ALMOST-FAMOUS PECAN WAFFLES

- Preheat the oven to 350 degrees F. Spread the pecans on a baking sheet; bake until toasted, 5 to 7 minutes. Let cool, then chop. Reduce the oven temperature to 200 degrees F.
- Whisk the flour, sugar, salt, baking powder and baking soda in a large bowl. Whisk the egg, milk, buttermilk and vanilla in a separate bowl until combined. Stir the egg mixture, melted butter and shortening into the dry ingredients until just combined. (The batter will be lumpy.)
- Preheat a waffle iron and brush with melted butter. Ladle some batter into the iron (about 1/2 cup, depending on your waffle iron); sprinkle with 2 tablespoons toasted pecans. Cook until golden brown, then transfer the waffle to a baking sheet and keep warm in the oven. Repeat with the remaining batter. Top the waffles with butter and maple syrup.
PECAN CRUSTED CHICKEN

- Prepare chicken breasts into cutlets, cutting into thirds and gently pounding to an even thickness of 1/2 inch (easier and cleaner if done between two layers of plastic wrap).
- Blend egg whites, cornstarch, and lemon juice with a fork in a wide, shallow dish; set aside.
- Combine bread crumbs, parsley, salt, pepper, zest, pecans, and seasonings in another wide shallow dish.
- Crust chicken breasts by dipping both sides of prepared chicken into egg white mixture. Then applying crumbs to both sides, patting them on as much as possible. Transfer to a cookie rack to air-dry on both sides for 20-30 minutes. (This will set crust so it will stay on chicken and crisp up nicely).
- Sauté chicken in oil in a large, nonstick, ovenproof skillet over medium-high heat for about 3 minutes, or until golden brown and crisp on bottom. Turn carefully with a spatula and transfer the skillet to the oven to finish cooking. This should take about 8 more minutes. Don't overcook, you don't want it to dry out.

- Preheat the oven to 200 degrees F (95 degrees C). Preheat a waffle iron according to manufacturer's instructions.
- Whisk flour, brown sugar, baking powder, baking soda, and salt together in a mixing bowl.

- In a large mixing bowl beat together 2 eggs and 2 Tbsp sugar at high speed for 3 minutes until fluffy.
- Add remaining wet ingredients in this order: oil, milk, and vanilla
- Stir 4 tsp baking powder and 1/4 tsp salt into the 2 cups of flour then add dry ingredients to the bowl.
- Beat on low speed just until combined. Do not over mix - the batter should have small lumps.
- Preheat waffle iron (we set ours to 3). Grease waffle iron if needed (some non-stick waffle makers don't need to be sprayed or brushed with oil).
- Once the waffle iron is preheated, spray with cooking oil or brush the grates (if needed), then add enough batter to just barely fill the grooves. Leave some space for expansion. Cover and cook until the timer is done or to the desired golden-crispiness. Use plastic or silicone tongs to remove the waffle and serve warm.
