KENTUCKY PIE

Time 1h45m

Yield 12 Servings

Number Of Ingredients 12

1¼ cups all-purpose flour, plus more for rolling
¼ teaspoon salt
½ teaspoon sugar
1 stick chilled unsalted butter, cut in pieces
3 tablespoons ice water
2 large eggs
1 cup sugar
1 stick unsalted butter, melted and cooled
¼ cup Maker's Mark® Bourbon
½ cup all-purpose flour
1½ cups walnuts, toasted and coarsely chopped
1 cup semi-sweet chocolate chips

Steps:

  • 1. To make the crust: In a food processor, pulse the flour, salt, and sugar to mix. Add the butter and pulse until the mixture resembles coarse meal with pea-sized pieces. Sprinkle the ice water on top and pulse until large clumps form. Press the dough into a disk, wrap tightly in plastic wrap, and refrigerate until firm, about 1 hour. 2. On a lightly floured work surface, roll the dough into a 12-inch round. Fit into a 9-inch pie dish. Tuck in the overhang and decoratively crimp the edges. Freeze while heating the oven. 3. Preheat the oven to 350°F. Prick the bottom of the dough all over with a fork. Line with parchment paper and fill with pie weights or dried beans. Bake until the is golden and dry, about 20 minutes. Remove the parchment and pie weights. Return the crust to the oven and continue baking until golden brown, about 5 minutes. Let cool slightly on a wire rack. 4. Meanwhile, make the filling: In a large bowl, whisk the eggs and sugar. Continue whisking while adding the butter, then the bourbon. Stir in the flour until well combined. Stir in the walnuts and chocolate chips. Pour into the warm pie shell. 5. Bake until the filling is set and the top golden, about 30 minutes. Cool in the pan on a wire rack. Serve warm or room temperature.

CHOCOLATE WALNUT KENTUCKY PIE

Chocolate Walnut Kentucky Pie image

This is a good pie to enjoy while watching the Kentucky Derby on television, wearing a fancy hat.

Provided by Food Network Kitchen

Categories     dessert

Time 4h40m

Yield 10 servings

Number Of Ingredients 19

1 1/4 cups all-purpose flour
1 teaspoon sugar
1/2 teaspoon kosher salt
1/4 teaspoon baking powder
8 tablespoons (1 stick) cold unsalted butter, cut into small pieces
2 tablespoons bourbon
Ice water, as needed
1 cup coarsely chopped walnut halves
1/2 cup semisweet chocolate chips
3/4 cup packed dark brown sugar
1/2 cup all-purpose flour
6 tablespoons unsalted butter, melted
1/2 teaspoon kosher salt
1/3 cup light corn syrup2 tablespoons bourbon
1 teaspoon vanilla extract
2 large eggs
1/2 cup hot water
1 teaspoon baking soda
Whipped cream, for serving, optional

Steps:

  • 1. Pulse the flour, sugar, salt and baking powder in the bowl of a food processor until combined. Add half of the butter and pulse until the mixture resembles fine cornmeal. Add the remaining butter and continue pulsing until it is the size of small peas. Add the bourbon and pulse until moistened. Pour in 1 to 2 tablespoons ice water, a bit at a time, until the dough just comes together and holds its shape when squeezed. Turn the dough out onto a large sheet of plastic wrap, gather into a disc and wrap well. Chill until firm, at least 1 hour or overnight.
  • 2. Preheat the oven to 350 degrees F. Roll out the dough on a lightly-floured surface to an 11-inch circle and fit into a 9-inch pie plate, crimping the edges. Chill to set the crust, 20 minutes.
  • 3. Prick the bottom and sides of the crust with a fork. Fit the crust with aluminum foil and weigh it down with pie weights or dry beans. Bake until the edge of the crust is just golden, 20 to 25 minutes. Remove the foil and weights and continue to bake until the bottom of the crust is lightly golden and no longer shiny, 10 to 15 minutes longer. Cool completely.
  • 1. Pour the walnuts and chocolate into the bottom of the cooled crust. Combine the sugar, flour, butter and salt in a small bowl until smooth and set aside. Lightly whisk together the corn syrup, bourbon, vanilla and eggs in a large bowl. Stir together the hot water and baking soda before whisking into the egg mixture. Stir in the flour mixture and then pour over the nuts and chocolate. Bake until the crust is golden and the filling is just set, about 45 minutes. Cool completely on a rack. Serve with whipped cream if desired.

KENTUCKY DERBY PIE

Kentucky Derby Pie image

Rich, decadent amazing pie that tastes like Toll House Cookies in pie form! Great as a company dessert and only takes a few minutes to prepare.

Provided by Teresa

Categories     Pies/Dessert

Time 55m

Number Of Ingredients 8

2 large eggs (slightly beaten)
1 cup sugar
1/2 cup Gold Medal UNBLEACHED all-purpose flour (Bleached flour toughens baked goods)
1 cup chocolate chips (I prefer semi-sweet chocolate chips over milk-chocolate chips)
1 cup Fisher pecans (full halves are best)
1 stick Land 'O Lakes unsalted butter (melted and cooled (1/2 cup))
1 tsp. McCormick pure vanilla extract
1 unbaked pie shell

Steps:

  • Melt butter in microwave.
  • Cool about five minutes.
  • Add sugar, flour, eggs, vanilla and pecans.
  • When mixture is no longer warm (from butter being in microwave), add chocolate chips.
  • (If you add the chips too early they will melt and the pie will not turn out right).
  • Pour into unbaked pie shell.
  • Bake at 350° for about 40-45 minutes, until set.
  • You may have to cover the crust or top of pie with foil to prevent getting too dark.

  • To prepare the milkshake: Place a glass in the freezer to chill. Combine the ice creams and milk in a blender and blend until just smooth. Add the bourbon and mix until well combined. I prefer a thick milkshake, but if at this point the mixture is too thick for your liking add more milk one tablespoon at a time until the desired consistency is reached.
