Banana oat chia muffins are the ultimate healthy vegan muffin! They're packed with fiber from whole grains and healthful fatty acids from chia seeds. They're also easy to make, freeze, and enjoy at home or on-the-go for a wholesome snack.

1 tablespoon (6 g) flax meal
2 teaspoons apple cider or white vinegar
2/3 cup (158 mL) almond, oat, or soy milk (or another non-dairy milk of choice)
2 cups (240 g) white whole wheat flour (substitute all-purpose, light spelt, or whole wheat pastry flour)
1 cup (100 g) rolled oats
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
3 tablespoons chia seeds
1 cup (250 g) mashed banana (3 large, very ripe bananas, mashed)
3/4 cup (144 g) light or dark brown sugar
1/3 cup (79 mL) vegetable oil (such as grapeseed, refined avocado, or safflower)

Steps:

  • Preheat oven to 350 degrees and lightly oil a 12-muffin baking pan. Whisk the ground flax with 3 tablespoons warm water and set aside. In a medium sized bowl, whisk together the milk and vinegar.
  • In a large mixing bowl, combine together the flour, oats, baking powder, salt, cinnamon, and chia seeds.
  • Add the mashed banana, sugar, and oil to the milk & vinegar mixture. Stir in the flax mixture. Add these wet ingredients to the dry ingredients. Mix with a spatula until the batter is evenly combined. Don't overmix: a few small lumps are OK!
  • Add 1/3 cup batter to each well in the muffin pan. Sprinkle the tops with extra rolled oats and bake for about 22-25 minutes, or until muffins are browning and a toothpick comes out mostly clean.

½ cup mild olive oil (You can use another mild vegetable oil if you prefer.)
2 large eggs, at room temperature if possible
1 teaspoon vanilla
1⅔ cups all purpose (plain) flour
1 generous tablespoon chia seeds
½ cup sugar (You can reduce the sugar to ⅓ cup (6 tablespoons) if you want/need to. )
1 teaspoon baking powder
½ teaspoon baking soda
3 very ripe bananas, peeled and mashed
¾ cup raisins or sultanas

Steps:

  • Preheat the oven to 350°F (180°C or 160° for a fan oven).
  • Grease and flour a 12 cup muffin pan or use paper liners.
  • Beat the oil and the eggs together in a medium bowl or jug.
  • Beat in the vanilla. Set aside.
  • In another, larger bowl, mix together the flour, chia seeds, sugar, baking powder and baking soda.
  • Add the oil and egg mixture to the flour mixture in the larger bowl and stir well until combined. The batter will be very thick at this stage.
  • Stir in the bananas and the raisins until thoroughly combined.
  • Divide the batter between the muffin cups. (I use an ice cream scoop for this.)
  • Bake for 15 to 20 minutes or until a skewer inserted in the muffins comes out clean.
  • Cool on a wire rack. Delicious served warm or at room temperature but don't eat them straight out of the oven as the raisins will be very hot!
  • Muffins will keep for 3 days at room temperature or can be frozen for up to 2 months. Thaw completely and reheat gently before serving.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a muffin tin with butter.
  • Combine flaxseed meal, sugar, chia seeds, baking powder, and cinnamon in a bowl. Add bananas, eggs, and apple; mix batter thoroughly. Stir in 6 tablespoons coconut flakes. Fill tin 3/4 full with batter. Sprinkle remaining 2 tablespoons coconut flakes on top.
  • Bake in the preheated oven until tops spring back when lightly pressed, about 30 minutes.

1 egg
1/3 cup low-fat buttermilk or 1/3 cup milk
1/2 cup granulated sugar

2 tablespoons chopped walnuts (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Lightly coat 12 muffin tin liners with cooking spray and place in muffin tin.
  • In large bowl, mash bananas with fork.
  • Whisk in egg, milk, granulated sugar, and brown sugar.
  • In separate bowl, combine flour, baking soda, and salt.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray muffin cups with cooking spray or line with paper liners.
  • Beat sugar, butter, flax seed, vanilla, and eggs together in a bowl with an electric mixer until smooth and creamy.
  • Sift flour, salt, and baking soda together in a separate bowl. Mix creamed sugar mixture, 1/2 cup at a time, into the flour mixture until fully incorporated and batter is stiff. Beat bananas into batter with an electric mixer on low. Fold chocolate chips and walnuts into batter; spoon into the prepared muffin cups, filling each cup 3/4 full.
  • Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, about 25 minutes. Cool in the tins for 10 minutes before removing to cool completely on a wire rack.

Steps:

  • Heat oven to 425°F (400°F for dark or nonstick pan). Place paper baking cup in each of 12 regular-size muffin cups, or spray muffin cups with cooking spray.
  • In medium bowl, stir all ingredients just until blended. Divide batter among muffin cups (about three-fourths full).
