RASPBERRY COOLER
This is a recipe I've been trialling over the summer. I like mine a little tart, so if it's not quite sweet enough for you, either add a little more sugar when you make the syrup or add some icing sugar (it will dissolve more easily) into the syrup once made. Makes enough for two litre-sized pitchers.

- Start by making the syrup - this should be done well ahead of time so it has time to cool.
- Put the raspberries in a pan with the sugar and water (leave a couple aside with some mint leaves to decorate). Squeeze the lime juice in on top. Muddle the mint leaves in your hands and then add them to the pan. Put on a medium heat. Use a whisk to break down the raspberries and gently whisk it all together. Heat to a simmer and let it reduce by about a third. Strain into a jar and allow to cool.
- When you are ready to serve, fill your pitcher up with ice. Pour about 100ml of your raspberry syrup in and then top up with soda water (about a 1:5 syrup:soda ratio). Stir to properly mix it, decorate with the remaining raspberries and mint; serve immediately.
RASPBERRY COOLERS
Coming soon to a market near you: sweet-tart raspberries. Use the fruit as the base for an aromatic syrup, and combine with seltzer for a refreshing sip. A few tablespoons of the mixture also enlivens white wine, vodka, and iced or hot tea. Make a double or triple batch to keep in the refrigerator. It will last for up to a week.

- Combine raspberries, sliced lemon (if using), vanilla bean, and sugar in a double boiler or heatproof bowl set over a pan of simmering water. Cook, stirring, until raspberries have released most of their juices, about 12 minutes.
- Strain through a fine sieve, pressing gently with the back of a spoon; discard solids. Let cool. Pour 1/4 cup syrup into each of 3 ice-filled glasses. Top each with 1 cup seltzer. Serve with lemon wedges.

- Combine sugar, mint leaves & water in 2-qt casserole.
- Cook in microwave at full-power or stove-top till mixture begins to boil (about 2 1/2 - 4 minutes). Stir halfway thru cooking time, then let stand for 5 minutes.
- Add frozen raspberries + limeade & stir till raspberries are thawed.
- Gradually stir in club soda just b4 serving over ice.

- In a really large heatproof glass pitcher, pour the boiling water over tea bags. Let it steep about 5 minutes. Remove and discard the tea bags. Stir in sugar until completely dissolved. Stir in the cold water, frozen orange juice concentrate, and lemon juice. Chill until serving time.
- To serve, pour the club soda down the sides of the pitcher. Break up the Raspberry Ice (if using) and add to the pitcher or serving glasses.
- Makes 14 servings.
- Raspberry Ice: Add water to an ice tray and fill half full. Arrange fresh raspberries and strips of lemon peel in each cubicle and freeze until firm. Add more water until full and freeze until firm.

- Tip the goji berries, raspberries and ginger into a large jug. Pour over 850ml boiling water and leave to cool. Transfer to the fridge to infuse for at least 2 hrs, or overnight.
- Strain through a sieve into a clean jug, then sweeten with the honey. Fill four glasses with the ice, pour over the drink and garnish with the fresh berries and mint, if you like.

RASPBERRY MINT CAIRO COOLER
My daughter's Girl Scout troop wanted recipes to represent Egypt for their World Thinking Day. Our troop leader, Nashawn, found this on an Egyptian recipe web site. For a pretty presentation , you can freeze some of the noncarbonated ingredients overnight so that it can float in the punch bowl to keep the drink cold. I opted not to use mint since we were serving it to kids, but I prefer the mint flavor myself. We served this with Egyptian Milk Chocolate chip Pumpkin Cake

- Rub the mint leaves around the inside of a large iced tea jug or pitcher, then drop them into the glass.
- Pour in remaining ingredients and mix well.
- Serve with a lime wedge on the edge of the glass.
- Our troop leader Nashawn, also made this recipe using mint and raspberry extract to taste, and it got rave reviews.
- For an alcohol variation, add 1-2 shots (30-60ml) of dark rum to 16 ounces of cooler. (No, The Girl scouts did not partake of this version!).

RASPBERRY MINT COOLER
I found this in Country Woman magazine and it looked interesting so my grandma and i picked some mint from her garden and thought we'd try it. I loved the mint in with the raspberries. A very delicious and refreshing drink.

- In a large saucepan, bring water, mint and sugar to a boil.
- Stir until sugar is dissolved.
- Remove from the heat; let stand for 5 minutes.
- Add the raspberries and the lemonade concentrate; gently mash raspberries.
- Line a strainer with four layers of cheesecloth; place over a 1-gal. container.
- Slowly pour raspberry mixture into strainer' and discard pulp and mint.
- Add cold water to the raspberry juice; stir well.
- Serve over ice.
