CINNAMON BLUEBERRY CRUMBLE

- Place blueberries in a large bowl. Combine the sugar, cornstarch, flour, cinnamon, lemon zest and juice, nutmeg and salt; sprinkle over blueberries and toss to coat. Transfer to a greased 8-in. square baking dish., For topping, in a small bowl, combine the wafer crumbs, flour, brown sugar and cinnamon. Stir in butter until blended. Sprinkle over blueberry mixture., Bake at 350° for 40-50 minutes or until filling is bubbly and topping is golden brown. Serve warm. Garnish with whipped cream and lemon zest if desired.

- Remove rolls from pan.
- Spray pan with non-stick cooking spray and replace rolls.
- Spread blueberry pie filling evenly over and between rolls.
- Combine butter, flour, brown sugar and pecans and sprinkle over pie filling.
- Bake at 350°F 45-50 minutes.
- Drizzle with cream cheese frosting while still warm.

Steps:
- Heat oven to 375ºF.
- Mix pudding mix and 1/4 cup sugar. Place berries in large microwaveable bowl. Microwave on HIGH 1 min. Stir in pudding mixture and water; spoon into 8-inch square baking dish.
- Mix flour, remaining sugar and cinnamon. Cut in butter with pastry blender or 2 knives until crumbly. Stir in nuts; sprinkle over berries.
- Bake 25 to 30 min. or until berry mixture is bubbly and topping is golden brown. Serve warm topped with COOL WHIP.

CINNAMON BLUEBERRY CRUMBLE
I was flipping through my Cooking Club magazine, when I come across an advertisement (and coupon) for this recipe. The picture was fabulous, so I decided to try it. My work has a stove, so for an unscheduled coffee break, I whipped this up. Everyone loved it. When I went to grab the leftovers for my husband (sans topping, someone snacked through the day), I found that it was gone. . . Poor husband.

Steps:
- Combine 1/4 cup milk, sugar, salt, and 3 tablespoons butter in a saucepan; heat until butter melts.
- Cool to 105 degrees to 115 degrees. Dissolve yeast in warm water in a large mixing bowl; let stand 5 minutes.
- Stir in milk mixture, 1-1/2 cups flour, and egg; beat at medium speed of an electric mixer until smooth.
- Stir in remaining 3/4 cup flour. Turn dough out onto a lightly floured surface, and knead until smooth and elastic (about 8 minutes).
- Place in a well-greased bowl, turning to grease top.
- Cover and let rise in a warm place (85 degrees), free from drafts, 1 hour (dough will not quite double in bulk).
- Punch dough down; turn dough out onto a lightly floured surface.
- Roll dough into a 12- x 8-inch rectangle; spread with 2 tablespoons butter.
- Combine brown sugar and cinnamon; sprinkle mixture over rectangle.
- Sprinkle with blueberries.
- Roll dough jellyroll fashion, starting at long side.
- Pinch seam to seal (do not seal ends).
- Cut roll into 1-inch slices; place slices, cut side down, in greased 8-inch square pan.
- Brush tops with 1 tablespoon melted butter. Using a fork, gently lift center of rolls to form a peak.
- Cover and let rise in a warm place, free from drafts, about 40 minutes (rolls will not double in bulk).
- Bake at 350 degrees for 35 minutes.
- Combine powdered sugar and 2 tablespoons milk, stirring well.
- Drizzle over warm rolls.
