One evening I didn't know how I wanted to prepare the fish I scheduled for the evening meal. So, I text-ed my husband to see what he would like, he said surprise me. I so happened to be watching Food-network's "Chopped", and it gave me a idea. Have my husband pick 3 ingredients and I would have to create something. He picked...

4 talapia, fillets, rinsed and patted dry
2 ripe bananas, sliced
2 c bread crumbs, whole wheat (or your favorite bread crumb)
4 Tbsp peanuts, chopped (or your favorite nut)
cooking olive oil spray
salt and pepper to taste
paprika to taste (optional)
red pepper, few pinches (optional)
2 c fresh tomato salsa (recipe follows)(optional)

Steps:

  • 1. Heat oven to 375 and season fish on both sides with salt, pepper, paprika and red pepper.
  • 2. in a 9x13 baking pan line with aluminum foil and spray with Olive oil. Spread 1/2 of bread crumbs on the bottom of the dish and arrange fish on top of bread crumbs.
  • 3. Slice banana to cover each fillet with a thin layer of banana. use remaining breadcrumbs to cover bananas. sprinkle nuts on top of that, spray a little more olive oil on top so the breadcrumbs brown slightly. Bake in oven until thickest part of fish is opaque, about 20 minutes.
  • 4. Serve with salsa on the top or the side. I usually serve a nice green salad or green beans on the side.
  • 5. To Make salsa: finely dice 1c tomato, 1/2c red onion, 1/4c green pepper, 1/2c mango, 1/2 to 1 finely diced jalapeno, 1tsp calentio, 1/4c lime juice, and salt and pepper to taste.

You could use any white fish such as halibut, cod or snapper for this recipe. Look for banana leaves in Latin food markets or Asian markets, you can buy them frozen.

4 6 oz grouper fillets (4 x 170 grams)
Coarse salt and freshly cracked black pepper, to taste
Banana leaves, 4 pieces cut into 10x10-inch squares
2 cloves garlic, minced
1 tsp toasted cumin seeds, ground (5 ml)
4 kaffir lime leaf or grated zest of 2 limes
Butchers twine, 4 pieces cut into 12-inch pieces
2 limes, sliced, grilled, to garnish
¼ cup extra virgin olive oil (60 ml)
1 clove garlic, finely sliced
1 tsp fresh coriander, chopped (5 ml)
½ jalapeno, sliced into rings, seeds intact
Juice of half a lime

Steps:

  • Prepare a bamboo steamer or a double boiler with a perforated insert. Fill bottom with water and bring to a boil. Reduce to low and simmer. Cover until ready to use.
  • Meanwhile, to prepare fish: Season fish with salt and freshly cracked pepper on both sides. Lay banana leaves out. Place a fillet in the middle of each. Sprinkle with the garlic, and cumin seeds. Top with a lime leaf or grated zest. Wrap banana leaf around fish like a parcel and tie with butcher's twine.
  • Steam fish until centre of fish is warm when a knife is inserted in the middle of fillet, about 8 to 10 minutes. Remove from steamer immediately and serve with Spicy Oil Drizzle.
  • Place extra virgin olive oil, garlic, coriander, japalpeno and lime juice in a small saucepan. Warm gently on low heat until fish is ready. Do not heat rapidly! Drizzle over fish.

1 (2 lb) white fish, split in half lengthwise
2 tablespoons tomato puree
olive oil
2 teaspoons sugar
salt and pepper
2 tablespoons water
dried herbs
2 bananas

Steps:

  • Split the fish, put in a greased ovenproof dish and brush over with a little oil, then sprinkle with seasonings and herbs.
  • Mix the tomato puree with 2 Tblsp. oil, then add the sugar and water.
  • Pour this around the fish and trickle a little down the center of the fish itself.
  • Split the peeled bananas lengthwise and put around the fish.
  • Bake in a slow oven (3008) for about 1/2 hour, basting occasionally.
  • Serve with plain boiled rice.

1/4 cup lemon juice
1/2 cup extra virgin olive oil
1 tablespoon fresh thyme leave, minced
salt, to taste
pepper, to taste
4 (8 ounce) red snapper or 4 (8 ounce) halibut fillets
16 lemon slices
8 sprigs fresh thyme
4 banana leaves, washed, soaked in water and cut into 10-by-12 inch rectangles
1 tablespoon extra virgin olive oil
1 garlic clove, minced
1 cup onion, sliced into thin strips
1 cup yellow pepper, sliced into thin strips
1 cup carrot, sliced into thin strips
1 cup tomatoes, sliced thinly

Steps:

  • Heat grill to medium.
  • In a small bowl, whisk the lemon juice with ½ cup olive; add thyme, salt and pepper.
  • Brush both sides of fillets generously with lemon mixture and place each in a banana leaf.
  • Place 4 lemon slices and a sprig of thyme on each fillet.
  • With the short side of the leaf facing you, fold bottom edge over fish; fold sides over fish, then fold package away from you to envelop the fish.
  • Secure each packet with 3 wet toothpicks or tie like a girtbox with a wet piece of string.
  • Cook the fish packets on grill, about 6 minutes per side ( the leaves will brown, which is OK).
  • While the fish grills, sauté garlic in 1 Tbs olive oil over medium-high heat about 1 minute.
  • Add the onions through tomatoes and sauté about 5 minutes until vegetables are tender; season with salt and pepper.
  • To serve, put a fish packet in the center of each plate, open the leaf and spoon vegetables around fillet.
