FRENCH ONION FRENCH DIP SAMMIES WITH ROASTED GARLIC AU JUS
I saw this recipe on the Rachael Ray show and it is delicious! It is a combination of French dip sammy and French onion dip. Be sure that the onions are well-carmelized, the sweetness is really worth the wait!

Steps:
- Preheat oven to 400ºF.
- Cut about a quarter of an inch off the top of the garlic head and place it onto a square of aluminum foil. Drizzle with about 1 tablespoon extra virgin olive oil and close the foil up around the garlic. Transfer to the oven and roast until golden brown and tender, about 40 minutes. Remove from the oven and let cool.
- While the garlic is roasting, place a large skillet over medium heat with 1 turn of the pan of olive oil, about 1 tablespoon, and the butter. Add the onions, bay leaf and thyme to the pan and cook gently until the onions are well caramelized, about 30 minutes. Season with salt and pepper, and reserve.
- When the garlic is cool enough to handle, place a medium pot over medium-high heat with the beef stock. Squeeze the roasted garlic cloves out onto a cutting board, mash it into a paste with your knife and whisk it into the warm beef stock.
- To assemble the sammies, dip the roast beef slices into the roasted garlic jus. Divide the meat between the four rolls and top each with some of the caramelized onions. Serve with additional jus on the side for dipping.

FRENCH DIP AU JUS
A delicious dip for your french dip sandwiches. Better Than Bouillon is a brand of soup base its more of a paste.It's found with the bouillon. Just look for a soup base that lists beef as the first ingredient. I do not generally use the granules because we do not care for the flavor as much but you can use them.I would start with 1 tbs. of granules because of the salt content. If you could not find the Better Than Bouillon or a soup base product you could also use a canned beef broth or stock.

- In a saucepan, melt the butter. Add the onion and cook over moderate heat, stirring, until starting to brown, 10 minutes. Add the sugar, garlic, thyme and bay leaves and cook over moderately low heat, stirring, until the onion is deep golden, about 20 minutes. Add the port and simmer until nearly absorbed, 2 minutes. Add the broth, vinegar and Worcestershire and simmer over moderate heat until reduced to 2 cups, about 30 minutes. Strain the jus into a saucepan and season with salt and pepper.
- Preheat the oven to 325°. Heat the oil in an ovenproof skillet. Season the meat with salt and pepper and sear until well browned all over. Add the butter, garlic and thyme and baste the meat for 1 minute. Transfer to the oven and roast for 30 minutes, basting every 5 minutes, until an instant-read thermometer inserted in the center of the meat registers 128°; transfer to a rack set over a baking sheet and let rest for 20 minutes. Add the broth to the skillet and scrape up any browned bits. Boil until reduced by half; strain into the jus and skim off any fat.
- In a food processor, blend the egg yolks, vinegar and a large pinch each of salt and pepper for 90 seconds. With the machine on, add the oil in a slow, steady stream. Transfer to a bowl, stir in the horseradish and season with salt and pepper.
- In a skillet, cook the shallot and garlic in 1 tablespoon of the butter, until softened. Add the spinach and season with salt. Cook, tossing, until just wilted; transfer to paper towels to drain.

- In a small bowl mix garlic, rosemary, thyme, salt and pepper. Rub the spice mixture onto all sides of the roast, then place in the slow cooker. Pour the broth into the side of the roast then top with onions.
- Cover and cook on low until the meat flakes apart easily with a fork, about 9 to 12 hours, depending on the size of your roast.
