For the base
80g shelled hazelnuts (with skins still on - not blanched)
270g Maryland chocolate chip and hazelnut cookies (or ordinary chocolate chip cookies)
80g unsalted butter, melted
For the praline
100g blanched hazelnuts
80g caster sugar
For the ganache filling
200g good quality dark chocolate (70% cocoa solids), in small chunks
200ml double cream
50g caster sugar
3 tbsp Frangelico
Crème fraîche to serve

12cm x 35cm fluted tart tin (or a deep 22cm fluted tin), base lined with non-stick baking paper

Steps:

  • Heat the oven to 180°C/160°C fan/gas 4. To make the base, put the hazelnuts on a baking sheet and toast in the oven for 15 minutes or until golden, then set aside to cool. Put the biscuits and cooled nuts in a food processor with a pinch of salt and whizz to the size of breadcrumbs. With the motor running, slowly pour in the melted butter until combined. Using a metal spoon, press the mixture firmly into the prepared tin and up the sides, then chill.
  • Meanwhile, for the praline, put the 100g hazelnuts in a heavy-based saucepan over a medium-high heat and toast until golden. Add the caster sugar and leave it to melt (don't stir the sugar or it will crystallise).
  • Line a baking sheet with non-stick baking paper. When the melted sugar is the colour of golden syrup, swirl the pan until all the nuts are coated, then tip onto the lined baking sheet and leave to cool completely. Chop into roughly 1cm pieces or roughly whizz in a food processor, then set aside.
  • For the ganache filling, put the chocolate, double cream and sugar in a large heatproof bowl set over a pan of barely simmering water (don't let the water touch the base of the bowl). Stir the mixture every now and then until the chocolate has melted and the sugar has dissolved. Remove from the heat and mix in the Frangelico. Whisk in a splash of cold water if the mixture looks greasy or splits - it will come back together.
  • To assemble the tart, scatter a third of the praline over the chilled base, then pour over the ganache filling. Gently tap the tart on the work surface to release any bubbles and tip the tart case to fill to the edges, if necessary. Chill for 1-2 hours until set.
  • Scatter over the remaining praline and serve with a dollop of crème fraîche and a glass of Frangelico, if you like.

This gluten free Italian Chocolate Hazelnut Cake recipe is made from scratch. It's topped with frosting made with Frangelico and coffee!

1 scant cup gluten free flour blend (equals 120 grams and can be measured using a kitchen scale)
1/2 cup finely ground hazelnuts (unsalted)
2 tsp. baking powder
1/4 tsp. kosher salt
4 Tbsp. unsalted butter (room temperature)
1 cup sugar
2 eggs
1/2 cup chopped hazelnuts (unsalted)
2 oz. semisweet baking chocolate
1 1/2 Tbsp. unsalted butter
2 Tbsp. coffee (or espresso)
1 Tbsp. Frangelico

Steps:

  • Heat oven to 350 degrees Fahrenheit.
  • Generously grease an 8 inch round cake pan (can use a 9 inch round cake pan if that's what you have) with butter. Coat the pan with some gluten free flour blend to prevent sticking.
  • Place 1/2 cup of unsalted hazelnuts in a food processor and pulse until they are finely ground. Alternately, you can place the hazelnuts in a plastic Ziploc bag and pound with a rolling pin if you don't have a food processor.
  • In a mixing bowl, combine 1 scant cup gluten free flour blend (this equals 120 grams and can be measured with a kitchen scale), ½ cup finely chopped hazelnuts, 2 tsp. baking powder, and ¼ tsp. kosher salt. Mix all of these ingredients together.
  • In a separate bowl, cream 4 Tbsp. of room temperature unsalted butter and 1 cup of sugar using a hand mixer or the whisk attachment of a Kitchen Aid stand mixer until the mixture is light and fluffy.
  • Add 2 eggs to the butter and sugar mixture one at a time, mixing until the mixture is light and fluffy after each egg is added.
  • Fold the flour mixture into the egg mixture a little at a time. Add some of the flour, mix together, and repeat until it is completely combined. The batter is thick and dense.
  • Spread the batter evenly in pan and bake for 35 minutes or until toothpick comes out clear. Remove from oven and allow to cool completely.
  • Brew one cup of coffee or espresso and allow to cool.
  • Heat a small amount of water in a double boiler (the water should be hot, but not boiling). Place 2 oz. of semisweet baking chocolate in the boiler and allow to melt, stirring the chocolate with a spatula to prevent burning.
  • Add 1 ½ Tbsp. unsalted butter to the chocolate and stir until the butter has melted and incorporated into the chocolate. Pour the chocolate mixture into a bowl and allow to cool.
  • Once the chocolate has cooled, beat the mixture with a hand mixer or the whisk attachment of a Kitchen Aid stand mixer until smooth. This may take a few minutes.
  • Add 2 Tbsp. of cooled coffee and 1 Tbsp. Frangelico liqueur to the mixture. Continue to beat with a mixer until it is spreadable.
  • Remove cake from pan and place on a cake platter or large plate (you may need to run knife along sides of pan to remove). Spread the chocolate frosting evenly over the top of the cooled cake.
  • Add 1/2 cup roughly chopped unsalted hazelnuts on top of the cake.

8 ounces bittersweet chocolate chips (about 1 cup)
1 cup corn syrup
2 tablespoons butter, melted
1 teaspoon vanilla extract
1/4 teaspoon salt
1 store bought frozen pie crust, defrosted

Steps:

  • Preheat the oven to 325 degrees F.
  • In a large bowl, mix together the sugar and the flour. Add the eggs, hazelnuts, chocolate chips, corn syrup, butter, vanilla, and salt. Stir well. Pour the mixture into the pie crust. Bake for 1 hour.
  • Cool the tart for at least 30 minutes before serving.

CHOCOLATE & HAZELNUT PRALINE TART

140g butter
100g golden caster sugar
225g plain flour
50g ground almond
1 egg , beaten
85g blanched hazelnut
50g golden caster sugar
200g dark chocolate (70% cocoa)
100g butter
splash Frangelico liqueur or brandy
1 egg
3 egg yolks

Steps:

  • Make the pastry. Cream together the butter and sugar, then add flour and almonds. Bring everything together with the egg. If the pastry is very soft, chill for 20 mins. If not, roll out to fit a deepish 23cm fluted flan tin; if the pastry breaks, press scraps of pastry into the gaps, leaving a slight overhang. Chill for 20 mins.
  • Heat oven to 200C/fan 180C/gas 6. Line the case with baking parchment and baking beans, then bake for 10 mins. Remove beans and cook for another 10 mins until golden.
  • Meanwhile, toast the nuts in a dry pan until starting to brown. Scatter over 4 tbsp of sugar, cook until it caramelises, then tip nuts onto a baking tray lined with parchment. Leave to cool, then roughly chop. Over a pan of barely simmering water, melt the chocolate, butter and alcohol together, then set aside to cool slightly. Over the same pan, beat the egg, yolks and remaining sugar until pale and fluffy. Take off the heat, then fold in the chocolate mix.
  • When case is cooked, remove from oven and turn the heat down to 160C/fan 140C/gas 3. Scatter most of the hazelnuts over the base, then tip in the chocolate mix, pressing it down slightly. Cook the tart for 15-20 mins until the chocolate has almost set. Leave to cool, then serve scattered with the remaining nuts. Can be made up to 1 day ahead.

12 ounces diced Calimyrna figs
8 ounces bittersweet (not unsweetened) or semisweet chocolate, coarsely chopped
1/3 cup minced crystallized ginger
1 1/4 cups (2 1/2 sticks) unsalted butter, room temperature
1 cup sugar
5 large eggs
2 cups (or more) Frangelico (hazelnut liqueur)
2 tablespoons grated orange peel
2 cups all purpose flour
1/2 cup cake flour
1/2 teaspoon salt
sauce
12 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
2/3 cup whipping cream
1/3 cup Frangelico
Whipped cream (optional)

Steps:

  • For cakes:
  • Preheat oven to 300°F. Butter and flour 12 miniature Bundt molds or 12 oversize muffin cups (each about 1-cup capacity). Toss nuts, figs, chocolate and ginger in medium bowl to blend.
  • Using electric mixer, beat butter and sugar in large bowl until smooth and fluffy. Beat in eggs, 1/4 cup Frangelico and orange peel (mixture may look curdled). Sift both flours and salt over batter; mix in. Stir in nut and fruit mixture.
  • Divide batter among molds. Bake cakes until tester inserted near center comes out clean, about 45 minutes (about 55 minutes if using muffin cups). Turn cakes out onto racks; brush with 1/4 cup liqueur. Cool cakes completely.
  • Cut out twelve 10-inch cheesecloth squares. Pour 1 1/2 cups liqueur into small bowl. Dip 1 square into liqueur; squeeze out some but not all liqueur. Wrap 1 cake in liqueur-soaked cheesecloth, then in foil. Repeat dipping and wrapping with remaining cakes, adding more liqueur if needed. Chill at least 1 week and up to 2 weeks. Bring cakes to room temperature before serving.
  • For sauce:
  • Stir chocolate, 2/3 cup cream and liqueur in heavy medium saucepan over low heat until chocolate melts and sauce is smooth.
  • Arrange 1 cake on each plate. Drizzle with sauce. Pipe or spoon whipped cream alongside, if desired, and serve.

Steps:

  • Preheat oven to 350°F. Butter an 8 1/2-inch springform pan (2 inches deep) or other cake pan with same dimensions and line bottom with a round of wax paper. Butter paper and dust pan with flour, knocking out excess flour.
  • In a food processor pulse praline until ground fine. Reserve 1/4 cup ground praline and transfer remaining praline to a bowl. In food processor pulse chocolate until finely ground and add to bowl of praline.
  • In a bowl with an electric mixer cream together butter, salt, and 1/4 cup sugar until light and fluffy. Beat in yolks, 1 at a time, beating well after each addition, and beat in vanilla. Stir in praline chocolate mixture (mixture will be very thick).
  • In another bowl with cleaned beaters beat whites until foamy and add a pinch salt and remaining 1/4 cup sugar in a steam, beating until meringue just holds stiff peaks. Fold one third meringue into yolk mixture to lighten and fold in remaining meringue gently but thoroughly. Pour batter into pan and smooth top.
  • Bake tort in middle of oven 45 to 55 minutes, or until it begins to pull away from side of pan. Cool torte in pan on a rack (torte will fall slightly and continue to set as it cooks) and remove from pan. Torte may be made 1 day ahead and chilled, covered. Bring torte to room temperature before serving.
  • In a bowl with an electric mixer beat cream until it just holds soft peaks. Stir in Frangelico and half of reserved praline.
  • Top torte with whipped cream and sprinkle with remaining reserves praline. Serve torte immediately.

1 cup all-purpose flour
1/3 cup firmly packed light brown sugar
1/2 cup hazelnuts, toasted and coarsely ground (Filbert nuts)
1/3 cup butter
4 (8 ounce) packages cream cheese (Philadelphia brand, full-fat)
1 cup sugar
3 tablespoons all-purpose flour
1/3 cup Frangelico
4 large eggs
1 egg yolk
1/3 cup chocolate chips (any chocolate will do)

Steps:

  • Place oven rack in the middle of the oven.
  • Toast the hazelnuts: Lay hazelnuts on a cookie sheet and toast at 350 degrees F for 10-15 minutes until lightly browned and skins are beginning to crack. Wrap in a towl and let steam for 1 minute. Rub hazelnuts in the towel to remove some of the skins. Grind coarsely and let cool. Keep the oven at 350.
  • Make the crust: Combine all crust ingredients except the butter in a food processor until well mixed. Cut the butter into cubes and incorporate into other ingredients for about 1 minute. Press firmly onto bottom of 9-inch springform pan (I use bottom of flat glass). Bake at 350 for 10 minutes.
  • Make the cheesecake: Increase oven temperature to 400 degrees and place a pan half-filled with water in the bottom rack. Melt the chocolate and set aside. (Tip: if melting in the microwave, heat in intervals of 30 seconds and stir. Should take no more than 1 minute on high). On low speed, beat cream cheese until smooth. Slowly mix in the sugar, flour and frangelico. Keep scraping down the sides of the bowl. One at a time, beat in the eggs on low speed.
  • Take 1/2 cup of the cheesecake batter and mix it with the chocolate.
  • Pour cheesecake batter into pan. The chocolate mixture can either be placed in a bag for piping or dropped by spoonfuls into the batter and swirled for a marbled effect.
  • Bake at 400 degrees for 10 minutes. Decrease oven temperature and bake at 225 degrees for about 1 hour. Towards the end of the baking time, check for doneness. Move the cheesecake pan slightly -- if the edges are set and the center is still wobbly the cheesecake is done. Turn the oven off and prop the door open with an oven mitt. Let cool inside the oven for at least an hour. Let cool on a counter until the pan is cool. Place in the refrigerator uncovered to chill and set. The cheesecake must be chilled for at least 24 hours.
