Steps:
- Add the chicken and place all the ingredients except the limes and the cream cheese in the crock pot.
- Cover and cook on high in the slow cooker for 3-4 hours or low for 6-8 hours.
- Shred the chicken.
- Squeeze the limes over the chicken mixture , add cream cheese and stir to combine.
- Continue to heat in the crock pot until the cream cheese is fully melted (usually 30-60 minutes).
- Serve over rice or with tortillas. Enjoy!

CROCK POT CREAMY MEXICAN CHICKEN (AKA FIESTA CHICKEN)
Creamy chicken dish that you can spice up to suit your taste. Basically, it's slow cooker chicken with cream cheese & any other ingredients you like. This recipe is our favorite combination and has a mexican flair. Plus, using the crock pot makes this dish simple & fills the whole house with a nice aroma. We like it best served over cooked egg noodles or rice. I gave this recipe to my cousin & she serves it by adding spoonfuls of it to pre-made taco shells. (Note: sometimes instead of onion & red bell pepper I just add 1-1 1/2 cups of frozen bell pepper/onion from the bag in the freezer secion)

- Add all ingredients to crock pot EXCEPT cream cheese & yes, you can add the chicken breasts frozen.
- Cook on high for 4-6 hours or low for 8 hours.
- Add the package of cream cheese (whole) to top of cooking chicken mixture for last 30 minute of cooking.
- Serve over cooked rice or egg noodles with a dollup of sour cream & sprinkles of shredded cheddar if desired.

A slightly spicy recipe that I created quite by mistake. I was making another recipe when I realized I had added too much tomato juice and didn't have enough beans to complete it. A few other changes and there you go.

- Put the ingredients into the crock pot (3 quart size or bigger) in the following order: All beans, corn, celery, onion, carrot, chicken, tomato juice, tomatoes, garlic, garlic, basil, oregano, sage, paprika, bouillon, and bay leaves.
- Cook on high for 4-5 hours or on low heat for 8-10. Note: My chicken was still partially frozen and it took 4.5 hours on high heat.
- Remove and discard bay leaves. Enjoy!

This is how I make tortilla or fiesta soup. It's economical and protein-rich without using a lot of chicken breasts. I poach the chicken breast in water and save the water to add to the soup. We usually serve with quesadillas or nachos.

- Heat oil over medium heat in a soup pot. Add onions and cook until translucent.
- Add garlic and cook an additional 2-3 minutes.
- Add chicken and taco seasoning and stir, letting heat open up the spices.
- Add the rest of the ingredients, except the cilantro and sour cream.
- Simmer for 20-30 minutes.
- Add a dollop of sour cream and a sprinkle of cilantro to each bowl before serving.

- Crumble chorizo into a Dutch oven. Add the carrots, onion and garlic. Cook over medium heat until chorizo is fully cooked. Drain; remove and set aside., In the same pan, saute the chicken, salt and pepper in oil until no longer pink. Add sweet potatoes, corn and red pepper; cook 5 minutes longer., Stir in the chorizo mixture, broth, beans, tomatoes, V8 juice and pepper sauce. Bring to a boil. - Pour tomato soup in bottom of crockpot.
- Place chicken pieces on top of soup.
- Sprinkle chicken pieces with taco seasoning.
- Pour salsa on top of chicken.
- Cover and cook for 8-10 hours.
- 30 minutes before serving, shred chicken and mix well.
- Serve with tossed salad, on floured tortilla if desired and top with sour cream and/or shredded cheese.
