¼ cup white sugar

2 cups fresh raspberries
2 tablespoons confectioners' sugar, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk flour and 1/4 cup plus 2 tablespoons sugar together in a bowl. Whisk in eggs and butter. Add 1/4 cup plus 2 tablespoons milk and lemon juice; whisk until batter is very smooth, about 3 minutes.
  • Pour batter into a 9-inch oval or round baking dish. Scatter raspberries on top.
  • Bake in the preheated oven until puffy and golden, about 30 minutes. Let cool, about 15 minutes. Dust with confectioners' sugar.

1/4 cup (1/2 stick) unsalted butter, melted, plus more for dish
1 1/2 cup Lillet Blanc or white wine
1 1/4 cup sugar
1 vanilla bean, halved lengthwise, seeds scraped and reserved
2 pound firm, ripe peaches, (5 to 7), halved and pitted
6 ounce fresh raspberries
4 large eggs
1/4 teaspoon salt
6 tablespoon all-purpose flour
1 cup whole milk
1 teaspoon pure vanilla extract
1/2 teaspoon finely grated orange zest

Steps:

  • Butter a 12-inch round baking dish; set aside. Bring Lillet, 1 1/2 cups water, 3/4 cup sugar, and the vanilla bean and seeds to a boil in a large, wide saucepan over high heat, stirring until sugar has dissolved. Add peaches, cut side down, and cover with a round of parchment paper, placing it directly on top of peaches. Reduce heat to medium. Simmer until peaches are very tender, about 15 minutes. Remove from heat; let stand 30 minutes.
  • Preheat oven to 325 degrees. Using a slotted spoon, transfer peaches, cut side up, to prepared dish; reserve 1/4 cup poaching liquid (discard the vanilla bean). Arrange raspberries among peaches.
  • Whisk eggs, remaining 1/2 cup sugar, and the salt in a medium bowl. Gradually whisk in flour. Whisk in milk, melted butter, vanilla extract, orange zest, and reserved poaching liquid. Pour around fruit.
  • Bake until edges are puffed and golden, 40 to 45 minutes. Let cool on a wire rack 20 minutes before serving.

1 2/3 cups milk, room temperature

1/4 teaspoon ground cinnamon
1/4 teaspoon kosher salt
3/4 cup flour
Two 6-ounce containers raspberries
3/4 cup Greek yogurt
2 teaspoons agave syrup
1/4 cup powdered sugar, optional
1/2 cup toasted pistachios, chopped

Steps:

  • Preheat the oven to 400 degrees F. Grease a 3-quart Dutch oven with 1 tablespoon butter, then sprinkle with 1 tablespoon sugar. Warm gently over low heat while you make the batter.
  • To a blender, add the eggs, milk, 2/3 cup sugar, vanilla, cardamom, cinnamon, salt and flour. Blend on high until a smooth batter forms, about 30 seconds.
  • Sprinkle the raspberries over the bottom of the preheated Dutch oven. Pour the batter over the raspberries and sprinkle the 2 tablespoons sugar over the top. Transfer the pan to the preheated oven; bake until the clafoutis is puffed and just set, about 30 minutes. Let cool in the pan for 10 minutes (it will deflate slightly).
  • Meanwhile, whisk together the yogurt and agave syrup in a small bowl. Dust the clafoutis with powdered sugar if desired. Serve with yogurt and chopped pistachios on the side.

3 cups (350 grams) raspberries
1/2 cup plus 1 tablespoon granulated sugar (divided)
1 teaspoon dried lavender buds ((optional))
1/2 cup (120 millilitres) whole milk
1/2 cup (114 grams) crème fraiche, more for serving (optional)
4 large eggs
Pinch salt
1/3 cup (43 grams) all-purpose flour
Confectioners' sugar (for serving)

Steps:

  • Heat the oven to 375 degrees F. Butter a 9-inch ceramic baking dish, or a 2-quart gratin dish, or a 9-inch cake pan.
  • In a medium bowl, toss the raspberries with 1 tbsp sugar. Let them sit while you prepare the remaining ingredients
  • In a food processor or blender, combine the remaining ½ cup sugar with the lavender; process until the lavender is mostly ground, about 2 minutes. Then pour the milk, crème fraiche, eggs, and salt, and process to combine. Add the flour and pulse just to combine.
  • Arrange the sugared berries in the prepared baking dish, then pour the egg mixture over them. Bake until the cake is golden and the center springs back when lightly touched, about 35 minutes.
  • Transfer the baking dish to a wire rack and let the cake cook for at least 15 minutes before serving. Then dust it with confectioners' sugar, slice it, and serve it with a dollop of whipped crème fraiche if you like (I used Greek yogurt to serve along).

1/2 cup all purpose flour
1/8 tsp salt
1/2 cup granulated sugar
4 pcs eggs (room temperature and lightly beaten)
1 cup milk (room temperature)
1 cup heavy cream (room temperature)
1 1/2 tsp vanilla extract
2 tbsp unsalted butter (melted + more for greasing the baking dish)
1.5 lbs ripe but firm peaches (about 3 medium peaches, peeled and sliced into wedges)

Steps:

  • Preheat oven to 350F and grease a 2L-capacity baking dish (see notes) with butter. Set aside.
  • Sift ½ cup flour, ⅛ teaspoon salt and ½ cup sugar into a medium-sized bowl. Set aside.
  • In another larger bowl, whisk 4 eggs, 1 cup milk, 1 cup cream and 1 ½ teaspoons vanilla until smooth and well incorporated.
  • Make a well in the centre of your flour mixture and add in the egg mixture a little at a time (I did ¼ cup at a time), stirring by hand and mixing well after each addition. Continue until you've poured all the egg mixture in. Add the 2 tablespoons melted butter and give the mixture a final stir.
  • Arrange your peach wedges on your baking dish forming a single layer then pour your batter over the peaches.
  • Bake for 60-75 minutes until the clafoutis is set - golden brown on top (see notes), firm but still a little wobbly, and a knife inserted in the middle comes out clean.
