4 cups fresh blueberries
1/2 cup sugar
2 tablespoons cornstarch
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon grated lemon zest
1 teaspoon lemon juice
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
TOPPING:
2/3 cup crushed reduced-fat vanilla wafers (about 20 wafers)
1 tablespoon all-purpose flour
2 teaspoons packed brown sugar
3/4 teaspoon ground cinnamon
1 tablespoon butter, melted
Whipped cream and shredded lemon zest, optional

Steps:

  • Place blueberries in a large bowl. Combine the sugar, cornstarch, flour, cinnamon, lemon zest and juice, nutmeg and salt; sprinkle over blueberries and toss to coat. Transfer to a greased 8-in. square baking dish., For topping, in a small bowl, combine the wafer crumbs, flour, brown sugar and cinnamon. Stir in butter until blended. Sprinkle over blueberry mixture., Bake at 350° for 40-50 minutes or until filling is bubbly and topping is golden brown. Serve warm. Garnish with whipped cream and lemon zest if desired.

1/4 cup butter, softened

Steps:

  • Remove rolls from pan.
  • Spray pan with non-stick cooking spray and replace rolls.
  • Spread blueberry pie filling evenly over and between rolls.
  • Combine butter, flour, brown sugar and pecans and sprinkle over pie filling.

1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
1/2 cup packed brown sugar, divided
5 cups fresh blueberries
1/4 cup water
1/2 cup flour
1 tsp. ground cinnamon
1/3 cup cold butter
1/2 cup walnut pieces, chopped
1 cup COOL WHIP Whipped Topping, thawed

Steps:

  • Heat oven to 375ºF.
  • Mix pudding mix and 1/4 cup sugar. Place berries in large microwaveable bowl. Microwave on HIGH 1 min. Stir in pudding mixture and water; spoon into 8-inch square baking dish.
  • Mix flour, remaining sugar and cinnamon. Cut in butter with pastry blender or 2 knives until crumbly. Stir in nuts; sprinkle over berries.
  • Bake 25 to 30 min. or until berry mixture is bubbly and topping is golden brown. Serve warm topped with COOL WHIP.

I was flipping through my Cooking Club magazine, when I come across an advertisement (and coupon) for this recipe. The picture was fabulous, so I decided to try it. My work has a stove, so for an unscheduled coffee break, I whipped this up. Everyone loved it. When I went to grab the leftovers for my husband (sans topping, someone snacked through the day), I found that it was gone. . . Poor husband.

1/4 cup milk
1/4 cup sugar
1/2 teaspoon salt
3 tablespoons butter or 3 tablespoons margarine
1/4 ounce dry yeast
1/4 cup warm water (105-115 degrees)
2 1/4 cups all-purpose flour, divided
1 egg
2 tablespoons butter (softened) or 2 tablespoons margarine (softened)
1/4 cup brown sugar, firmly packed
1/2 teaspoon ground cinnamon
1/2 cup blueberries (fresh or frozen)
1 tablespoon butter or 1 tablespoon margarine, melted
1 cup powdered sugar, sifted
2 tablespoons milk

Steps:

  • Combine 1/4 cup milk, sugar, salt, and 3 tablespoons butter in a saucepan; heat until butter melts.
  • Cool to 105 degrees to 115 degrees. Dissolve yeast in warm water in a large mixing bowl; let stand 5 minutes.
  • Stir in milk mixture, 1-1/2 cups flour, and egg; beat at medium speed of an electric mixer until smooth.
  • Stir in remaining 3/4 cup flour. Turn dough out onto a lightly floured surface, and knead until smooth and elastic (about 8 minutes).
  • Place in a well-greased bowl, turning to grease top.
  • Cover and let rise in a warm place (85 degrees), free from drafts, 1 hour (dough will not quite double in bulk).
  • Punch dough down; turn dough out onto a lightly floured surface.
  • Roll dough into a 12- x 8-inch rectangle; spread with 2 tablespoons butter.
  • Combine brown sugar and cinnamon; sprinkle mixture over rectangle.
  • Sprinkle with blueberries.
  • Roll dough jellyroll fashion, starting at long side.
  • Pinch seam to seal (do not seal ends).
  • Cut roll into 1-inch slices; place slices, cut side down, in greased 8-inch square pan.
  • Brush tops with 1 tablespoon melted butter. Using a fork, gently lift center of rolls to form a peak.
  • Cover and let rise in a warm place, free from drafts, about 40 minutes (rolls will not double in bulk).
  • Bake at 350 degrees for 35 minutes.
  • Combine powdered sugar and 2 tablespoons milk, stirring well.
  • Drizzle over warm rolls.
