Fettuccini Alfredo with Sausage image

This SAUSAGE ALFREDO recipe is a tasty mix of classic Fettuccine Alfredo and spicy Italian Sausage. A lot of fettuccine recipes feature chicken or seafood, but there just aren't enough Sausage Pasta Recipes out there. This Italian Sausage Pasta recipe is the perfect pasta dish for your next dinner!

1 pound dried fettuccine
½ pound hot Italian sausage
20-24 fresh sage leaves
3-4 tablespoons olive oil
2 cloves garlic (minced)
2 cups heavy cream
Coarse sea salt
Freshly grated black pepper
Freshly grated Parmigiana Reggiano

Steps:

  • Cook fettuccine per package directions al dente.
  • While the fettuccine cooks, heat a large skillet and add the oil. Heat the oil until it shimmers and fry the sage leaves (it only takes a few seconds), in batches, until all are fried. Leave the oil in the skillet and transfer the bay leaves to paper towels to dry.
  • Separate the sausage into bite-size chunks and sauté them in the oil just until cooked through (don't overcook or sear). Add the minced garlic and cook 15-30 seconds or until the garlic softens and blooms. Transfer the sausage to a plate and set aside.
  • Pour off the fat from the skillet while trying to preserve as much garlic as possible. Add the cream and bring it to a low boil while scraping the bottom of the pan. Reduce the heat and return the sausage to the skillet, and season with salt & pepper, to taste. Remove from the heat.
  • Drain the pasta and place it on a large serving platter or bowl. Pour the sauce over the pasta, toss gently and sprinkle on the fried sage leaves.
  • Garnish with grated Parmigiana.
  • Enjoy!

Sage is not just for stuffing, or so Moira Hodgson argued in a 1997 article that extolled the many virtues of the leafy herb. Frying sage leaves in olive oil or butter, as is done in Italy, tones down their strong earthy flavor, leaving behind just a hint. In this recipe, once the leaves are crisped and set aside, a pound of hot Italian sausage and a bit of garlic are browned in the fragrant oil. A cup of cream is added to the pan to deglaze. Finally, the cream, sausage and a generous grating of Parmesan are tossed with a pile of fettuccine and topped with a scattering of delicate sage leaves. It's an elegant, satisfying 30 minute meal.

Steps:

  • Bring four quarts of water to a boil for the fettuccine.
  • Fry the sage leaves in the olive oil in a skillet until they are crisp. Drain them on paper towels, leaving the oil in the skillet.
  • Chop the sausages in chunks and sauté them in the oil until the pieces are browned, adding the garlic toward the end so that it gets golden but not burned. Remove the sausage from the pan and set aside. Meanwhile, cook fettuccine until al dente.
  • Pour off the fat from the skillet (preserving the garlic) and add the cream. Bring it to a boil, scrape up cooking juices and return the sausage to heat through. Season with salt and pepper, to taste.
  • Drain the pasta and put it in a heated serving bowl. Pour the sauce on top. Toss and sprinkle with sage leaves. Serve with Parmesan passed separately at the table.

4 1/2 tablespoons butter
20 fresh sage leaves, stemmed
4 1/2 tablespoons frozen veal stock, thawed, or 2 tablespoons beef broth and 2 1/2 tablespoons low-salt chicken broth
5 tablespoons grated Parmesan cheese plus additional for serving

Steps:

  • Cook pasta in large pot of boiling salted water until tender, stirring occasionally. Drain, reserving 1/2 cup cooking liquid.
  • Meanwhile, melt butter in heavy large skillet over medium-low heat. Add sage leaves and cook until edges curl and butter is dark amber (do not burn), stirring and turning leaves occasionally, about 6 minutes. Transfer sage to paper towels. Add veal stock to brown butter.
  • Add pasta and 5 tablespoons grated Parmesan cheese to brown butter mixture in skillet; toss to coat, adding reserved cooking liquid by tablespoonfuls if dry. Season with salt and pepper. Divide among bowls. Garnish with fried sage leaves, passing cheese alongside.

500 g fettuccine pasta
500 g italian-style pork sausages
2 tablespoons olive oil
150 g button mushrooms, sliced
2 garlic cloves, crushed
100 g green olives, large, seeded, sliced
1 teaspoon lemon rind, grated
1 tablespoon lemon juice
2 tablespoons parsley, fresh, chopped
300 ml cream

Steps:

  • Bring a large saucepan of water to a boil. (If desired, add a little salt to the boiling water to season it.).
  • Add the pasta and cook till just tender. Drain well.
  • Cook sausages in a dry pan over medium heat, turning regularly, for at least 10 minutes, or until browned and cooked through. Drain on absorbent paper and cut sausages into 1 cm slices.
  • Heat oil in a saucepot and add the mushrooms and garlic. Cook, stirring constantly, for at least 2 minutes or until the mushrooms have softened.
  • Add the sliced sausage, olives, lemon rind, lemon juice, parsley and cream.
  • Allow it to simmer, stirring occasionally, for about 10 minutes or until reduced by one-third.
  • Add pasta and cook, stirring occasionally, for about 3 minutes or until the pasta is heated through.

1/2 teaspoon dry crushed red pepper
3/4 lb fettuccine
1/2 cup grated parmesan cheese

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add shallots and garlic and sauté until beginning to soften, about 3 minutes. 1/2 lb kale, tough stems and center ribs discarded and leaves coarsely chopped
1/2 lb dried egg fettuccine
2/3 cup reduced-sodium chicken broth
1 oz finely grated Pecorino Romano (1/2 cup) plus additional for serving

Steps:

  • Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then cook sausage, breaking up any lumps with a spoon, until browned, 5 to 7 minutes.
  • Meanwhile, blanch kale in a 6-quart pot of boiling salted water , uncovered, 5 minutes. Remove kale with a large sieve and drain. Return cooking water in pot to a boil, then cook pasta in boiling water, uncovered, until al dente. Reserve 1 cup pasta-cooking water, then drain pasta in a colander.
  • While pasta cooks, add kale to sausage in skillet and sauté, stirring frequently, until just tender, about 5 minutes. Add broth, stirring and scraping up any brown bits from bottom of skillet, then add pasta and 1/2 cup reserved cooking water to skillet, tossing until combined. Yes, I know there are other tomato sausage pasta recipes here, but this one is a bit different and by far my favourite! The semi sundried tomatoes and sage add a lot of flavour; any pasta can be used. This is based on a recipe from "Super Food Ideas" - we love it at my house, hope you do too!

1 tablespoon olive oil
4 -6 spicy sausage (such as chorizo)
2 -4 cloves garlic, crushed
1 (400 g) can crushed tomatoes
3/4 cup semi sun-dried tomato, roughly chopped
60 ml dry white wine
300 ml cream (can use lite)
6 spring onions, chopped
2 tablespoons chopped sage leaves or 2 teaspoons dried sage
400 g fettuccine or 400 g pasta, of choice

Steps:

  • Heat olive oil in frying pan, cook sausages for 8-10 minutes or until cooked through.
  • Remove from pan and chop roughly, cover to keep warm.
  • Return pan to medium heat and add garlic, crushed and sundried tomatoes, white wine and cream and bring to the boil.
  • Reduce heat to low and simmer, uncovered for 10 minutes or until sauce thickens slightly.
  • Meanwhile, cook pasta according to package directions, drain.
  • Stir cooked sausage, spring onions and sage through sauce, season to taste.
  • Divide pasta among serving bowls and spoon over sauce.

8 hot Italian sausage links
1/2 pound sliced fresh mushrooms
1 small sweet onion, chopped
2 garlic cloves, minced
1 can (14-1/2 ounces) diced tomatoes with mild green chiles, undrained
1/2 cup beef stock
1/2 cup dry white wine or additional stock
1 package (12 ounces) fettuccine or tagliatelle
Grated Parmesan cheese, optional

Steps:

  • In a large skillet, heat oil over medium heat; brown sausages on all sides. Transfer to a 3-qt. slow cooker, reserving drippings in pan., In same skillet, saute mushrooms and onion in drippings over medium heat until tender, 4-5 minutes. 2 garlic cloves, minced
1 lb mixed mushrooms, beech, button, cremini, thinly sliced

1 cup light cream, kept warm
3/4 cup parmesan cheese, grated

Steps:

  • Heat the butter in a large skillet, and cook the garlic until it is soft.
