3 cups half-and-half
1 cup heavy cream
8 egg yolks
9 ounces sugar
2 ounces coffee liqueur
2 tablespoons instant espresso powder
2 teaspoons vanilla extract
Liquid nitrogen

Steps:

  • Combine the half-and-half and heavy cream in a medium saucepan and bring to a simmer over medium heat, stirring occasionally. Remove from the heat and set aside. Whisk the egg yolks in a large mixing bowl until they lighten in color. Gradually whisk the sugar into the yolks until smooth.
  • Slowly ladle one-third of the hot dairy into the yolk mixture, whisking constantly. Return this mixture to the pot containing the rest of the dairy. Cook over low heat, stirring frequently, until the custard thickens slightly, enough to coat the back of a spoon and reaches 170 to 175 degrees F.
  • Wash the original mixing bowl. When the custard is ready, transfer to the bowl, whisk in the coffee liqueur, espresso powder and vanilla, and cool at room temperature for 30 minutes. Cover and refrigerate until the temperature drops below 40 degrees F, 3 to 4 hours.
  • Liquid nitrogen procedure: Pour the ice cream base into the bowl of a stand mixer fitted with the paddle attachment. Turn the speed to low. With the mixer running, slowly pour in the liquid nitrogen while counting to ten. Increase the speed to medium and mix for 1 minute. Serve immediately or store in freezer.
  • Ice cream maker procedure: Pour into a prepped ice cream maker and process according to the manufacturer's directions. Within 25 to 30 minutes the ice cream will attain a classic soft-serve consistency. Serve as is for soft serve or freeze for another 3 to 4 hours to allow the ice cream to harden.

1 package chocolate wafers, crushed
5 tablespoons unsalted butter, melted
1/2 gallon coffee ice cream, softened (on counter for 15 to 20 minutes)
6 tablespoons coffee-flavored liqueur, divided (recommended: Kahlua)
1 cup heavy whipping cream
1/2 cup powdered sugar
2 tablespoons hot fudge sauce

Steps:

  • Preheat oven to 350 degrees F.
  • Combine crushed cookie wafers with melted butter and press onto bottom and up sides of a 9-inch pie pan. Bake in oven for 10 minutes. Let cool.
  • Combine softened ice cream and 5 tablespoons coffee-flavored liqueur using a stand mixer or hand mixer until creamy. Fill pie crust with ice cream mixture, cover with plastic wrap and place in freezer for 3 to 4 hours.
  • Whip heavy cream with powdered sugar until soft peaks form. Top frozen pie with whipped cream. Refreeze for 1 hour.
  • Combine remaining tablespoon of coffee-flavored liqueur with hot fudge sauce, drizzle over top of pie and serve.

1/4 cup light corn syrup
2 tablespoons butter
2 tablespoons coffee liqueur
1 teaspoon vanilla extract
10 ounces dark chocolate, chopped
One 9-inch prepared chocolate cookie crust, such as Oreo Pie Crust
1 1/2 cups heavy cream
1/4 cup chocolate hazelnut spread, such as Nutella
1 tablespoon instant espresso or coffee
1 tablespoon sugar
2 teaspoons vanilla extract
Chocolate puffed rice cereal, for garnish

Steps:

  • For the filling: Heat the cream in a medium saucepot over medium-low heat. When hot, whisk in the corn syrup, butter, coffee liqueur, vanilla and chocolate. Mix until all the ingredients are fully incorporated into the cream and the mixture is smooth and silky. Remove from the heat and pour into the prepared chocolate cookie crust. Place in the refrigerator until completely cooled and set, about 1 hour.
  • For the topping: In a large chilled metal bowl, combine the cream, chocolate hazelnut spread, instant espresso, sugar and vanilla. Whip with a hand mixer until stiff peaks form.
  • To assemble: Place the coffee whipped cream topping on top of the filling. Smooth out with a spatula so that all the filling is completely covered with the topping. Place in the refrigerator until ready to serve. When ready to serve, top with chocolate puffed rice, slice and serve.

1 carton (8 ounces) frozen whipped topping, thawed
1/4 cup chopped pecans

Steps:

  • In a heavy saucepan, melt chocolate and butter over low heat. Stir in milk and sugar. Bring to a boil over medium heat, stirring constantly. Cook and stir for 3-4 minutes or until thickened. Remove from the heat; cool completely., Spoon ice cream into crust. Stir sauce; spread over ice cream. Top with whipped topping; sprinkle with pecans. Freeze until firm. Remove from the freezer 15 minutes before serving.

20 Oreo cookies
5 tablespoons unsalted butter, melted
2 ounces unsweetened chocolate
1/2 cup sugar
1 tablespoon unsalted butter
2/3 cup evaporated milk
2 pints coffee ice cream, softened
1 cup heavy cream or 1 cup whipping cream
2 tablespoons coffee liqueur

Steps:

  • Crush Oreos in a food processor to a fine crumb consistency. Add melted butter and mix well. Press mixture into bottom of a 10-inch pie pan; freeze.
  • Melt chocolate, sugar, butter and milk in the top of a double boiler. Cook over boiling water until sauce thickens slightly, stirring continuously; cool.
  • Spread softened ice cream carefully onto crust. Return to freezer. Whip cream with liqueur until stiff, but not dry. Pour cooled chocolate sauce evenly over ice cream, then spread whipped cream topping over chocolate sauce. Cover with plastic wrap and freeze 4 hours or overnight. Remove pie from freezer 20 minutes before serving.

21 cream-filled chocolate sandwich cookies (I use Oreos)
1/2 cup dry-roasted unsalted peanuts
1/4 cup butter, melted
3 pints chocolate ice cream, softened
8 (1 5/8 ounce) packages peanut butter cups, coarsely chopped (I use Reeses)
1 (8 ounce) jar fudge sauce
1/4 cup strong brewed coffee
2 tablespoons coffee liqueur (optional)

Steps:

  • Process cookies and peanuts in a food processor until finely crumbled, Add butter, and process until blended.
  • Press crumb mixture into a 9-inch deep-dish pieplate; freeze for 15 minutes.
  • Stir together the ice cream and chopped candy; spoon into the piecrust. Freeze for at least 6 hours. Remove from the freezer and let it stand 15 minutes before serving.
  • Heat fudge sauce in a small saucepan over low heat, stirring constantly. Remove from heat; stir in coffee and coffee liqueur. Drizzle over pie.
