1 small head red cabbage (about 1 1/2 pounds)
1 tablespoon olive oil
3 tablespoons red-wine vinegar
coarse salt and ground pepper
2 tablespoons light-brown sugar

Steps:

  • Halve, core, and thinly slice red cabbage.
  • Heat olive oil in a large skillet over medium heat. Add cabbage and red-wine vinegar; season with coarse salt and ground pepper. Cook, tossing frequently, until cabbage is crisp-tender, about 15 minutes (add a splash of water if pan becomes dry).
  • Add light-brown sugar; toss until dissolved, about 30 seconds. Season again with salt and pepper, as desired.

1 carrot, shredded
2 garlic cloves, crushed
1/2 medium onion, finely chopped
1/2 teaspoon fresh ginger, crushed
1/8 teaspoon black pepper
1/2 teaspoon salt
1/2 teaspoon white vinegar
1 tablespoon canola oil

Steps:

  • Heat canola oil in a saucepan over medium heat. Add onion and cook until soft. Add ginger and garlic, cook for about 1 minute, stirring frequently. Add carrots, cabbage, salt and black pepper; Cook for 10 minutes, stirring occasionally. Next add the vinegar and stir to combine. Remove from heat. Serve warm.
  • Notes: I prefer the cabbage to be crisp but if you prefer it to be softer you can add about 1/4 vegetable or chicken stock, and cook for an additional 10 minutes or until it is the texture that you desire. If using stock, be sure to adjust the amount of salt in the dish since stocks do tend to have sodium.

2 tablespoons butter
salt and pepper

Steps:

  • In a saute or frying pan on medium-high heat, melt butter. Add chopped garlic and stir until fragrant, about 1 minute. Do not burn garlic. Add shredded cabbage to garlic and butter, tossing to coat.
  • Season with salt and pepper and continue to cook cabbage, tossing occassionally until it just begins to turn golden, about 10-15 minutes.
  • Note: Caraway is a great addition. Add 1/2 teaspoon with the garlic and stir until fragrant.

1 medium onion, sliced
1 tomato, chopped
1 inch of fresh ginger, peeled and minced (optional)
1/4 teaspoon crushed red-pepper flakes
1 small head of green cabbage, cored and thinly sliced (about 10 cups)
1 1/2 teaspoons coarse salt, plus more for serving

Steps:

  • Heat a 14-inch skillet over medium-high heat, and then add the oil and onion. Saute to soften the onion slightly, about 2 minutes. Stir in the tomato, ginger if using, and red-pepper flakes. Cook for an additional 2 minutes.
  • Add the cabbage and 1 1/2 teaspoons salt. Stir to combine. Cover, and reduce the heat to medium low. Cook, stirring occasionally as the cabbage begins to collapse. Add a little water, 2 tablespoons at a time, as needed if the cabbage becomes too dry. (This depends on the moisture level of the cabbage. You don't want it too wet.) Cook for approximately 13 minutes, or until the cabbage is just tender. Salt to taste and serve.

2 Tbsp oil, bacon drippings or lard
1 onion, thinly sliced
1 tsp caraway seeds
1 head purple cabbage, thinly sliced
1 apple cored and sliced into small pieces
1 bay leaf
1/4 cup white vinegar
1/4 cup red wine vinegar or red wine
1/3 cup water
1 Tbsp sugar
1 tsp salt
1/2 tsp pepper

Steps:

  • In large pot or dutch oven heat oil.
  • Add sliced onions and saute until soft and clear; do not brown.
  • Add caraway seed and saute for 30 seconds to release flavour.
  • Add cabbage, apples and bay leaf.
  • Stir and cook until cabbage is slightly wilted, about 3 minutes.
  • Add vinegars, water and sugar and bring to boil. Add more water if needed (depending on how big your cabbage is).
  • Reduce heat and simmer until cabbage is tender, about 30 to 40 minutes.
  • Add salt and pepper to taste. Add more sugar if too acidic.

10 cups green cabbage (about 1 1/4 to 1 1/2 pounds cabbage)
2 tablespoons olive oil
1 tablespoon butter (optional)
1/4 teaspoon garlic powder

2 to 3 teaspoons fresh lemon juice (1/4 lemon or two wedges)

Steps:

  • Thinly the cabbage and measure out 10 cups.
  • In a large skillet, heat the olive oil and butter. Add the cabbage, garlic powder, kosher salt, and plenty of black pepper. Saute 8 to 10 minutes until wilted and tender.

1 small head green cabbage (about 2 1/2 pounds)
1 tablespoon extra virgin olive oil
1 tablespoon unsalted butter
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
½ tablespoon apple cider vinegar (plus additional to taste)
1 tablespoon chopped fresh thyme (optional)

Steps:

  • Cut the cabbage in half from its top down through its core. Place the cut-side down on your cutting board, then slice it as thinly as possible around the core so that you have fine ribbons. Discard the core.
  • Heat a large saute pan or similar heavy-bottomed pot over medium-high heat. Add olive oil and butter. Once the butter is melted, add the cabbage, salt, and pepper. Saute for 10 to 15 minutes, stirring occasionally, until the cabbage is tender and begins to brown. Don't feel like you need to constantly stir it. Leaving cabbage undisturbed for a minute or two as you go is what will allow it to develop brown caramelized bits (aka FLAVOR).
  • Remove from the heat and stir in the apple cider vinegar. Taste and add a bit of additional salt and pepper if you like, or a splash more vinegar if you'd like to add more zippy and acidic flavors. Sprinkle with thyme. Serve warm.

2 medium heads Savoy cabbage, coarse outer leaves, core, and ribs removed, cut into 1-inch dice (10 cups)
4 ounces bacon, sliced crosswise into 1-inch pieces (3/4 cup)
3 cups thinly sliced white onions
2 tablespoons chopped fresh sage
1 tablespoon all-purpose flour
2 cups chicken stock, homemade or store-bought
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Bring 2 quarts of water to a boil and add 1 tablespoon salt. Add the cabbage and blanch for 1 minute. Drain the cabbage in a colander, refresh under cold running water until cool, and reserve.
  • Put the bacon in a large skillet and cook over medium heat until the fat is rendered, 4 to 5 minutes. Pour off all but 1 tablespoon of the fat. Add the onion and sage and cook, stirring, until the onion is wilted but not browned, about 10 minutes. Add the blanched cabbage and cook for 2 more minutes. Stir in the flour and cook, stirring, 3 minutes. Pour in the stock, bring to a boil, reduce the heat, and cook until thickened, 2 to 3 more minutes. Season with 1/2 teaspoon salt and the pepper and serve.

Steps:

  • Remove the tough outer leaves from around the cabbage. Cut it into quarters with a sharp knife, and remove the inner core. Slice each quarter vertically into long thin shreds.
  • Place the cabbage in a colander and rinse under cold running water. Shake well and blot dry with paper towels or a clean dish towel.
  • Add the water, 4 tablespoons of the butter and a ¼ teaspoon of salt to a large wok or skillet. Heat until the butter melts completely. Add the cabbage and toss while cooking over high heat for 2 to 3 minutes.

  • I find that when I buy a good-sized green cabbage and use a small amount in a recipe, the remainder often languishes in the fridge. This is an ideal way to use up green cabbage while it still has some flavor. For this preparation, you can use half or even most of a cabbage. In a large skillet or stir-fry pan, sauté a quartered and thinly sliced onion in some olive oil. When it starts to turn golden, stir in thinly sliced cabbage. Cook, covered, until the cabbage wilts. If the pan dries out, add just enough water to moisten. Once the cabbage is wilted, uncover and cook until both the cabbage and onion begin to brown, stirring frequently. Add a sprinkling of poppy seeds, if you like.

  • Heat a large skillet over medium-medium high heat. This recipe works better in a stainless steel skillet rather than a non stick.
  • When pan is hot, add olive oil. Allow oil to get hot, then add the onions. Season with salt. Cook the onions, stirring as needed, until they are soft and starting to caramelize. Add the garlic and sauté for 30 seconds.
