1 (8 ounce) package wide egg noodles
2 tablespoons butter
2 tablespoons all-purpose flour
1 teaspoon salt
1 cup milk
1 cup shredded sharp Cheddar cheese
1 (5 ounce) can tuna, drained
1 (15 ounce) can peas, drained

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat a 2 quart casserole dish with cooking spray.
  • In a large pot of salted water, boil noodles until al dente. Drain well.
  • In a medium saucepan, combine flour, butter, and salt. Stir until butter is melted and ingredients are combined evenly. Add milk, and whisk until the sauce thickens (usually it is at the proper consistency by the time it begins to boil). Add cheese to mixture, and whisk until cheese is melted and mixture is well blended. Stir in tuna, peas, and noodles. Spread evenly in prepared dish.
  • Bake in preheated oven for 30 minutes.

olive oil, for spritzer
2 cups mushrooms, chopped

1 (3 ounce) can tuna, lightly drained
1/2 cup low-fat sour cream
1 1/2 teaspoons Worcestershire sauce

1 cup fresh breadcrumb, coarsely ground

Steps:

  • Cook pasta as directed. Preheat oven to 400°F.
  • While waiting for the water to boil, add mushrooms, onion, celery and garlic to a nonstick pan sprayed with olive oil. Saute over medium heat until just tender. The moisture from the veggies will keep them from sticking.
  • While cooking the pasta, stir tuna, sour cream, Worcestershire sauce, salt and pepper into the pan. Remove from heat and add cheddar cheese.
  • When pasta is al dente, stir into pan. Pour into a casserole dish sprayed with olive oil. Cover with bread crumbs.

Quarter your canned whole mushrooms if that's what you have. Use a shaped pasta like macaroni, rotini, penne, something to hold the sauce. 2 (6 ounce) cans tuna in water (flaked or chunk, drained)
1 (10 ounce) can reduced-fat cream of mushroom soup, condensed
1 (10 ounce) can mushrooms, sliced, drained
1 teaspoon Worcestershire sauce
salt and pepper

Steps:

  • Boil pasta in salted water, as directed. While pasta is cooking, spray a 2 quart casserole with nonstick spray; open cans of tuna, soup and mushrooms.

My DS's love my tuna casserole (see Recipe #349613), but one of them does not have a microwave at school to heat it up. I came up with this cold version of it and they both really like it. I kept it simple because after a long day at work and then making a nice dinner, I don't feel like making high maintenance lunches. My guys are 12 and 14 and can eat a lot, particularly this! You can increase the amount to make a cold salad for a gathering. Enjoy!

1 (6 ounce) can tuna in water, flaked or chunk and drained

5 teaspoons olive oil, divided

2 cups milk
1 ½ cups chicken stock
2 tablespoons lemon juice
1 teaspoon Dijon mustard
½ teaspoon ground black pepper

1 cup panko bread crumbs

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.

½ cup finely diced yellow onion
1 ½ teaspoons kosher salt, divided
3 tablespoons all-purpose flour
4 cups cold milk
1 cup shredded white Cheddar cheese

2 (5.5 ounce) cans tuna packed in olive oil, drained and crumbled, or to taste
¾ cup frozen peas, thawed and drained
1 pinch cayenne pepper
¼ teaspoon freshly ground black pepper
¼ teaspoon Worcestershire sauce
½ cup plain bread crumbs
½ cup grated Parmigiano-Reggiano cheese
2 tablespoons olive oil

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Lightly butter a 9x13-inch casserole dish.

I made this recipe up one night and it was a big hit. I get asked to make it often. I called it "Not Yo Mama's" because it starts out like your mom's, but takes a 'fusion turn' toward 'special.'

1/2 cup butter, divided
1 (16 ounce) package of uncooked medium wide egg noodles
1 medium onion, finely chopped
3 stalks celery, finely chopped

1 red bell pepper, chopped
1/3 cup all-purpose flour
3 cups milk
salt and pepper
1 cup frozen peas, thawed

4 (6 ounce) ahi tuna steaks, 1 inch thick
2 tablespoons olive oil

Steps:

  • Preheat oven to 375 degrees. Spray a large baking dish with non-stick spray. Bring a large pot of lightly salted water to boil. Add egg noodles, cook for 8 to 10 minutes, until al dente, and drain. Rinse briefly.
  • Melt 1 tablespoon butter in skillet over medium low heat. Stir in onion, celery, garlic, and red pepper. Cook 5 minutes, or until tender. Increase heat to medium high and add sliced mushrooms. Continue to cook and stir 5 minutes, or until most of the liquid has evaporated.
  • Melt 5 tablespoons butter in medium saucepan, and whisk in flour until smooth. Gradually whisk in milk and continue cooking 5 minutes until sauce is smooth and slightly thickened. Season with salt and pepper. Stir in peas, mushroom mixture and cooked noodles. Transfer to the baking dish.

  • While casserole is baking, rinse tuna and roll in black and white sesame seed mixture on all sides. Sear tuna in olive oil one minute on each of the six sides (longer if you don't like your tuna rare). Remove from pan and slice thinly.
  • When casserole is finished, place tuna slices on top and serve. Option: Keep tuna separate until ready to serve. Place serving on individual plates. Garnish with dill or lettuce and place several slices of tuna on top or on the side with the garnish.
