ORANGE GLAZED SALMON
Steps:
- Rinse salmon fillet under cold water and pat dry with paper towels. Cut into 6 serving portions and place salmon fillets in a large zip-top bag; set aside.
- In a small bowl stir together remaining ingredients. Pour into zip-top bag. Squeeze air from bag and seal. Marinate in refrigerator for 1 to 2 hours.
- Remove salmon from refrigerator 30 minutes before cooking, and bring to room temperature.
- Light broiler and line baking sheet or broiler pan with aluminum foil.
- Remove salmon from marinade and place on baking sheet. Discard marinade. Broil salmon 6 to 8 inches from heat source for 6 to 8 minutes or until cooked through. Do not overcook.
- Serve immediately.

- 1. Combine Cajun Seasoning, Brown Sugar and Kosher Salt in a small bowl. On a piece of wax paper spread out your Salmon Fillets, rub mixture liberally over all surfaces of the fish.
- 2. In a large non-stick skillet heat two TBS of vegetable oil over med-high heat. Saute fillets over med-high heat for 4 minutes, turn and saute an additional 3 minutes. Turn off heat and add your marmalade and lime juice to the pan, swirl until melted, and carefully glaze your fish on all sides
- 3. Plate these beautiful fillets of Salmon with fresh Lime slices and Home-Style Fries....OH MY GOODNESS!!!

- Place oven rack in center of oven. Preheat broiler to high. In a small skillet over medium-high heat, stir together orange juice, brown sugar and garlic. Bring to a boil and cook until thickened and glossy, 4-5 minutes. Cool to room temperature; stir in sauce.

Salmon is my version of fast food. It's already so wonderfully flavorful on its own that I don't have to put much effort into it. A brush of oil and a sprinkle of salt and pepper, plus a few minutes in a hot oven or skillet and dinner is ready. In this recipe I whisk together marmalade, soy sauce and some freshly grated ginger, then I add a squeeze of fresh orange juice, pour it over the salmon, and then into the oven it goes. The result is sticky, sweet, tangy and oh so flavorful!

- Preheat the oven to 400 degrees F. Line a rimmed baking sheet or baking pan with foil. Sprinkle the salmon generously with salt and pepper and place on the foil.
- Whisk the marmalade, ginger, soy sauce, oil and orange juice together in a small bowl. Pour over the salmon. Drop the peel form the orange onto the baking sheet along with the salmon. Steps:
- Up to 24 hours before serving, place the salmon fillets in a nonreactive pan. In a food processor, combine and finely chop the ginger, peppercorns and cilantro. Roll the salmon fillets in the mixture, cover with plastic wrap or another plate and refrigerate overnight.
- Combine the sugar and pepper on a plate or in a shallow bowl.
- Heat the oil in a skillet.
- Scrape the excess ginger mixture from the fish and discard.
- Press the flesh (top) side of the salmon fillets into the sugar-pepper mixture and sauté them, seasoned side down, to caramelize the sugar, about 2 to 3 minutes.
- Quickly, before the sugar burns, pour the soy sauce and orange juice into the pan, swirling and stirring well to dissolve the caramelized bits.
- Turn the salmon skin side down. Lower the heat to medium. Cover the pan and let the salmon finish cooking for 5 to 8 minutes longer, or until it is cooked medium rare.
- Transfer the salmon fillets to a clean towel to drain before serving.
