STICKY CINNAMON FIGS
A simple and stylish nutty fig pudding ready in just 10 minutes

Steps:
- Heat grill to medium high. Cut a deep cross in the top of each fig then ease the top apart like a flower. Sit the figs in a baking dish and drop a small piece of the butter into the centre of each fruit. Drizzle the honey over the figs, then sprinkle with the nuts and spice.
- Grill for 5 mins until figs are softened and the honey and butter make a sticky sauce in the bottom of the dish. Serve warm, with dollops of mascarpone or yogurt.

BAKED FIGS WITH CHOPPED PISTACHIOS IN MASCARPONE

- Preheat oven to 350 degrees F.
- For each fig, cut a cross over the stem end, just deep enough to gently squeeze the fig open. Place on a baking sheet and bake in the oven for 5 to 10 minutes. Meanwhile, combine the honey and mascarpone in a bowl. Coarsely chop the pistachio nuts, and then add them to the bowl. Remove figs from the oven. Place on a serving plate and top with mascarpone mixture. Garnish with cinnamon and grated dark chocolate.

- Wipe the figs with a clean kitchen towel and cut off the stems. Slice the figs in half and arrange them in a circle on a platter, overlapping them slightly. In the center, pile up the mascarpone.
- Pour the honey over the figs in a very thin stream (if necessary, heat the honey to thin it out). Serve immediately with thin sugar cookies.

Steps:
- Heat the oven to 180C (350F) (Gas 4)
- Cut the figs in half length-wise and place them skin side down on a baking tray
- Drizzle the honey over the top of the figs
- Roast in the oven for 10 minutes
- Spoon the yoghurt into bowls
- Remove the figs from the oven and place on top of the yoghurt
- Drizzle more honey over the top of the yoghurt and figs to taste
- Crumble a few pistachio nuts over the top of the desserts
- Serve immediately

- Line baking sheet with foil. Stir sugar and 1 tablespoon water in small skillet over medium-low heat until sugar dissolves. - Pre-heat the oven to 400ºF/200ºC
- Cut a cross in the top of each fig, ensuring that you don't go more than half way down the fig. Use your fingers to push the fig open like a flower (See note 2)
- Place the the figs in a baking dish and add around a teaspoon of butter to each fig.
- Drizzle over the honey ensuring some falls over and into each fig.
- Sprinkle over the cinnamon.
- Grate a little lemon zest over each fig.
- Sprinkle the pistachios around the figs.
- Roast for 7-10 minutes until the figs have softened and the butter has melted into the honey.
- Serve warm with your chosen creamy element.

- Arrange the figs cut-side up among four plates. Use the back of a teaspoon to gently press into the center of the flesh and create a small indentation.
- Add a dollop of mascarpone to the center of each fig half and set plates aside.

- In a food processor, pulse together the flour, salt, and sugar. Add the cold small cubes of butter over the dry ingredients and pulse until the mixture looks like coarse meal.
- In a small bowl, lightly beat the egg and 2 tablespoons water. Add the egg mixture to the processor in increments, pulsing as you go, until the dough sticks together. Turn the dough out onto a work surface or a piece of parchment paper. Lightly knead the dough to make sure everything is incorporated.Wrap the dough in plastic wrap and create a flattened disk. Refrigerate for a minimum of 30 minutes. Preheat the oven to 375°F (190°C).
- Take out the refrigerated dough and allow it to sit at room temperature for 15 minutes. Butter a 9-inch round tart pan. On a floured work surface, carefully roll the dough with a rolling pin in the shape of the tart pan until about 1/4 inch thick. Carefully transfer the crust to the buttered tart pan and gently press the dough against the bottom and sides of the pans, being careful not to stretch the dough at all. Trim any excess dough hanging over the edges and prick holes all over the surface of the dough with the tines of a fork, fit a piece of baking paper against the surface of the dough, and weight it with dried beans or baking weights. Bake for 20 minutes. Remove the baking weights or beans and baking paper and bake for another 10 minutes or until lightly browned. Let cool slightly.
- Meanwhile, put the mascarpone in a small bowl, along with the orange zest and the sugar. Mix until the cheese is smooth and all the ingredients are incorporated. Taste for sweetness and adjust accordingly. Put the cream in the pastry shell and smooth the top evenly. Place the fig slices on top of the cream and drizzle with honey, if the figs aren’t sweet enough for you.
