2 boneless (skinless chicken breasts, chopped into cubes)
2 cups No Yolks Broad Noodles
2 cups frozen chopped broccoli
1 can reduced fat cream of mushroom soup
2 1/2 cups low fat milk
1/2-1 cup shredded cheddar cheese
1 teaspoon pepper
1/2 teaspoon salt

Steps:

  • Preheat oven to 350 degrees.
  • Cut raw chicken into cubes and place into a large casserole dish, roughly 9×13. Top with 2 cups of No Yolks Broad Noodles, followed by broccoli and cheese.
  • With a whisk, mix together soup and 2 1/2 cups of milk. Pour over the top of the casserole ingredients. Sprinkle salt and pepper over the casserole and then put the casserole dish into the oven.
  • Bake for 40 minutes and serve.

6 oz egg noodles (or no-yolk)
2 tsp oil
4 cloves garlic (sliced thin)
12 oz fresh broccoli florets (chopped)
1 tbsp butter
1 medium shallot (minced)
3 tbsp all purpose flour
1-3/4 cups chicken broth
1 cup 1% milk
12 oz cooked shredded chicken breast
4 oz shredded reduced fat sharp cheddar (Sargento)
cooking spray
3 tbsp shredded parmesan cheese
2 tbsp seasoned breadcrumbs (I used whole wheat)

Steps:

  • Cook noodles in salted water until al dente, or slightly under-cooked by 2 minutes. Set aside.
  • Meanwhile heat oil in a large skillet. Add garlic and cook on medium heat until golden, about 1 minute.
  • Add the broccoli and a little salt, sauté and cover the broccoli for about 3 minutes on medium heat until the broccoli begins to soften. Set aside.
  • Preheat the oven to 375°F. Lightly spray a 9 x 12 casserole dish with cooking spray.
  • In a large pot, heat butter over medium-low heat, when melted add the shallot and cook until soft, 2-3 minutes.
  • Add the flour and a pinch of salt and stir well, cooking an additional 2-3 minutes on medium-low heat. Slowly whisk in the chicken broth until well combined over medium heat; whisk well for 30 seconds, then add the milk and bring to a boil. Simmer on medium heat, mixing occasionally until it thickens (about 6-7 minutes).
  • Remove from heat and add reduced fat sharp cheddar and 1 tablespoon of the parmesan cheese; mix well until the cheese melts.
  • Add the shredded chicken, noodles and broccoli to the sauce and mix well until evenly coated.
  • Pour into a casserole dish and top with Parmesan cheese and breadcrumbs.
  • Spray a little more cooking spray on top and bake for about 20 - 25 minutes. Place the casserole under the broiler a few minutes to get the crumbs crisp and golden (careful not to burn). Divide in 6 equal portions.

2 cups egg noodles, uncooked
2 cups chicken, cooked and diced
1 (10 ounce) package frozen broccoli
2 tablespoons butter
2 tablespoons flour
1 teaspoon salt
1/4 teaspoon prepared mustard
1/4 teaspoon black pepper
2 cups milk
1 cup grated cheddar cheese

Steps:

  • Heat oven to 350°.
  • Cook noodles and broccoli to package directions.
  • Make sauce by melting butter; add flour, salt, mustard and pepper and stir well.
  • Stir in milk til thick, then add cheese and stir til melted.
  • Place cooked noodles in bottom of greased casserole, then top with broccoli, then chicken.
  • Cover with sauce and bake for 15 minutes.
  • Can top with buttered crumbs, if desired.

1/2 lb egg noodles
1 (10 1/2 ounce) can cream of mushroom soup or 1 (10 1/2 ounce) can cream of chicken soup
1/2 cup milk
1 (10 ounce) package frozen chopped broccoli, thawed
1 cup cooked chicken, diced
2 tablespoons butter
1/4 cup breadcrumbs

Steps:

  • Cook noodles in boiling, salted water until almost tender, drain.
  • Mix soup and milk, add to noodles and season to taste with salt and pepper.
  • In a 2 qt casserole, arrange 1/3 of the noodles, top with all of the broccoli.
  • Top with 1/3 of the noodles, then with all of the chicken.
  • Cover with remaining noodles.
  • Mix butter with bread crumbs and sprinkle over the top.
  • Bake uncovered at 350° until brown and bubbly, about 30 minutes.

  • Grease a medium sized casserole dish, set aside.
  • Saute onion in butter for about 3 minutes.
  • Mix in flour.
  • Gradually stir in broth, combining well.
  • Gradually add milk to the saucepan, and cook stirring constantly until thickened, about 5 minutes.
  • Stir in salt and pepper.
  • Remove from heat.
  • Bring 2 quarts of water to a boil.
  • Add egg noodles, and cook for 6 minutes.
  • Drain noodles well.
  • Spread noodles in the prepared baking dish.
  • Place chicken and broccoli over noodles.
  • Pour the sauce over the chicken and broccoli.
  • Sprinkle the cheese over the top.
  • Bake for 20 minutes, or until the cheese is nicely melted.

1 cup fat-free milk
3 cups cubed cooked chicken breast
3 cups frozen chopped broccoli, thawed and drained

Steps:

  • Cook noodles according to package directions. Meanwhile, in a large nonstick saucepan over medium heat, cook onion in butter until tender. Stir in the flour, salt and pepper until blended. This recipe is from Barbara Cousins' Cooking Without Made Easy. This collection of recipes is free from gluten, sugar, yeast and dairy, and yet we are eating such wonderful, tasty food! I am using so many recipes from this book, and just had to post the few that have become favourites so quickly. I've posted this recipe, without changes, but we make it both with and without the chilli and peppers (one family member doesn't eat peppers), without the fish sauce, kaffir lime leaves, or coriander. I find 100g of rice noodles is plenty for us. We also split it in thirds, not just in half. It fills a big skillet/pan! The author says "In this recipe, the chicken, vegetables and noodles sit in a soup-like sauce that is absolutely delicious. Use a spoon to eat it or mop up the juices with crusty bread, if acceptable. There are countless variations on this recipe - try other vegetables, add some prawns with the chicken or use duck or beef." I add a bit of rice flour to thicken it. Enjoy! Make it your own.

1 bunch spring onion
2 inches fresh ginger
2 garlic cloves
1/2-1 red chili pepper
1 tablespoon olive oil
285 ml coconut milk
425 ml chicken stock
1 tablespoon lemon juice
1 tablespoon tamari (optional) or 1 tablespoon fish sauce (optional)
4 kaffir lime leaves
1/2 red pepper
1 small courgette
225 g broccoli
250 g buckwheat noodles or 250 g rice noodles
salt and pepper
1 tablespoon chopped fresh coriander

Steps:

  • Cut the chicken breasts into bite-sized pieces and the spring onions into 1" lengths. Finely slice half the ginger and grate the rest. Press the garlic cloves and finely dice the chilli. Sweat all these ingredients in the olive oil until the chicken changes colour. (NOTE: Sweating is cooking over low heat, not sauting, browning or frying. It can take up to 20 minutes.).
  • Add the coconut milk, stock, lemon juice, tamari or fish sauce and the kaffir lime leaves.
  • Cut the red pepper and courgette (zucchini) into slices and break the broccoli into florets. Add these to the pan with the noodles. Bring to the boil and simmer for approximately 10 minutes or until the chicken, vegetables and noodles are cooked. Remove the kaffir lime leaves and season to taste with salt and pepper. Serve in large bowls, garnished iwth the coriander.
