit thick, add a splash more milk. Tip into a large, shallow baking dish, sprinkle over the remaining Parmesan and top with the macadamias. Bake for 20 mins until cooked through and bubbling at the edges.

8 cups chopped cauliflower florets (1/2-inch pieces (26 oz))
1 tbsp Real California butter
2 teaspoons olive oil
1/4 cup minced onion
3 tbsp flour (use ap gluten-free flour for GF)
2 cups fat free Real California milk
7 ounces freshly grated Real California sharp cheddar (about 2 cups total)
1/2 teaspoons salt

Steps:

  • Preheat the oven to 400ºF.
  • Place 1 inch of water in a large pot with 1 teaspoon salt and bring to a boil. Add the cauliflower and cook until tender crisp, 6 to 7 minutes. Drain and set aside in a large bowl.
  • Heat butter and oil in a large saucepan over medium heat. Add onions and cook about 2 minutes.
  • Stir in flour. Reduce heat to low and cook, stirring continually 3 - 4 minutes, to cook out the flour.
  • Add the milk and continue whisking, raising heat to medium-high until it comes to a boil and becomes smooth and thick, about 2 minutes stirring; season with 1/2 teaspoon salt and black pepper.
  • Once it becomes thick, remove from heat completely onto another burner if possible. Add the cheddar cheese, 1/4 cup at a time mixing well until cheese is all melted.
  • Stir in cooked cauliflower, then pour into a baking dish and bake until bubbly and golden, about 15 to 20 minutes. Then broil 2 minutes, or until the top is slightly browned.

No one will guess the secret ingredient is caulflower in this recipe. Recipe source: local newspaper which adapted the recipe from The Food Matters Cookbook.

2 tablespoons olive oil
2 1/2 cups vegetable broth or 2 1/2 cups chicken broth
2 bay leaves
1 cauliflower, cored and separated into large pieces
8 ounces macaroni (we used small shells)
1/2 cup cheese, grated (we used sharp cheddar but this is also a great recipe to clean out the cheese drawer and use bits an)
1 tablespoon Dijon mustard
1/4 teaspoon nutmeg
pepper
1/3 cup parmesan cheese, grated (I used the packaged Kraft grated cheese)
1/2 cup breadcrumbs (optional)

Steps:

  • Preheat oven to 400 degrees F.
  • Spray a 9-inch square baking dish with Pam or use a small amount of oil to grease pan.
  • Bring a pot of water to boil and add salt. When it reaches a boil add cauliflower for 20-25 minutes or until tender. Transfer cauliflower to blender or food processor. We used a blender but I think a food processor may be a better option. Add pasta to boiling water and cook for 5 minutes; drain; rinse and put in prepared baking dish.
  • In a small sauce pan put in the broth and bay leaves and heat over medium low heat. When small bubbbles appear (5 minutes) turn off heat and let broth stand. Remove bay leaves from broth.
  • Process cauliflowe with 2 cups of the broth, 2 T oil, the cheese, mustard , nutmeg, and salt and pepper. You may need to work in batches -- my blender overflowed a bit. If sauce becomes too thick add the remaining broth (1/2 cup).
  • Pour sauce over pasta. ***can be refrigerated one day if desired; bringing to room temp before proceeding.***.
  • Sprinkle to with Parmesan and bread crumbs.
  • Bake for 15-20 minutes or until pasta is bubbling and crumbs turn brown.
