FLAN DE QUESO (CREAM CHEESE FLAN)
This is my favorite recipe, learned from my mother. People love it and ask me for the recipe every time they try it, so here it is. I find it tastes better cold.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Fill a large oven-safe pot with water to 1 inch; bring to a boil.
- Place sweetened condensed milk, evaporated milk, eggs, cream cheese, milk, and vanilla extract in a blender; blend until smooth.
- Place sugar in an even layer in a saucepan over medium heat. Cook until edges start to brown, about 1 minute; drag sugar into the center with a spatula once the edges start to brown. Continue cooking, stirring from time to time, until caramel is an even golden brown, 4 to 5 minutes.
- Pour caramel into a 9-inch flan mold or baking pan; swirl so that caramel reaches 1 inch up the sides. Pour condensed milk mixture on top. Place mold in the pot of boiling water.
- Bake flan in the preheated oven until a damp table knife inserted into the center comes out clean, 45 minutes to 1 hour. Remove from oven and let stand for 5 minutes.
- Chill flan in the refrigerator until firm, 2 to 3 hours. Invert onto a serving plate so that caramel is on top.

- Calienta el horno a 350°F.
- Calienta 1 taza del azúcar en una olla pequeña y pesada a fuego medio y cocínala, revolviéndola constantemente con una cuchara de madera, de 6 a 8 min. o hasta que se derrita y tenga un color dorado oscuro. Vierte el caramelo inmediatamente en 1 molde redondo de 9 pulgs.; inclina y gira el molde para cubrir el fondo con caramelo de forma pareja.
- Licúa la leche y el queso en la licuadora hasta obtener una consistencia homogénea. Agrega los huevos, la vainilla y el azúcar restante; licúa hasta obtener una consistencia homogénea. (No lo mezcles demasiado). Vierte el batido sobre el caramelo en el molde; tápalo con papel aluminio. Colócalo en una fuente para hornear grande; agrega suficiente agua caliente a la fuente, de modo que el molde esté sumergido hasta la mitad.
- Hornea el flan de 50 min. a 1 hora o hasta que al insertar un cuchillo cerca del centro, éste salga limpio. Déjalo enfriar un poco. Saca cuidadosamente el molde del agua. Déjalo que se enfríe completamente sobre una rejilla de metal. Ponlo en la nevera varias horas o hasta que se enfríe. Vuelca el flan sobre un plato justo antes de servir.

- Preheat to oven 350°F degrees. Set a kettle of water to boil. Set an 8- or 9-inch cake (or pie) pan with 2-inch high sides inside of a larger baking pan (such as a 13x9).
- In a small sauce pan over medium-low heat, melt sugar until completely dissolved. Watch carefully so it does not burn. You may swirl the pan to stir. Remove from heat when it is a dark golden, amber color.
- Immediately pour the melted sugar into the bottom of the cake pan, working quickly before it hardens. Set aside.
- In a blender beat the cream cheese, sweetened condensed milk, evaporated milk, eggs and vanilla. Mix until well combined.
- Strain the custard through a fine-mesh sieve to ensure there are no lumps. Pour the strained custard into the cake pan over the sugar caramel. Next, add boiling water to the larger pan. It should come up the sides about an inch deep. The cake pan will be sitting in a water bath.
- Bake for 1 hour, or until set around the edges with a slight jiggle in the middle. Remove from oven and let the flan cool in the water bath, about an hour. Once cool, refrigerate at least 2 hours, but overnight is best.
- When ready to serve, run a knife around the edges to loosen. Set a plate over the flan and flip upside-down to invert. Slice into wedges and serve.

- caramelize sugar onstove top over low heat. once caramelized pour into 2 pie pans. let cool.
- mix all other ingredients in blender. once the caramel has cooled pour this mixture over caramelized sugar in pie pans.
- place pie pans in 1 inch of water and bake in oven at 325 degrees for 30 minutes to 1 hour until toothpick comes out clean.
- let cool then refrigerate.

- Calienta el horno a 350°F.
- Derrite 4 oz del chocolate. Entretanto, pon 1 taza de azúcar en una cacerola y, revolviendo constantemente, cocínala a fuego medio hasta obtener un color dorado oscuro. Viértela en un molde redondo de 9 pulgs.
- Licúa la leche y el queso crema hasta obtener una consistencia homogénea. Agrega los huevos, el azúcar restante y el chocolate derretido; mézclalos bien. Vierte esta preparación sobre el caramelo del molde. Coloca este molde dentro de un molde más grande. Añade suficiente agua al molde más grande para que el molde de 9 pulgs. quede sumergido hasta la mitad.
- Hornéalo 1 hora o hasta que al insertar un cuchillo en el centro, este salga limpio. Sácalo del molde que contiene el agua. Déjalo enfriar completamente. Refrigéralo 4 horas.
- Derrite mientras tanto el resto del chocolate. Con una cucharita rocía el chocolate sobre una hoja de papel encerado formando el diseño deseado; déjalo reposar hasta que esté firme.
- Afloja el flan de los lados del molde justo antes de servir; desmóldalo volcándolo sobre un plato. Retira con cuidado los diseños de chocolate del papel encerado; úsalos para decorar el flan.

- Licúa la leche, el queso crema, los huevos, la vainilla y el azúcar restante hasta obtener una mezcla homogénea. Viértela sobre el almíbar en el molde; tapa esto con papel aluminio. Agrega 1 cuartillo (4 tazas) de agua a una olla grande o una tipo "Dutch oven"; pon una vaporera para vegetales adentro. Coloca el flan sobre la vaporera; ponle la tapa a la olla.
- Cocina esto a fuego alto durante 5 min. (El agua debe hervir). Reduce el fuego a medio; cocina el flan, manteniendo un hervor suave, de 45 a 50 min. o hasta que al insertar un cuchillo al centro, éste salga limpio. Transfiere el flan a una rejilla de metal; déjalo enfriar completamente. Refrigéralo durante 4 horas.
- Desmolda el flan sobre un plato. Decóralo con las frambuesas y la menta.

- Preheat oven to 350°F.
- Cook sugar and water in a small saucepan over medium-high heat, gently swirling the pan (do not stir), until the mixture turns golden brown, 5 to 7 minutes. Immediately, pour the caramel carefully into a 9-inch round metal cake pan. If it stiffens before it completely covers the bottom of the pan, warm the pan in the oven, then swirl to cover the bottom.
- Beat cream cheese in a large bowl with a mixer at medium-high speed until soft. Beat in eggs, one at a time, until thoroughly combined, scraping down the sides. Add condensed milk, evaporated milk and vanilla; mix until combined. Carefully pour into the prepared pan. (You may hear some cracking; the pan will be very full).
- Place the cake pan in a larger pan and pour enough hot water around it to come 1 inch up the sides. Bake until golden and set at the edges but still wobbly at the center, about 1 hour. A knife inserted in the center should come out clean.
- Transfer the cake pan to a wire rack and let cool to room temperature, about 1 hour. Then cover and refrigerate for at least 4 hours or overnight. To serve, run a knife around the edge of the pan and invert the flan onto a plate.

FLAN DE QUESO CREMA
How can you go wrong with sugar, cream and eggs? You can't. This serves 12 but make two because you'll want to keep one for yourself. Prep time does not include refrigeration overnight.

- Melt the sugar in an 8 inch cake pan (preferably a coated one). To do this, put the pan directly over a medium heat burner stirring continually (You can also do this in a sauce pan and pout into the cake pan) After a few minutes the sugar will actually liquify and become a dark golden-brown or caramel color. Tip the pan to make the liquid cover the bottom evenly and begin to go up the sides of it. Place the pan in the freezer.
- Preheat the oven to 350 degrees and place inside it a roasting pan (big enough to hold the cake pan) half filled with water.
- Pour the condensed milk into a large bowl. Blend the water, cheese, eggs, vanilla and salt in a blender or food processor until very smooth. Whisk this into the bowl with the condensed milk. Pour it all through a wire sieve into the cake pan you have removed from the freezer.
- Carefully lower the cake pan into the pan of simmering water. Bake for 50 minute Check for doneness. Remove the flan from the oven and let it rest at room temp for an hour. Then place in fridge overnight and just before serving invert and unmold it. The lovely caramel you made will now be on top.
