Here's what you need: cauliflower, olive oil, flour, garlic salt, whole milk, hot sauce

1 head cauliflower
1 tablespoon olive oil
½ cup flour
1 teaspoon garlic salt
½ cup whole milk
1 teaspoon hot sauce

Steps:

  • Preheat oven to 450˚F (230˚C).
  • Cut the head of cauliflower in half. Pluck bite-sized florets from each half. Trim bottoms of florets as necessary.
  • In a medium bowl, mix the batter ingredients.
  • Add cauliflower to the batter. Stir so each floret is fully coated.
  • Line a baking sheet with parchment paper. Spread cauliflower florets on the baking sheet and drizzle with olive oil.
  • Bake for 20 minutes.
  • Remove the cauliflower from the oven and toss with buffalo sauce.
  • Return cauliflower to oven and bake for an additional 10 minutes until browned to your liking.

1 large head of cauliflower, stems removed (or 2 - 10 oz. bag cauliflower florets)
1/3 cup Frank's Red Hot Sauce
2 Tbsp. ghee
1 Tbsp. coconut aminos
1 tsp. apple cider vinegar
½ tsp. garlic powder
¼ tsp. cayenne pepper (optional)
Ranch for dipping (Homemade Ranch or Whole30 Compliant)
Parsley or green onions, chopped (optional)

Steps:

  • Preheat oven to 425 degrees. Line baking sheet with parchment.
  • Make buffalo sauce by placing small saucepan over medium heat and adding the hot sauce, ghee, coconut aminos, apple cider vinegar, garlic powder and optional cayenne. Once ghee is melted, whisk well to combine or transfer to small food processor or blender and process until smooth.
  • In a large bowl combine the cauliflower florets and 1/4-1/3 cup of the buffalo sauce. Toss to coat.
  • Transfer cauliflower to the sheet pan and bake for 15-17 min tossing 1/2 through baking time.
  • When done, remove from oven, transfer to serving dish and drizzle with remaining buffalo sauce. Top with green onions and/or parsley and serve with ranch for dipping.

1/2 cup Frank's red hot sauce
1 tablespoon packed dark brown sugar
2 teaspoons cider vinegar
1 -2 quart peanut oil or 1 -2 quart vegetable oil
3/4 cup cornstarch
1/4 cup cornmeal
1/2 teaspoon salt
1/4 teaspoon pepper
2/3 cup coconut milk or 2/3 cup reduced-fat milk
1 tablespoon Frank's red hot sauce
1 lb cauliflower floret, cut into 1 1/2 inch pieces
ranch dressing or blue cheese dressing

Steps:

  • Buffalo Sauce: Melt coconut oil in small saucepan over low heat. Whisk in hot sauce, brown sugar, and vinegar until combined. Remove from heat and cover to keep warm; set aside.
  • For the Cauliflower: Line platter with multiple layers of paper towels. Add oil to large Dutch (about 6 quart and cast iron works great) oven until it measures about 1 1/2 inches deep and heat over medium-high heat to 400 degrees. While oil heats, combine cornstarch, cornmeal, 1/2 teaspoon salt and 1/4 teaspoon pepper in small bowl. Whisk coconut milk and hot sauce together in large bowl. Add cauliflower; toss to coat well. Sprinkle cornstarch mixture over cauliflower; fold with rubber spatula until thoroughly coated.
  • Fry half of cauliflower, adding 1 or 2 pieces to oil at a time, until golden and crisp, gently stirring as needed to prevent pieces from sticking together, about 3 minutes. Using slotted spoon, transfer fried cauliflower to the paper-lined platter.
  • Return oil to 400 degrees and repeat with remaining cauliflower. Transfer 1/2 cup sauce to clean large bowl, add fried cauliflower and gently toss to coat. Serve immediately with dressing and remaining sauce.

2 teaspoons mayonnaise

1 tablespoon freshly squeezed lemon juice
2 tablespoons olive oil

8 cups cauliflower florets (from about 1 medium head)

Steps:

  • Preheat the oven to 400 degrees F.
  • For the cheese sauce: Whisk together the sour cream, blue cheese, milk, mayonnaise, 1/8 teaspoon salt and a few grinds of pepper in a small bowl. Cover and refrigerate until chilled, about 30 minutes
  • For the Buffalo cauliflower: Meanwhile, microwave the butter in a small microwave-safe bowl on high until melted. Whisk in the hot sauce and lemon juice and set aside.
  • Mix olive oil, 1/4 teaspoon salt and 1/2 cup water in a large bowl. Add the cauliflower and toss until well coated. Spread the cauliflower on a rimmed baking sheet and roast until beginning to brown and just tender, 20 to 25 minutes. Whisk the hot sauce mixture again, drizzle over the cauliflower and toss with tongs to coat. Roast the cauliflower until the sauce is bubbling and browned around the edges, 5 to 7 minutes more. You know you've reached buffalo cauliflower perfection when everyone proclaims these bites "as good as the best wings ever!" And that's no big surprise: Cauliflower florets have the same crispy "fried" exterior and piquant buffalo flavor as the classic chicken variety. The secret lies in double breading each floret in cheesy breadcrumbs, then carefully coating every nook and cranny with nonstick spray. Serve this appetizer with your favorite ranch or blue cheese dressing and watch it disappear in minutes.

Nonstick cooking spray, for the basket and cauliflower florets
1 small head cauliflower (about 1 1/2 pounds), cut into even 3/4-inch-florets (4 cups)
1 cup breadcrumbs seasoned with Parmesan
1 1/2 cups panko breadcrumbs seasoned with Pecorino Romano
4 large eggs
1/3 cup whole milk
6 tablespoons unsalted butter
3/4 cup Buffalo-style hot sauce
Diced chives, for serving
Ranch or blue cheese dressing, for serving

Steps:

  • Spray the basket of a 6-quart air fryer with cooking spray and set aside.
  • Arrange the cauliflower on a baking sheet and set up a breading station next to it: Fill one shallow bowl with the Parmesan breadcrumbs, another shallow bowl with the panko breadcrumbs and third shallow bowl with the eggs and milk. Whisk together the eggs and milk together until combined.
  • Working with several cauliflower florets at a time, roll them in the egg mixture until fully coated, shake off excess egg, then roll them in the Parmesan breadcrumbs until fully coated. Roll them in the egg mixture a second time, shaking off excess egg, and finally, roll them in the panko breadcrumbs until fully coated. Transfer the breaded pieces back to the baking sheet. Repeat until all the cauliflower florets are breaded.
  • Preheat an air fryer to 370 degrees F. Preheat your oven to 250 degrees F.
  • Pick up each cauliflower floret and spray it all over with nonstick spray, making sure to coat every nook and cranny. Arrange some of the florets in a single layer in the air fryer basket without touching (you will probably have to work in two batches). Air fry the florets, flipping them once, until golden and crispy, about 12 minutes. Transfer the cooked cauliflower to a baking sheet and place in the oven to keep warm. Air fry the remaining cauliflower.
  • Meanwhile, melt the butter in a large, shallow microwave-safe bowl, about 1 minute. Whisk in the hot sauce. Add the cauliflower to the bowl and toss to combine with the hot sauce until fully coated.
  • For the crispiest results, serve the bites immediately sprinkled with chives with the dressing alongside. As the bites sit, they'll become slightly less crispy, just like wings, but they'll still be just as tasty.

1 tbsp sweet smoked paprika
1⁄2 tbsp ground cumin
1 tsp garlic powder
100g plain flour
200ml buttermilk or kefir
1 head of cauliflower (500g), broken into florets
80g hot sauce
1½ tbsp maple syrup
1 tbsp butter
celery sticks, to serve
100g Greek yogurt
3 tbsp mayonnaise
2 tbsp chopped chives
1-2 tbsp milk

Steps:

  • Heat the oven to 220C/200C fan/gas 7 and line a baking tray with baking parchment. Mix together the paprika, cumin, garlic powder, flour and ½ tsp salt in a large bowl. Make a well in the centre and whisk in the buttermilk. Tip in the cauliflower and toss to coat. Spread out the cauliflower on the baking tray and cook for 20-25 mins, turning halfway through, until crisp at the edges.
  • Warm the hot sauce, maple syrup and butter in a small pan set over low heat, for 2-3 mins. Liberally brush over the cauliflower and put back in the oven for 8-10 mins.
  • For the ranch dip, whisk together the yogurt, mayo, chives, milk and a pinch of salt in a bowl. Serve the with the cauliflower alongside some celery sticks for dipping.
