1 1/2 cups cold water
1 (4-serving) pkg. instant vanilla pudding mix
2 cups (1 pint) heavy cream, whipped
36 vanilla wafers
3 medium bananas, sliced and dipped in lemon juice

Steps:

  • COMBINE sweetened condensed milk and water in large bowl. Add pudding mix; beat until well blended. Chill 5 minutes.
  • FOLD in whipped cream. Spoon 1 cup pudding mixture into 2 1/2-quart glass serving bowl.
  • TOP with one-third each of the vanilla wafers, bananas and remaining pudding. Repeat layering twice, ending with pudding mixture. Chill thoroughly. Garnish as desired.

5 cups milk
1 (12-ounce) container frozen whipped topping, thawed, divided

1 tablespoon lemon juice

Steps:

  • Reserve 1/2 cup vanilla wafer pieces; place remaining wafer pieces in a 9- x 13-inch baking dish.
  • In large bowl, combine pudding mix and milk; whisk 1 to 2 minutes, or until smooth and thickened. Add half the whipped topping (about 2-1/2 cups) and sour cream; mix well. Refrigerate until ready to use.
  • In a medium bowl, combine bananas and lemon juice; toss until evenly coated, then drain.
  • Spread half the pudding mixture evenly over wafers. Arrange banana slices over pudding mixture. Evenly spread with remaining pudding mixture.

1 quart milk
2 cups sugar, plus 1/4 cup sugar
8 large eggs, separated, whites discarded or store for another use
1 teaspoon banana extract
1/3 cup bourbon
1/2 cup cornstarch
Salt
1/2 teaspoon pure vanilla extract, plus a splash
2 tablespoons butter, cut into cubes
1 cup heavy cream
4 large bananas, sliced
1 box vanilla wafers
1/3 cup creme de banana

Steps:

  • Scald milk, in a large sauce pot, with a pinch of the sugar (this avoids scorching the bottom of the pot).
  • In a mixing bowl, add egg yolks, banana extract, bourbon and 2 cups of sugar and whisk together until the mixture is pale yellow in color and thickened. Add cornstarch and mix to combine. Very slowly pour in a little of the milk mixture, you have to do it slowly to temper the mixture, (otherwise the eggs will scramble). Once fully incorporated pour the entire mixture back into the pot and place over medium heat. Stir constantly until it comes to a simmer and the mixture thickens enough that it coats the back of a wooden spoon. Remove from heat and add a pinch of salt and vanilla extract, then add butter cubes and stir to make the mixture rich and super glossy.
  • Transfer to a bowl and cover with plastic wrap, pressing the wrap onto the surface so it doesn't form a skin on the surface. Allow to cool.
  • In a large bowl, using a hand mixer, whip the cream with 1/4 cup of sugar and a splash of vanilla extract until you have stiff peaks. Set aside.
  • Slice bananas and add to pastry cream.
  • Line a small deep rectangular dish or a 10-inch pie dish with vanilla wafers. Splash with creme de banana then cover with banana pastry cream. Top with whipped cream and refrigerate until ready to serve.

2 box instant vanilla pudding/pie filling (regular size, not the large box)
3 c milk
1 can(s) sweetened condensed milk
1 large container of whipped topping
1 box vanilla wafers
5 bananas

Steps:

  • 1. Combine the pudding with the milk and mix together for approximately 2 minutes.
  • 2. Gradually fold in the sweetened condensed milk.
  • 3. Gradually fold in the whipped topping.
  • 4. Slice bananas into 1/4 inch thickness.
  • 5. Layer a 9 x 13 dish with the vanilla wafers; then the pudding mixture; and then the banana slices. Then repeat for the 2nd layer. You can crush up the remaining vanilla wafers and scatter on the top if you like.
  • 6. Let refrigerate for several hours. Overnite is better, but I have made this early in the morning for a pot-luck at work, and it's great at lunch.

3 cups cold milk

Steps:

  • In a large bowl, with a hand mixer, beat cream cheese until smooth.
  • Slowly beat in sweetened condensed milk until entire can has been mixed.
  • Add instant pudding powder and mix until smooth.
  • Slowly add milk 1/2 cup at a time until all milk has been added.
  • Now add vanilla extract and blend.

7 large slightly underripe bananas (you want them slightly green on the ends - no spots)
1 1/2 cups sugar
8 large egg yolks
6 tablespoons cornstarch
6 cups half-and-half
1/2 teaspoon salt
3 tablespoons butter
1 tablespoon vanilla extract
3 tablespoons lemon juice
1 (12-ounce) box vanilla wafers
1 cup heavy cream (chilled)
1 tablespoon powdered sugar
1/2 teaspoon vanilla extract

Steps:

  • Preheat the oven to 325 degrees and make sure an oven rack is in the upper-middle position. Place three unpeeled bananas on the baking sheet and bake until the skins are completely black, about 20 minutes. Let the bananas cool for 5 minutes.
  • While the bananas are roasting, whisk 1/2 cup sugar, egg yolks, and cornstarch together in a medium bowl until smooth. In a large saucepan, bring the half-and-half, remaining sugar and salt to a simmer over medium heat. Once simmering, whisk 1/2 of the hot half-and-half mixture into the egg yolk mixture, whisking quickly and constantly so the egg yolks don't overcook and form little lumps. Slowly whisk the tempered egg yolk mixture back into the saucepan. Cook, whisking constantly, until the mixture is thick and large bubbles are popping at the surface, about 2-3 minutes. Remove the pudding from the heat and stir in the butter and vanilla.
  • Transfer the pudding to a food processor (if your food processor is small, puree half the pudding with the roasted bananas and lemon juice and then transfer it all to a large bowl and whisk in the rest of the pudding). Add the warm, peeled roasted bananas and 2 tablespoons lemon juice and puree until the mixture is smooth. Scrape the pudding into a large bowl and place plastic wrap directly on the surface of the pudding to avoid a skin forming. Refrigerate until the pudding is mostly cool, about 1 1/2 hours.
  • Cut the remaining bananas into 1/4-inch slices and toss in a bowl with the remaining 1 tablespoon lemon juice. Spoon 1/4 of the pudding into a 3-quart trifle dish and top with a layer of cookies, layer of sliced bananas, and another layer of cookies, making sure cookies go all the way to the edges of the dish. Repeat twice, ending with the pudding. Place another sheet of plastic wrap directly touching the surface and refrigerate until the wafers have softened, at least 8 hours or up to 2 days.
  • To garnish, whip the cream, sugar and vanilla to stiff peaks in a medium bowl. Top the banana pudding with the whipped cream. Serve!

2 ripe bananas, sliced

  • In a high speed blender, combine the pudding ingredients and blend briefly.

1 (7 ounce) package banana nut muffin mix
1 (3.4 ounce) package instant banana cream pudding mix
1 ⅓ cups water
⅔ cup vegetable oil
3 large eggs
2 medium ripe bananas, mashed
¾ cup crushed vanilla wafers

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line 26 standard muffin cups with paper liners.

2 pkg instant vanilla pudding..small boxes
2 c cold milk
8 oz sour cream
1 can(s) sweetened condensed milk
1 small container of whipped cream
1 tsp vanilla extract
4 bananas/sliced
1 pkg vanilla wafers

Steps:

  • 1. Combine all the ingredients except bananas and cookies. Mix with a mixer is the easiest ..blend well.
  • 2. Line cookies on the bottom of a dish , then sliced bananas then pudding mixtute. Repeat this at least one more time.
  • 3. Top the dish with cookies
  • 4. Refrigerate at least 3-4 hours or overnight

3 cups whole milk
1 cup white sugar
⅓ cup all-purpose flour
¼ teaspoon kosher salt
4 large egg yolks
1 tablespoon unsalted butter
1 ½ teaspoons vanilla extract
1 (11 ounce) box vanilla wafers
4 large bananas, sliced
1 cup heavy whipping cream
¼ cup powdered sugar

Steps:

  • Whisk milk, sugar, flour, and salt together in a medium saucepan until well combined. Place over medium-low heat and cook, whisking frequently, until the mixture comes to a low simmer and begins to thicken, 5 to 10 minutes.
  • Beat egg yolks in a small bowl until smooth. Add about 3/4 cup of the hot milk mixture and stir it quickly into the egg yolks. Whisk the egg yolk mixture back into the hot milk mixture and continue to cook, stirring constantly, until thick and creamy, about 5 minutes. Turn off heat, add butter and vanilla, and stir until smooth. Let cool slightly, about 10 minutes.
  • Set aside 6 vanilla wafers for the top. Arrange a layer of vanilla wafers in the bottom of a deep, 8-inch square or 2-quart baking dish. Top with a single layer of sliced bananas. Add another single layer of vanilla wafers, then spread 1/2 of the pudding mixture over top. Top with another layer of sliced bananas and the remaining vanilla wafers. Spread the remaining pudding over top, letting it seep into any open spaces. Cover lightly with plastic wrap and refrigerate 4 hours to overnight.
  • When ready to serve, beat heavy cream with an electric mixer until soft peaks form, incorporating powdered sugar about halfway through.
  • Remove banana pudding from the refrigerator. Spread whipped cream over top. Crush reserved vanilla wafers and sprinkle over the whipped cream. Serve immediately.

28 ounces milk, any percentage will do (about 3 1/2 cups; 790g)
16 ounces peeled, ripe banana from about 5 medium bananas, sliced into 1/2-inch pieces (about 3 cups; 455g)
1 empty vanilla bean pod, left over from another project, optional
7 ounces plain or toasted sugar (about 1 cup; 195g)
1 1/4 ounces cornstarch (about 1/3 cup; 35g)
1/2 teaspoon (2g) Diamond Crystal kosher salt; for table salt, use about half as much by volume or the same weight
1/8 teaspoon (.5g) ground cloves
5 ounces egg yolk (from about 10 large eggs; 140g)
1/4 ounce vanilla extract (1 1/2 teaspoons; 7g)

Steps:

  • Infuse the Milk: Combine milk, sliced banana, and empty vanilla bean pod (if using) in 3-quart stainless steel saucier and bring to simmer over medium heat, stirring from time to time with flexible spatula to prevent scorching along bottom. When dairy comes to simmer, remove from heat, cover, and let stand until cooled to room temperature, about 4 hours. Proceed to next step or refrigerate up to 24 hours to extract stronger banana flavor. The exact timing will depend on both personal preference and convenience.
  • Make the Custard: Return banana milk to simmer over medium heat, stirring as before; then strain through a fine-mesh sieve into medium bowl. Press gently on banana pulp to release liquid, but don't allow pulp to pass through sieve. The pulp can be refrigerated to use in muffins, pancakes, or smoothies, but it will not benefit the custard. If using vanilla pod, scrape out the flavorful milk inside each half with flexible spatula before discarding.
  • Using same 3-quart saucier as before (no need to wash), whisk sugar, cornstarch, salt, and cloves together until well combined, followed by egg yolks. Whisk in infused milk. Return to stovetop and warm over medium-low heat, whisking gently until custard is steaming hot, about 5 minutes.
  • Increase heat to medium and continue cooking until custard thickens, about 5 minutes longer. When it begins to bubble, set timer and continue whisking for 90 seconds. This step is important to neutralize starch-dissolving protein found in egg yolks. Off-heat, stir in vanilla extract and season to taste with additional vanilla, salt, or cloves, as needed. If desired, strain custard through same sieve as before (again, no need to wash) to remove bits of chalazae that may remain or any accidentally curdled custard.
  • Portion warm custard into parfait dishes and serve immediately, plain or topped with toasted nuts, cocoa nibs, fresh fruit, unsweetened whipped cream, or whatever toppings you desire.

1½ cup milk
1 cup heavy / whipping cream
4 egg yolks
¾ cup sugar
2 tbsp cornstarch / cornflour
2 tbsp flour
pinch of salt
4 large bananas (thinly sliced )
200 g (7oz) Vanilla wafer cookies ((Nilla wafer / Sugar cookies) )
2 cups whipped cream

Steps:

  • To make the filling, heat the milk, cream and sugar over medium heat in a saucepan. Take care not to allow it to catch and burn.
  • In a bowl, whisk the egg yolks and flours together. Slowly whisk in a ladle-full of the hot milk mixture to temper the eggs.
  • Pour the egg mixture back into the saucepan with the rest of the milk and whilst whisking continuously, allow to thicken and cook. The mixture will become thick and shiny.
  • Remove the custard from the heat and pass through a fine mesh sieve to remove any lumps.
  • Transfer the custard to a bowl and press a piece of plastic wrap onto the surface of the custard. Refrigerate for an hour or until cooled.
  • Once cooled, remove from the fridge and whip until smooth.
  • To assemble the banana pudding, layer the custard with vanilla wafers and sliced bananas in a serving dish or individual glasses/bowls of your choice. Cover with plastic wrap and refrigerate for 2-4 hours.
  • Once ready to serve, remove from the fridge and top with whipped cream. Decorated with vanilla wafers or sliced bananas and serve.
