OLD FASHIONED ONION RINGS

Old Fashioned Onion Rings image

This recipe was sent via email from All-recipes with a video showing onion rings that not only fry up crispy but STAY that way. The reason he reported is in the secret ingredient, instant mashed potatoes in the batter and panko crumbs. As an update: Made these and while the taste is good and they certainly stayed crispy, for some reason I had trouble getting the coating to stick when cooking. I think maybe I didn't have the oil hot enough when I started, or maybe I needed a 2nd breading?? Not really sure, but if anyone has an idea please let me know.

OLD FASHIONED ONION RINGS

Old Fashioned Onion Rings image

Onion rings are a popular appetizer at many restaurants, and with this recipe, you can satisfy your craving at home. This is an actual recipe from a former employee of a popular drive-in restaurant. Sweet and tender on the inside, crispy and crunchy on the outside - just like the pros make!

Provided by JeanieMomof3

Categories     Onion Recipes

Time 30m

Yield 3

Number Of Ingredients 9

1 large Vidalia or other sweet onion
1 quart oil for frying, or as needed
1 ¼ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 cup milk, or as needed
1 large egg
¾ cup dry bread crumbs
⅛ teaspoon seasoned salt, or to taste

Steps:

  • Slice onion into 1/4-inch-thick rings.
  • Heat oil in a deep-fryer to 365 degrees F (185 degrees C). Place a wire rack over a sheet of aluminum foil.
  • Prepare breading station by setting out 3 wide, shallow dishes. Whisk flour, baking powder, and salt together in the first dish. Whisk milk and egg together in the second dish. Place bread crumbs in the third dish.
  • Dip each onion ring into the flour mixture, turning several times until fully coated with flour. Transfer to the egg mixture and use a fork to turn until coated. Lift onion with the fork and shake gently so excess liquid drips back into the dish. Place onion in the bread crumbs and turn several times to coat, scooping crumbs over the ring if necessary. Lift again with the fork, tap any excess bread crumbs back into the dish, and place on the wire rack while you prepare the remaining onion rings.
  • Deep-fry 3 to 4 onion rings at a time in the preheated oil until golden brown, 2 to 3 minutes. Drain on paper towels while you deep-fry the remaining rings.
  • Sprinkle with seasoning salt before serving.

ROJO ONION RINGS

Rojo Onion Rings image

There's a recipe posted here with the same name but the ingredients vary slightly. This is from Guy Fieri's cookbook, Food, Cookin' It, Livin' It, Lovin' It. I've rearranged his ingredient list and prep work in a way that makes more sense to me and a way I would prepare this dish in my own kitchen. Prep and Cooking times are estimated and *include* soaking and refrigeration time.

Provided by SloppyJoe

Categories     Vegetable

Time 1h10m

Yield 4 serving(s)

Number Of Ingredients 10

2 large sweet onions
1 quart canola oil
1 cup buttermilk
1/2 cup all-purpose flour
3/4 cup hot sauce (sriracha is recommended)
1 tablespoon granulated garlic
1 1/3 cups ketchup
2 teaspoons water
4 cups panko breadcrumbs
1 teaspoon fine sea salt

Steps:

  • Cut onions in to 3/8" thick rings and discard the inner most rings.
  • Have a baking sheet handy.
  • Pour buttermilk in a large bowl and toss in onion rings. Soak onion rings for at least 30 minutes.
  • Line up three more bowls and add ingredients in this order. Flour to first bowl. In second bowl, combine hot sauce, garlic, ketchup and water until blended. In third bowl add panko.
  • When onion rings are finished soaking in buttermilk, dip them into flour, then hot sauce mixture, then panko. Place rings on baking sheet and put in refrigerator for 10-20 minutes for batter to firm up.
  • Layer paper towels on a plate.
  • In a heavy skillet or deep fryer, heat the oil to 360 degrees F.
  • Working in batches, deep-fry onion rings for about 3 minutes or until starting to turn brown. Turn as needed. As they finish, place on paper towel lined plate and sprinkle with sea salt.
  • Serve immediately.

OLD FASHIONED ONION RINGS RECIPE - (4.6/5)

Old Fashioned Onion Rings Recipe - (4.6/5) image

Provided by á-10847

Number Of Ingredients 10

Serves 3
1 large onion, cut into 1/4-inch slices
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 egg
1 cup milk, or as needed
3/4 cup dry bread crumbs or Panko bread crumbs, pulsed in the food processor to make the crumbs super tiny)...not at all greasy with a fabulous crunch!
seasoned salt to taste
1 quart oil for frying, or as needed

Steps:

  • 1.Heat the oil in a deep-fryer to 365 degrees F (185 degrees C). 2.Separate the onion slices into rings, and set aside. In a small bowl, stir together the flour, baking powder and salt. 3.Dip the onion slices into the flour mixture until they are all coated; set aside. Whisk the egg and milk into the flour mixture using a fork. Dip the floured rings into the batter to coat, then place on a wire rack to drain until the batter stops dripping. The wire rack may be placed over a sheet of aluminum foil for easier clean up. Spread the bread crumbs out on a plate or shallow dish. Place rings one at a time into the crumbs, and scoop the crumbs up over the ring to coat. Give it a hard tap as you remove it from the crumbs. The coating should cling very well. Repeat with remaining rings. 4.Deep fry the rings a few at a time for 2 to 3 minutes, or until golden brown. Remove to paper towels to drain. Season with seasoning salt, and serve. Suggestions: FOR NO MESS - I put the flour mix into a big resealable bag, throw all my onion slices in and shake really well until they're all coated. Then take the onions out, add the milk/egg to the bag and stir well. Add the onions a handful at a time, seal bag and mush the bag until all slices are coated, take out with tongs and put on wire rack over foil or wax paper...then put my Panko breadcrumbs into a big tupperware bowl, add the onions a handful at a time (with tongs), put the lid on and shake shake shake. Put the onions from the bowl directly into the hot oil with clean tongs, woo-hoo no mess!!!
