Steps:
- In a 3-quart saucepan, heat theolive oil oover medium heat.
- Add the onion and garlic and cook until soft and light golden brown, about 8-10 minutes.
- Add the thyme and the carrot and cook 5 minutes more, until the carrot is quite soft.
- Add the tomatoes and juice and bring to a boil, stirring often.
- Lower the heat and simmer for 30 minutes, until as thick as hot cereal.
- Season with salt and serve.
- This sauce holds one week in the refrigerator or up to 6 months in the freezer.

- If I want to use this as a the basis for a meat sauce or chilli sauce I don't usually bother to peel the tomatoes, when I want a silky smooth sauce that runs beautifully I do peel them.
- You choose Peel tomatoes by covering with boiling water in a bowl for 5 minutes if you want the"smooth" recipe.
- Chop tomotoes into evenly sized pieces.
- Heat olive oil and sauté garlic and onion until soft.
- Add tomatoes, tomato pureé, Basil, salt and pepper.
- Simmer gently got 30-40 until it reduces a little.
- Serve as is, or put in a blender until smooth.
- For Chilli sauce, add 1/4-1/2 teaspoon chilli powder (to your preference) or fresh chillies.
- Adding browned minced meat makes a nice easy sauce for over pasta.
THE BEST TOMATO SAUCE
There are about as many versions of tomato sauce as there are cooks in the world. The Italian-American heritage of one of our test-kitchen team members informed the development of this recipe, leading us to a version of her family's favorite tomato sauce. A variety of canned tomatoes adds richness. A long simmer helps the flavors meld and results in a sauce that is perfect on pasta or nestled around chicken cutlets or meatballs.

- Combine the olive oil and garlic cloves in a large saucepan over medium-low heat and cook, stirring occasionally, until the garlic is soft and golden brown, about 6 minutes (do not let the garlic burn). Once the cloves are nicely browned remove them from the pot with a slotted spoon and set aside.
- Add the onion to the garlic-infused oil and cook until translucent, about 5 minutes. Crush the can of San Marzano tomatoes into the pot with your hands, then fill the can with water and pour it into the sauce. Stir in the crushed tomatoes, tomato sauce, tomato paste, granulated garlic, onion powder and crushed red pepper flakes. Season with salt and pepper.
- Finely chop the reserved browned garlic cloves and add to the sauce.
- Stir in the Parmesan rind, if using, and the basil sprig. Bring the sauce to a simmer and cook, stirring occasionally, until it has deepened in color and reduced slightly, about 1 hour 30 minutes (if the sauce begins to scorch, lower the heat). Season to taste with salt and pepper. Discard the Parmesan rind and basil before serving.

- Wash tomatoes.
- Dip each tomato in boiling water 30 to 60 seconds or until skins split.
- Plunge immediately into ice water; core, peel, and quarter tomatoes.
- Place 4 cups of tomatoes in a large stockpot; crush tomatoes.
- Quickly bring to a boil over high heat, stirring vigorously; gradually add remaining quartered tomatoes, stirring constantly.
- Reduce heat, and simmer, uncovered, 2 hours.
- Remove from heat; stir in basil.
- Add 1 tbls.
- lemon juice and 1/2 tsp.
- salt to each pint jar.
- Immediately pack hot tomatoes into hot jars, filling to 1/2 inch from top.
- Carefully run a nonmetallic spatula around inside of jars to remove air bubbles; wipe jar rims.
- Cover at once with metal lids, and screw on bands.
- Process in boiling-water bath 35 minutes.
- Yield: 6 pints.
BASIC TOMATO SAUCE

- Heat the oil in a pan and add the vegetables and bay leaf. Stir in the sugar with some salt. Gently cook for 10-15 mins until the veg is tender. Stir in the tomatoes and 150ml water. Simmer very gently for 30 mins until the sauce has reduced by two-thirds and is very thick. (If you have doubled or tripled the quantities, this may take up to 1 hr.)
- Stir occasionally, particularly towards the end of the cooking time, so that the sauce doesn't catch on the bottom. If you like your sauce a little thinner, add a splash of water. Serve half with pasta and chill or freeze other half in 1-2 batches for later use (see 'Goes well with' for ideas of how to use up your sauce).

I discovered this sauce recipe by total accident, randomly paging through a 33 year old Sunset canning book. Once made, it is the BEST fresh tomato sauce I've ever tried or made. Well worth the time it takes to make from scratch.

- In a large Dutch oven, cook onions and garlic in olive oil over medium heat until golden brown (about 15 minutes), stirring occasionally.
- Meanwhile, immerse tomatoes, a few at a time, in a large pan of boiling water for 1 minute; then lift out and plunge in plunge into cold water. Pull off and discard skin.
- Cut tomatoes into eighths and add cooked onions, along with green onion, green pepper, salt, pepper, anise seed, oregano, rosemary, paprika, and the 2 cups of dry red wine.
- Bring mixture to boiling, stirring with a heavy wooden spoon to break up tomatoes. Cover, reduce heat, and simmer for 1 hour. Remove cover and boil until reduced to 8 cups.
- You can use the sauce while hot, let it cool and refrigerate for 3 days, or freeze up to 4 months.
