STRAWBERRY AND FARM FRESH BLUEBERRY SMOOTHIE
Steps:
- Using the plastic straw, remove the white bitter interior and stem of each strawberry. You do this by centering the straw on the bottom pointed end of the fruit, pushing up through the inside to the top and popping off the stem in one smooth motion. Staying centered on the fruit with the straw is the key to quickly hulling and removing the bitter core of strawberries. (You can alternatively cut the stems and white bitter flesh out with a knife.)
- In a blender, combine the strawberries, blueberries, coconut water and strawberry yogurt and cover with the lid. Press the setting for puree and let it run until the texture is nice and smooth, at least 30 seconds.
- Pour into two 16-ounce Mason jars (or glasses), or four 8-ounce jars. Garnish with granola and mint leaves.

- Fill a 14-ounce glass with ice. Pour strawberries with syrup, and juices into a shaker and shake well.
- Pour drink over the ice, and add a fresh strawberry to the rim of the glass.
- Splash the soda over the top and serve with a straw.
- (Use the frozen, sweetened strawberries that come in boxes in the freezer section for this one. Be sure to thaw 'em first.).

- Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffins cups or line with paper liners.
- Whisk oil, milk, and eggs together in a bowl. Combine flour, sugar, baking powder, and salt together in a separate bowl; fold in strawberries, blueberries, and jam. Stir milk mixture into flour mixture until just combined. Fill muffin cups with batter.
- Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, about 25 minutes. Cool in the muffin tin for 10 minutes before removing to cool completely on a wire rack.

STRAWBERRY SURPRISE SNACKIN MUFFINS
Jelly filled treats. Sifting (pouring the flour through a special container with very small holes) is done to distribute the baking powder well. Sifting also makes the flour fluffier, which will make the baked dough fluffier. But if you don't have a sifter, just be sure to mix the flour with the baking powder and salt as throughly as possible before adding the wet stuff. I have not tried these muffins. I'm posting this recipe for safe keeping.

- In a large bowl, combine egg, milk, and butter.
- In a separate bowl, sift together flour, sugar, baking powder, and salt and add to egg mixture; then fold in chopped strawberries.
- Spoon about 1 tablespoon batter into each of 12 greased muffin cups, and drop a teaspoon of strawberry jam into center of each.
- Cover jam with remaining batter. Bake at 400 for 15-20 minutes, or until golden brown.

- In a measuring cup, combine 1/4 cup water, 2 Tbsp sugar and 2 Tbsp lemon juice and stir until sugar is dissolved. Set aside until needed.
- Beat together 1 lb cream cheese and 3/4 cup sugar (with the whisk attachment) on medium speed until creamy and smooth, scraping the bowl a couple times. With mixer on, pour in 2 cups heavy cream then turn mixer to medium/high and continue beating until until whipped and fluffy. Add 1/2 tsp vanilla and beat until incorporated.
- Place 1/3 of your sliced angel food cake into the bottom of your trifle dish and brush with 1/3 of your syrup. Add 1/3 of your cream and loosely spread it over cake pieces. Add 1/2 of the sliced strawberries. Repeat with remaining ingredients (adding 1/2 of the blueberries for the second fruit layer).
