- Place the chicken, 2 teaspoons curry powder, 2 teaspoons garam masala, 1/4 teaspoon salt, and 2 tablespoons vegetable oil in a zipper-close bag. Press out the excess air, seal the bag, and massage the spices into the chicken.
- Heat a grill pan over medium-high heat; once hot, place the chicken breasts on the pan. Cook 6-8 minutes per side until golden brown and cooked through. Transfer to a cutting board and cut into bite-sized pieces.
- While the chicken is cooking, place the onion and tomato in the bowl of a blender and process until pureed. Heat 1 tablespoon of vegetable oil in a large saucepan over medium heat, then add the onion-tomato mixture and allow to simmer for 5 minutes. Stir in the spices and sugar.
- Place the cashews and water into the same blender bowl and puree. Transfer the mixture to the saucepan, and add the coconut milk and yogurt. Simmer for an additional 5 minutes over medium.
- Turn the heat down to low and add the cooked chicken pieces. Simmer for 5 minutes until warmed through.
- Serve with basmati rice and warm naan bread.

- 1. Preheat the oven to 450 degrees and line a baking sheet with foil. Set aside 2 tbsp. cilantro leaves for the rice. Puree the remaining cilantro leaves and stems, the serrano, garlic, 1/4 cup water, the lemon juice, 2 tbsp. coconut, 1/2 tsp. salt and a few grinds of pepper in a blender until smooth, adding up to 2 tbsp. more water, if needed.
- 2. Toss the chicken thighs with half of the cilantro sauce on the prepared baking sheet; arrange skin-side up. Season generously with salt and pepper. Roast until the skin is crisp and the chicken is cooked through, about 25 minutes.
- 3. Meanwhile, heat the vegetable oil in a medium saucepan over medium heat. Add the curry powder, turmeric and a few grinds of pepper; cook, stirring until toasted, 30 seconds. Add the rice and cook, stirring, until well coated, 1-2 minutes. Add 1 1/2 cups water and 1/2 tsp. salt. Reduce the heat to low. Cover and cook until the liquid is absorbed and the rice is tender, about 15 minutes. Remove from the heat and let stand, covered, 5 minutes.
- 4. Fluff the rice with a fork. Stir in the cashews, the remaining 2 tbsp. coconut and the reserved 2 tbsp. cilantro. Serve with the chicken; top with remaining cilantro sauce.

- Heat a large nonstick skillet or wok over high heat and then swirl in 1 tablespoon of the oil. When the oil begins to smoke, add the egg and swirl the skillet to make a flat egg pancake that's only half set, about 10 seconds; scoop out onto a plate.
- Add the chicken to the skillet, sprinkle with 1/4 teaspoon salt and cook, stirring constantly, until golden brown and just cooked through, about 4 minutes. Transfer to a bowl. Add the remaining tablespoon oil, then add the carrots, sweet chili sauce, ginger, soy sauce and 1/4 teaspoon salt and cook, stirring constantly, until the carrots are crisp-tender, 1 to 2 minutes.
- Add the rice, stirring to break up any clumps, and spread it out in the skillet. Cook until heated through, about 3 minutes. Return the egg, chicken and any juices to the skillet and cook, stirring and breaking up the egg, to mix it in thoroughly, about 1 minute. Season with additional salt if needed. Stir in the chili oil, sprinkle with the cashews and serve.

- Cut the onions into quarters and place in food processor/blender for one minute.
- Add tomato paste, cashew nuts, garam masala, garlic, ginger, chili powder, curry powder, cumin, lemon juice, turmeric, salt and yogurt to the processed onions.
- Process all ingredients until well combined to form a puree.
- In a saucepan, heat the oil, lower the heat to medium and pour in the puree mixture. Add in the half and half, chicken broth and butter.

- In a medium pot over medium heat combine 1 tablespoon extra-virgin olive oil, and 1 Tbsp butter.
- When butter melts, add chopped onion. Cook 2 minutes.
- Add rice and cook 3 minutes more.
- Add stock and cover the pot. Raise heat and bring stock to rapid boil.
- Once stock boils, reduce heat to low and cook stirring occasionally, until rice is tender, 17-18 minute.
- While rice cooks, make the chicken.
- Heat large skillet over high heat.
- Add vegetable oil, then chicken.
- Season chicken with grill seasoning.
- Brown chicken on both sides, season with soy sauce, then move off to one side of the pan.
- Add the remaining onions, garlic, and peppers.
- Cook 3 minutes then add water chestnuts and green peas. Mix veggies and meat together.
- Add the chipotles in adobo and cumin.
- Toss to coat.
- Glaze the mixture with honey and maple syrup, and turn off the heat.
- Add in the cilantro and cashew nuts.
- Top rice with cashew chicken and serve.

- Put all the paste ingredients in a food processor and process until smooth and set aside.
- In a heavy bottom pot heat oil or ghee on a low heat. Add whole spices and saute until they are slightly brown.

- Cook the rice following pack instructions but add the turmeric and 1 tsp curry powder to the cooking water. Drain well and spread on a tray lined with kitchen paper to cool.
- Meanwhile, finely chop the coriander stalks and whisk with all the other dressing ingredients, plus seasoning.
- Tip the rice into a big mixing bowl. Using a fork, break up any large lumps, then mix in the cashews, cucumber, onion, coriander leaves, pomegranate seeds, beans and chicken. Pour over the dressing and lightly stir in, then cover and keep in the fridge. Eat over the next 2 days (as long as it's within the chicken use-by date). Keep a big spoon in the bowl so kids can easily help themselves. Top with a dollop of yogurt and add a handful of poppadum crisps, if you like.
