1/2 cup seafood cocktail sauce
30 peeled and deveined cooked shrimp (31-40 per pound), tails removed
Optional: Minced fresh parsley and lemon wedges

Steps:

  • Beat the first 5 ingredients until blended. Place tart shells on a serving plate. Fill with cream cheese mixture; top with cocktail sauce and shrimp., Refrigerate until serving. If desired, sprinkle with parsley and serve with lemon wedges.

1 cup shredded part-skim mozzarella cheese
1/4 cup canned chopped green chilies
1/4 cup diced cooked shrimp
1 green onion, thinly sliced
18 whole small cooked shrimp

Steps:

  • With a rolling pin, flatten bread to 1/8-in. thickness. Using a 2-1/2-in. biscuit cutter, cut out a circle from each slice. (Save scraps for another use.) Spritz both sides of circles with butter-flavored spray. Press into ungreased miniature muffin cups. Bake at 400° for 8-10 minutes or until lightly browned., In a large bowl, combine the cheese, chilies, diced shrimp and onion; spoon into cups. Top with whole shrimp and paprika. Broil 5-6 in. from the heat for 2-4 minutes or until golden brown. Serve immediately.

4 oz. (125 g) Cream cheese, softened
1 cup (250 ml) All-purpose flour
Filling:
3/4 cup (175 ml) Cooked tiny shrimp (or 1 can 4 oz., 113 g, rinsed and drained)
1 Large egg
1 tbsp (15 ml) Chopped chives
1/4 tsp (1 ml) Onion powder
1/4 tsp (1 ml) Dill weed
1/4 tsp (1 ml) Salt
1/16 tsp (.5 ml) Pepper
1/2 cup (125 ml) Milk
1 cup (250 ml) Grated Swiss cheese

Steps:

  • Pastry: Mix margarine, cream cheese and flour in bowl until smooth. Divide into 24 equal balls. Press into un-greased mini-muffin or tart pans about 11/z inch (3.8 cm) wide at top. Press on bottom and up sides. Filling: Divide shrimp among pastry-lined cups. Put remaining 8 ingredients into blender. Process until smooth. Pour over shrimp. Bake in 350°F (175°C) oven for 20 to 25 minutes until set.

For pumpernickel crust
9 ounces dense pumpernickel (about eight 4-inch-square slices; preferably Wild's multigrain Danish)
5 tablespoons unsalted butter, melted and cooled
For shrimp filling
1 1/4 pounds medium shrimp (about 36)
3 tablespoons golden or red lumpfish caviar (from a 2-ounce jar)
2 cups sour cream
1/2 cup mayonnaise
1/2 cup heavy cream
2 teaspoons unflavored gelatin
3 tablespoons fresh lemon juice
1 tablespoon water
1 tablespoon finely chopped fresh chives
freshly ground white pepper to taste
Garnish: coarsely chopped fresh chives

Steps:

  • Make crust:
  • Preheat oven to 350° F. and lightly oil rim of a 12-inch tart pan with removable fluted rim.
  • Tear pumpernickel into pieces and in a food processor pulse until coarse crumbs. In a bowl stir together bread crumbs and butter until combined well and press onto bottom of tart pan. Bake crust in middle of oven 15 minutes, or until golden brown, and cool in pan on a rack.
  • Make filling:
  • Shell shrimp and if desired devein. In a saucepan of boiling salted water cook shrimp until just cooked through, about 1 minute, and drain in a colander. Rinse shrimp under cold water and pat dry. Coarsely chop shrimp.
  • If using red lumpfish caviar, in a fine sieve rinse and drain well. In a large bowl stir together shrimp, caviar, sour cream, mayonnaise, and heavy cream. In a small saucepan sprinkle gelatin over lemon juice and water and let stand 1 minute to soften. Heat gelatin mixture over low heat, stirring, until gelatin is dissolved. Cool mixture slightly and stir into shrimp mixture with chives, white pepper, and salt to taste.
  • Pour filling into crust, spreading evenly. Chill tart, loosely covered with plastic wrap, at least 6 hours, or until filling is set, and up to 1 day. Garnish tart with chives.

A number of years ago I won a Maytag stove by entering this recipe in a Splenda contest. Both my husband and my son are diabetics, and I try to adapt recipes that can fit into their diets. This dessert is tasty enough, and looks elegant enough to be served for any occasion...just vary the optional toppings (listed below) to suit the occasion (ie, mincemeat for Thanksgiving or Christmas, , or simply dust with confectioners sugar if that would work with your carb allowance.

1 (8 ounce) package light cream cheese, softened
1/2 cup Splenda granular
2 eggs
1/2 cup light sour cream
1 teaspoon vanilla
4 sheets phyllo pastry, thawed in the package, in the fridge
2 tablespoons soft margarine, melted (or butter, I probably use more)
6 tablespoons lingonberry sauce or 6 tablespoons of any selection of sliced fresh fruit

Steps:

  • For filling, beat cream cheese and Splenda until smooth.
  • Add eggs, sour cream, and vanilla, and beat well. I usually prepare the filling in the food processor. Set aside.
  • For crust, place 1 sheet of phyllo on a work surface (keep remainder covered with a damp tea towel to prevent drying out). Brush with melted margarine (or butter). Place a second sheet on top. Cut into 12 squares. Place 1 square in each greased muffin cup, leaving the corners of the square extending up into points. Repeat with remaining 2 sheets of phyllo, placing this next square on top of the phyllo lined muffin cups, but giving it a 1/4 turn, so the points fit between the existing ones (completed pastry should look like a tulip).
  • Divide cheese mixture between tart shells. If using optional filling drop 1/2 TBSP of any topping except fresh fruit, in center of each tart.
  • Bake at 375°F for 20 minutes, or until pastry is golden and filling is set.
  • Cool in muffin tin on a rack until only warm, then remove from tin to rack to finish cooling.
  • Store in the refrigerator.
  • Garnish with fresh fruit (and a sprinkle of powdered sugar) if using that option.

1 cup onion, diced
3/4 cup celery, diced
5 garlic cloves, minced
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
1 (14 ounce) can chickpeas, rinsed (reserving 1/4 cup)
3/4 cup walnuts
2 tablespoons fresh lemon juice
2 teaspoons tamari
1 1/4 cups frozen chopped spinach
3 1/2 tablespoons dried cranberries
1/4 cup fresh parsley, chopped
1 tablespoon fresh thyme, chopped
1 (9 inch) prepared vegan whole-wheat pie shells, thawed
1/2 tablespoon olive oil
1 teaspoon tamari
2 tablespoons walnuts, chopped (garnish)
1 tablespoon fresh parsley, chopped (garnish)

Steps:

  • Preheat oven to 400 degrees. Heat oil in a skillet over medium heat. Add onion, celery, garlic, salt, and pepper, and cook for 7 to 9 minutes until onions begin to soften and caramelize. Set aside.
  • In a food processor, add chickpeas (except reserved 1/4 cup), walnuts, lemon juice, and tamari, and pulse to lightly chop (do not puree). Remove half of chopped mixture from food processor and transfer to a large bowl.
  • Transfer sauted onions to the remaining mixture in food processor. Puree until smooth, scraping down sides of bowl as needed.
  • Transfer puree to bowl with lightly chopped chickpea and walnut mixture. Add spinach, cranberries, parsley, thyme, and 1/4 cup of reserved chickpeas. Stir to combine and transfer to prepared pie shell, spreading evenly.
  • Combine oil and tamari, and brush on top of pie and crust. Sprinkle with walnuts. Bake for 33 to 38 minutes until lightly browned. Garnish with parsley, cut in wedges, and serve with cranberry sauce.
