- Add lemon juice, 2 tbsp olive oil, garlic powder, pork chops, salt, and pepper to a ziploc bag and marinate for at least 3 hours, and up to overnight.
- Preheat oven to 375 degrees F.
- Pat pork chops with paper towel to completely dry from any moisture from marinade.
- Season generously with salt and pepper.
- Heat a heavy cast iron pan (or oven-safe heavy pan) on medium high until very hot.
- Add butter or olive oil until melted and foamy or light and shimmery.
- Add in pork chops, without crowding the pan.
- Cook until browned on one side - about 3 minutes.
- Add garlic, lemon slices, lemon juice to pan as you sear the other side.
- As pork chops brown on the other side, stir garlic slightly and ladle butter/oil, lemon juice, and garlic from pan over the pork.
- When chops are browned on both sides, transfer to oven and cook until internal temperature reaches 145-150 degrees, about 25 minutes for a thick pork chop.
- For thin pork chops, only 5-10 minutes in oven might be needed. Use thermometer to gauge how close your pork is to being fully cooked since chops can vary so much!
- If you go by the older guidelines, it used to be 160 degrees, but the USDA now says 145 is good. Note that pork can still sometimes look a touch pink even when fully cooked, so go by the temperature.
- Let rest 5 minutes before serving.

- Preheat oven to 325 degrees F (165 degrees C).
- In a large skillet over medium heat, brown pork chops on both sides. Remove chops and place them in a shallow baking dish.
- Combine the ketchup, brown sugar, and vinegar. Pour mixture over chops, spreading to cover evenly. Cut 6 slices from the lemon, and lay one slice on top of each chop. Squeeze the juice from the remaining portion of lemon over the chops.

- Mix salt, pepper, garlic powder and flour together.
- Dredge the pork chops in this mixture.
- Brown the pork chops on both sides in the cooking oil.
- Arrange the pork chops in a 8x8 baking dish and place a lemon slice on each.
- Mix the catsup, water and brown sugar together and pour over the pork chops.
- Bake(uncovered) in a 350 degree oven for 45 minutes to 1 hour until done. Add a small amount of water, if needed, toward the end of baking period.

- Preheat your oven to 375 degrees F and place an oven rack in the center. Pat the pork chops dry with a paper towel and season evenly on all sides with the kosher salt (1 teaspoon) and black pepper (1/2 teaspoon).
- Heat an oven-safe skillet on high or medium-high heat, depending on your burners, until very hot. This will take only 30 seconds or so with stainless steel, but up to 5 minutes with cast iron. (to test, you shouldn't be able to hold your hand a couple inches over the skillet's surface for more than a few seconds.)
- Add the oil (2 tablespoons) and swirl to coat the bottom of the pan (or use a spatula to evenly distribute it). Add the pork chops to the skillet and allow to sear, undisturbed, for 2 minutes. While they are searing, sprinkle 1 teaspoon of the fresh oregano and thyme (or less than 1/2 teaspoon if using dried), once minced clove of garlic, and half the lemon zest on the top side of the pork chops.
- Turn off the heat on the burner and flip the pork chops. (Tip: they should release easily from the bottom of the skillet- if they don't, they may need more time searing.) With the seared side facing up, sprinkle the remainder of the fresh herbs, minced garlic, and lemon zest on top of the pork chops. Place the lemon wedges in the spaces around the pork chops. Slide skillet onto center oven rack and bake for 10-15 minutes, or until internal temperature is 145 degrees F (cooking time will vary depending on thickness and oven temperature).
- Remove pork chops to a plate or cutting board and allow to rest for 5 minutes (tent with foil if resting for longer than that to keep them warm).

- In a food processor, combine the lemons (rind & seeds too -- EVERYTHING), sugar and 1 cup water -- process until liquified.
- Strain the mixture.
- Place the lemon mixture & remaining ingredients, (except the chops & the flour) in a large stainless steel saucepan.
- Simmer for 1 hour on medium, stirring often, being careful not to burn.
- Remove from heat & set aside to cool.

- Heat oven to 200C/180C fan/gas 6. Pour the oil into a roasting tin and put in the oven to heat. Put the potatoes, garlic and half the lemon wedges into a large pan. Cover with cold salted water and bring to the boil, then simmer for 10 mins. Drain the potatoes, discarding the lemon and garlic. Toss the potatoes with the lemon zest, oregano and seasoning, then carefully transfer to the hot oil in the roasting tin and roast for 30 mins.
