GRILLED SHRIMP WITH PEACH COCKTAIL SAUCE



Grilled Shrimp with Peach Cocktail Sauce image

4 almost ripe peaches, peeled and diced
1/2 cup white wine
1 tablespoon honey
1 tablespoon prepared horseradish, drained
1 teaspoon kosher salt, divided
1 pound large shrimp, peeled and deveined
1 tablespoon olive oil
Lemon juice, for serving

Steps:

  • In a small sauce pan, combine the peaches and white wine. Bring to a simmer, cover and cook until the peaches are soft, about 10 minutes. Uncover and cook an additional 10 minutes to reduce slightly. Turn off the heat and stir in the honey, horseradish and 1/2 teaspoon salt. Using an immersion blender (or back of a fork) puree or mash the fruit slightly to create a sauce. Cool to room temperature or chill completely for later use (see Cook's Note).
  • Preheat a grill pan over medium-high heat.
  • Toss the shrimp with the olive oil and remaining 1/2 teaspoon salt. Place on the hot grill and grill until pink and opaque all the way through, about 3 minutes per side. Finish with a squeeze of lemon juice. Remove to a tray and serve alongside peach cocktail sauce.

OPTION 1: Peaches in Brown Sugar & Thyme
3 medium ripe peaches, pitted and sliced, diced or cut into wedges.
1/3 cup light brown sugar, packed
1/3 cup sweet white wine
3 tablespoons white balsamic vinegar
Pinch of salt
1 1/2 teaspoon fresh thyme leaves
OPTION 2: Peaches in Sherry Vinegar and Rosemary
3 medium ripe peaches, pitted and sliced, diced or cut into wedges
1/3 cup olive oil
2 tablespoons sherry vinegar
1/2 teaspoons rosemary or 1 1/2 teaspoons fresh rosemary
Pinch salt
Pinch sugar
2 1/2 tablespoons dark spiced rum (optional)

Steps:

  • For both option 1 & 2: Combine all ingredients in medium bowel and let marinate at room temperature for 20 minutes to 24 hours. Then refrigerate. Keeps well for 2-3 days.

I haven't tried this yet, but it sounds delicious! It was in our local paper and is from the New Jersey Peach Promotion Council. Cooking time does not include time to marinate, and varies depending on whether you use boneless chicken breasts.

4 chicken breasts
1 cup fresh peach, mashed
1/2 cup balsamic vinegar
1 tablespoon Dijon mustard
1 teaspoon honey
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1/2 teaspoon garlic, crushed
1 tablespoon fresh thyme
1/2 cup olive oil

Steps:

  • Combine vinegar, mustard, honey, salt, pepper, garlic, and thyme. Whisk until well blended, then add olive oil and mix.
  • Just before you are ready to marinate chicken, stir in peaches.
  • Pour over chicken breasts. Allow to marinate for at least 2 hours and grill.

  • In a medium bowl, whisk together peach preserves, olive oil, vinegar lemon juice, mustard, salt and pepper for the marinade. Place one cup of the marinade in a zip-top freezer bag. Reserve and refrigerate the remaining marinade for basting.
  • When ready to grill, Preheat your grill to medium. Remove pork chops and discard marinade in bag. Place pork chops on grill and grill until cooked about halfway through, about 10 minutes (will depend upon thickness of pork chops). Turn and place on ambient heat and cook until a thermometer reaches a minimum of 145 degrees F in the thickest part of the chop (but not touching the bone).
  • Baste with additional marinade the last 5 minutes of grilling. Allow to rest for 3 minutes before serving.
