1/2 red onion
1/2 jalapeño, seeds removed
2 cloves garlic, minced
fresh cilantro leaves, to taste
1-2 tbsp canola or olive oil
1 tsp sugar (optional)
salt, to taste
1/2 lime, juiced

Steps:

  • In a food processor, pulse tomatoes, onion, jalapeño, and minced garlic until evenly chopped.
  • Add cilantro, olive oil, sugar, and salt. Pulse to break up cilantro leaves. Stir in lime juice. Taste and adjust seasoning.
  • Refrigerate and let marinate for 30 minutes or more before serving to allow flavours to meld.

My ex's mom had the best hand-chopped salsa fresca I have ever tasted back in college. Over the years, I have tweaked it to something my friends and family rave about. The trick for this salsa is marinating the onions and jalapenos in lime juice for about 5 minutes before adding the tomatoes and cilantro. There are two tricks to this recipe: 1. Hand-chop everything. It takes a while, but it is worth it. 2. The marinating is what makes this salsa special. Hope you enjoy.

Of course, you can adjust the heat and any other ingredient as you wish, but this is the basic recipe. Serve with your favorite tortilla chips. Hope you enjoy it as much as I do!
