HAYSTACKS
This is a simple one dish meal that's been in my family for years - corn chips, vegetables, beans and cheese all piled up to make a delicious haystack! Kids love it!

Steps:
- In a medium saucepan, combine the kidney beans, salt, chili powder and pepper. Cook over medium heat until heated through.
- To assemble the haystacks put a hand full of corn chips on a plate, follow with a spoonful of heated bean mixture, lettuce, tomato, green pepper, onions, olives, carrot, and cheddar cheese. Top with salsa and sour cream.

HAYSTACKS
I have made these cookies for my family for about 30 years now. My son (who is now 36 years old) gets so excited when I make these; he always enjoys them with a tall glass of milk. I find that I have to be careful when melting the butterscotch because it seems to scorch easily, so take care - this is an essential ingredient! Also, these are best enjoyed in the winter because they seem to melt and not taste as great in the warmer weather.

- Melt the butterscotch chips in a double boiler over simmering water.
- In a medium bowl, combine the melted butterscotch and peanut butter. Add noodles and peanuts and mix well. Drop the batter by the heaped tablespoon onto waxed paper and refrigerate until cool and set, about 20 minutes.

Steps:
- In a saucepan bring sugar, cocoa, milk and butter or margarine to a boil. Remove from heat.
- Stir in oats, coconut, nuts and salt. Drop quickly from teaspoon on wax paper. Let cool.

- In a large skillet, cook beef over medium heat until no longer pink; drain. Add spaghetti sauce and taco seasoning; simmer, uncovered, for 10 minutes. , Meanwhile, for cheese sauce, melt butter in a large saucepan. Stir in flour, garlic powder and pepper. Gradually add milk. Bring to a boil. Cook and stir for 2 minutes or until thickened and bubbly. Add American cheese; cook and stir until melted. Remove from the heat. , On eight plates, layer the rice, lettuce, tomatoes, onion, beans, cheddar cheese and tortilla chips. Top with meat mixture, sour cream and cheese sauce.

HAYSTACKS (OR CHINESE SUNDAES)
This is a fun meal, just add rolls or bread and a green salad if desired. My kids love this! This recipe adjusts easily for large or small groups, just cook enough rice for about 1 cup cook rice per person. Yes, this can be considered "retro". I didn't post this as an "asian" or "chinese" dish. It definitely is not for sophisticated palates! It just is a fun way to get my kids to eat some veggies, and it is easy!

- In saucepan, cover chicken with water and boil until done.
- Remove chicken, cool and shred, reserve cooking liquid.
- Put soup in saucepan, stir and add enough cooking liquid to make thick gravy (do not add too much, it will thin as it heats). Add chicken and heat.
- Set out chopped ingredients in small bowls.
- Serve buffet style, first 1 cup rice, then add whatever chopped ingredients you desire. Top with chicken gravy mixture and noodles.

- Mix soup and milk together. Then add in shredded chicken. Heat and stir until well blended.
- Have 4 cups of warm cooked rice in a bowl. Everyone can scoop out their rice and then ladle the chicken soup mixture over the rice.
- Have all the other ingredients in bowls. Then add all other toppings to your haystack. This is a great way to introduce your kids to new foods and vegetables. I like bell peppers, tomatoes, green onions, olives, chow mein noodles, and coconut on mine.

AMISH HAYSTACK DINNER
Based on a prize winner from Newman's The Hole in the Wall Gang Cookbook. This is a big hit with large groups of teenagers. Since it's "build your own haystack" there's something for everyone. Serve with dinner rolls for the unadventurous who would rather have a sloppy joe and salad. I also serve with bottled Italian salad dressing for those who want a "wetter" haystack.

- Brown the ground beef with the taco seasoning in a skillet over medium-high heat.
- Add the spaghetti sauce and simmer until the meat is cooked through and the liquid evaporates.
- Don't crush the saltines or tortilla chips too finely.
- Place all ingredients in individual serving bowls.
- Each person can make their own "haystack". The traditional order for layering is lettuce, crushed crackers and chips, meat mixture, rice, each of the veggies, cheese, bacon, sunflower seeds, and salsa (plus Italian dressing if added).
