This was something I created as a teenager, back when I was a vegetarian. Now that my daughter doesn't eat meat, she asks for this dinner several times a week. -Ashlynn Azar, Beaverton, Oregon

Number Of Ingredients 9

9 ounces uncooked whole wheat fettuccine
1 tablespoon olive oil
1-3/4 cups sliced baby portobello mushrooms
1 garlic clove, minced
1 can (15 ounces) black beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes, undrained
1 teaspoon dried rosemary, crushed
1/2 teaspoon dried oregano
2 cups fresh baby spinach

Steps:

  • Cook fettuccine according to package directions. Meanwhile, in a large skillet, heat oil over medium-high heat. Add mushrooms; cook and stir 4-6 minutes or until tender. Add garlic; cook 1 minute longer., Stir in black beans, tomatoes, rosemary and oregano; heat through. Stir in spinach until wilted. Drain fettuccine; add to bean mixture and toss to combine.

"Here is one of my favorite light recipes," says Stephanie Land of Sudbury, Ontario. With zip from cumin and red pepper flakes, the spicy Southwestern dish is a hearty meal-in-one.

Number Of Ingredients 10

8 ounces uncooked spiral pasta
1 cup finely chopped green pepper
1 medium onion, chopped
2 garlic cloves, minced
1 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon crushed red pepper flakes
2 cups tomato sauce
1 can (15 ounces) black beans, rinsed and drained
1/2 cup shredded reduced-fat cheddar cheese

Steps:

  • Cook pasta according to package directions; drain. Meanwhile, in a large saucepan coated with cooking spray, combine the green pepper, onion, garlic, oregano, cumin and red pepper flakes. Cook over medium heat for 5 minutes or until tender. Add tomato sauce and black beans; bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes or until heated through. Stir in pasta. Sprinkle with cheese.

1 cup Old El Paso™ salsa (any variety)
2/3 cup uncooked elbow macaroni (2 ounces)
3/4 cup water
2 teaspoons chili powder
2 cups Progresso™ red kidney beans (from 19-oz can), drained, rinsed
1 can (8 ounces) tomato sauce
1/2 cup shredded Cheddar cheese (2 ounces)

Steps:

  • Heat all ingredients except cheese to boiling in 10-inch nonstick skillet; reduce heat.
  • Cover and simmer about 15 minutes, stirring frequently, until macaroni is tender. Sprinkle with cheese.

1 lb ground pork
1 cup uncooked rotini pasta, regular or 1 cup whole wheat pasta
salt
pepper
1/4 teaspoon paprika
2 dashes cayenne pepper
1 (14 ounce) can tomatoes
1 (15 ounce) can black beans
1/2 teaspoon garlic powder
1/2 tablespoon basil
1 tablespoon parsley

Steps:

  • Boil rotini in a pot, cook until tender. Meanwhile, brown the ground pork in a large skillet. Salt and pepper to taste. Add paprika and cayenne pepper.
  • Once browned, add the pasta, tomatoes, and beans. Stir until combined. Add garlic powder, basil, and parsley and heat through. I usually add a little more salt at the end, as well. That just depends on your taste.
