FENNEL MASHED POTATOES

Found in an older issue of Chatelaine magazine; posted in response to a request for fennel recipes. I haven't tried this myself.

1 small fennel bulb
3/4 cup milk
2 lbs yukon gold potatoes (about 5 large)
1/2 cup sour cream (lowfat can be used, but is not recommended)
1/2 teaspoon salt

Steps:

  • Trim fronds from fennel and discard.
  • Slice fennel into small, thin strips and place is large, preferably wide, saucepan over medium-high heat.
  • Add milk and bring to a boil.
  • Reduce heat to medium-low, cover, and simmer until fennel is tender, stirring once or twice; this will take about 15 to 20 minutes.
  • Remove pan from heat, then puree fennel mixture in a blender or food processor until it's fairly smooth.
  • While fennel is cooking, peel potatoes and cut into quarters.
  • Place in a large saucepan, cover with water, and bring to a boil.
  • Reduce heat to medium-low, cover, and boil gently, stirring occasionally, until potatoes are tender; this will take about 20 to 25 minutes.
  • Drain potatoes well and return to saucepan.
  • Mash potatoes, then stir in hot fennel puree, sour cream, and salt.
  • Taste; more salt may be needed.
  • If mixture is not piping hot, heat in saucepan, over low, stirring often.
  • Serve immediately.

2 tablespoons (1/4 stick) butter
1 fennel bulb, trimmed, quartered, cored, thinly sliced crosswise
1/2 teaspoon fennel seeds, crushed
2 1/2 pounds russet potatoes or Yukon Gold potatoes, peeled, cut into 2-inch pieces
1 cup (or more) half and half

Steps:

  • Melt butter in heavy large skillet over medium heat. Add sliced fennel bulb and crushed fennel seeds and stir to coat. Sprinkle with salt and pepper. Reduce heat to low, cover, and cook until fennel is tender but not brown, stirring often, about 20 minutes. (Can be made 2 hours ahead. Let stand at room temperature.)
  • Place potatoes in large saucepan. Cover with cold water and bring to boil. Reduce heat to medium and boil until potatoes are tender, about 15 minutes. Drain. Return potatoes to pan; cook over medium heat until no liquid remains. Mash potatoes.
  • Add 1 cup half and half to fennel mixture and bring to simmer. Working in 2 batches, add fennel mixture to potatoes; stir to combine. Season with salt and pepper. (Can be made 2 hours ahead. Let stand at room temperature. Rewarm over medium heat, adding more half and half as needed if dry.)

  • Heat 1/2 cup olive oil with the grated zest of 1/2 orange, 1 tablespoon fennel seeds and 1/2 teaspoon pepper flakes. Drizzle over Classic Mash or Pepper-Swirl Mash.
  • Classic Mashed Potatoes Cover 2 pounds whole russet or Yukon gold potatoes with cold salted water; simmer 45 minutes. Drain, peel and mash with 1/2 to 1 stick butter. Add 1 cup hot milk, and salt and pepper; mash until smooth and fluffy.
  • Pepper-Swirl Mashed Potatoes Saute 2 chopped red bell peppers and 1 teaspoon thyme leaves in olive oil, covered, until tender. Puree; swirl into Classic Mash.

2 1/2 pounds boiling potatoes
1 1/2 pounds fennel bulbs including fronds (sometimes called anise; about 2 medium)
1 cup whole milk
2 teaspoons extra-virgin olive oil

Steps:

  • Peel and quarter potatoes. In a kettle cover potatoes with salted cold water by 2 inches and simmer until very tender, about 30 minutes.
  • While potatoes are simmering, trim fennel stalks flush with bulbs, reserving fronds and discarding stalks. Halve bulb and discard core. Cut bulbs into 1/4-inch-thick slices. Chop reserved fronds and in a large saucepan poach sliced fennel and three fourths fronds in milk at a bare simmer, covered, until very tender, about 30 minutes. Drain potatoes in a colander and transfer to a large bowl.
  • In a blender purée fennel mixture until smooth (use caution when blending hot liquids). Add fennel purée to potatoes and mash with a potato masher. Season potatoes with salt and pepper. Potatoes may be made 1 day ahead and chilled, covered. Reheat potatoes, covered, in a 350°F. oven about 30 minutes.
  • Serve potatoes drizzled with oil and sprinkled with remaining fennel fronds.

FENNEL-SCENTED MASHED POTATOES

4 medium-size fresh fennel bulbs (about 2 pounds), trimmed, cored, bulbs coarsely chopped, fronds chopped and reserved
2 pounds Yukon Gold potatoes, peeled, cut into 1-inch pieces
1/2 cup (or more) half and half
2 teaspoons fennel seeds, crushed in resealable plastic bag with meat mallet
1 1/2 teaspoons dried tarragon
2 tablespoons (1/4 stick) butter

Steps:

  • Bring large pot of salted water to boil. Add fennel bulbs; cook until slightly softened, about 5 minutes. Add potatoes and boil gently until fennel and potatoes are very tender, about 25 minutes.
  • Meanwhile, combine 1/2 cup half and half, fennel seeds, and tarragon in small saucepan; bring to simmer. Remove from heat; cover to keep warm.
  • Drain potato mixture; return to pot. Stir over medium heat until any excess liquid evaporates, about 2 minutes. Add hot half and half mixture and butter and mash until vegetables are almost smooth (small fennel bits may still remain). Season to taste with salt and pepper. (Can be made 8 hours ahead; cover and chill. Rewarm covered with plastic wrap in microwave, stirring occasionally and thinning with more half and half, if desired.)
  • Transfer mashed potato mixture to bowl. Sprinkle with reserved chopped fennel fronds and serve.

2 teaspoons unsalted butter

1 medium fennel bulb (sometimes called anise; 1 1/4 lb), stalks trimmed flush with bulb, bulb halved lengthwise and thinly sliced crosswise)
1/3 cup low-sodium fat-free chicken broth
2/3 cup 1% milk, heated
1/2 teaspoon black pepper

a potato ricer, or a food mill fitted with medium disk

Steps:

  • Wash leeks in a bowl of water, then lift into a sieve to drain.
  • Cook leeks with 1/4 teaspoon salt in 1 teaspoon butter in a 10-inch nonstick skillet over moderately low heat, stirring occasionally, until soft and beginning to brown, 6 to 8 minutes, then transfer to a bowl. Reserve skillet.
  • Peel and quarter potatoes, then cover with salted cold water by 1 inch in a 4-quart saucepan and simmer until tender, 20 to 25 minutes.
  • While potatoes are simmering, cook fennel with remaining 1/4 teaspoon salt in remaining teaspoon butter in skillet over moderate heat, stirring occasionally, until softened, about 5 minutes. Add broth and simmer, covered, until tender, 10 to 12 minutes.
  • Drain potatoes and force through ricer or food mill back into saucepan. Stir in milk, leeks, fennel, and pepper.
