Steps:
- 1. Brown the beef, pork and chorizo in a nonstick skillet. Drain off the fat.
- 2. Heat oil in a heavy pot over low heat; cook onions, garlic, and bell peppers for 15 minutes or until tender. Stir in the next 9 ingredients; cook 2 to 3 minutes to mellow the flavors.
- 3. Add jalapeños, tomatoes, tomato sauce, beans, and the browned meats. Heat through. Add beer, then simmer 15 minutes, stirring once or twice. Season with salt. Serve with grated cheese, if desired.

- In a Dutch oven, cook beef over medium heat until no longer pink, 5-7 minutes; crumble beef. Drain and set aside. , In the same pot, heat oil; saute onions until tender. Add garlic; cook 1 minute longer. Stir in the green pepper, salt, chili powder, bouillon, cayenne, cinnamon, cumin and oregano. Cook for 2 minutes, stirring until combined. , Add tomatoes and browned beef. Stir in water. Bring to a boil. Reduce heat; cover and simmer for about 1 hour. Add beans and heat through. If desired top with sour cream and jalapeno.

FIESTA LIME CHICKEN
This is a copy cat recipe that I have adapted for our family's liking. You can also substitute ranch mixed with the salsa (instead of the mayo mixture) to top your chicken before you cover with cheese.

Steps:
- Mix first 8 ingredients in gallon size baggie.
- Add chicken breasts to baggie.
- Marinate for 4 hours or more.
- Combine remaining ingredients except for cheese. Refrigerate until ready to use.
- Grill chicken (or broil).
- Place on broiler pan then top with mayonaise mixture and 1/4 cup cheese per chicken breast.
- Broil on high until cheese is melted and slightly brown.
- Serve with corn chip strips.
- Weight Watchers-5 points/chicken breast with 1/4 cup cheese and mayo topping.

FIESTA CHILI BEEF AND RICE
This zesty dish creates its own fiesta with every spoonful. Serve with corn tortillas and salsa.

Steps:
- Add oil to a medium saucepan. Stir in rice, and cook over medium heat until rice begins to have a golden color, about 5 minutes. Add 1/2 cup onion and 1/2 cup green pepper; cook and stir for 1 minute. Stir in water and half of the chili sauce. Bring to boil. Mix in corn, lemon juice, and 1/2 teaspoon salt. Cover, and simmer over low heat for 20 minutes.
- Meanwhile, saute beef with remaining 1/2 cup onion and 1/2 cup green pepper until meat loses pink color and vegetables are tender.
- Add remaining chili sauce, tomato sauce, cumin, and 1/2 teaspoon salt. Simmer uncovered 15 minutes.
- Turn rice onto a platter, and fluff with a fork. Sprinkle with cheese, and top with beef mixture. Serve immediately.

- Combine marinade ingredients in a medium bowl: water, teriyaki, lime juice, garlic, liquid smoke, salt, ginger, tequila. Add chicken, cover and chill about 2 hours. Do not marinade chicken longer than 3 hours.
- Prepare the Mexi-Ranch sauce by combining the following ingredients in a small bowl: mayonnaise, sour cream, milk, tomato, vinegar, jalapeño, onion, parsley, Tabasco, salt, dill, paprika, cayenne, cumin, chili powder, garlic powder, pepper. Mix well until smooth, then cover and chill until needed.
- When you are ready to cook, preheat your oven's broiler and a grill or girll pan. Remove chicken from marinade (discard marinade) and grill chicken for 3 to 5 minutes per side, or until done.
- Arrange cooked chicken in a baking pan. Spread 2 tablespoons of Mexi-Ranch sauce over each piece of chicken, followed by 1 tablespoon of the shredded cheese blend. Broil the chicken for 2 to 3 minutes or just until cheese melts.
- Spread a bed of 1/4 cup of the crumbled baked tortilla chips on each of 4 plates. Put a piece of chicken on top of the chips on each plate. Garnish with salsa if desired.

FIESTA STEAK CHILI
This is a basic recipe for non-traditional chili using steak. My wife is allergic to chili powder, so I don't use any in this recipe, but you are welcome to add some if you like. This is a very tame, full-flavor, colorful chili recipe that even the kids will like. There are plenty of other variations that you can use with this basic recipe, please change at will. Things we have tried include adding three or four fresh jalapenos, or adding Tabasco® habanaro sauce, or cilantro, or fresh tomatoes, or using red, yellow, orange, and green peppers, or hamburger instead of a steak or roast. Serve with tortilla chips, cheese and sour cream.

- Heat a large Dutch oven on the stove over medium heat. Once hot, add the oil and swirl to coat the bottom of the pot. Add the onions and saute for 2 minutes, then add the jalapenos and saute for an additional 2 - 3 minutes (or until the onions are turning translucent). Add the salt and stir to combine. Add the garlic and saute for approximately 30 seconds (or until aromatic).
- Add the cumin, oregano, smoked paprika, cayenne pepper, and stir to combine and evenly coat the meat. Saute for 2 minutes to toast the spices.
- Add in the tomato paste, diced tomatoes with juices, water, roasted beef base bouillon, and kidney beans. Stir to combine and bring to a boil. Reduce the heat to a simmer.
