LOW FAT BARBECUE CHICKEN PIZZA
My friend Laura shared this delicious recipe with me. This is easy to make, delicious and low fat! Enjoy!

Steps:
- Preheat oven to 425.
- Place pita on a baking sheet and spoon barbecue sauce evenly over the pita.
- Top with Chicken, onions, rosemary & cheese.
- Bake for 10 - 12 minutes or until the cheese is melted, the pizza is heated through and the pita crisp.
- Slice, serve & enjoy!
QUICK AND EASY BBQ PIZZA
This BBQ chicken pizza is quick and easy. I used Montgomery Inn BBQ sauce (my fav) and Pillsbury® ready-made pizza crust. My friends loved it!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
- Heat olive oil in a skillet over medium heat; cook and stir onion, red bell pepper, and mushrooms until tender, 5 to 10 minutes. Add diced tomatoes; cook and stir until heated through, 2 to 3 minutes. Combine vegetable mixture and chicken in a large bowl; add barbeque sauce and mix well.
- Spread pizza crust onto the prepared baking sheet. Spoon barbeque sauce mixture over crust and top with cheese blend.
- Bake in the preheated oven until cheese is bubbling and melted, 13 to 18 minutes.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Place 1 tablespoon butter in a glass or ceramic pie pan and heat briefly in the oven until butter is melted.
- Whisk eggs, cream, and Cheddar cheese in a large bowl. Pour into warmed pie pan.
- Bake in the preheated oven until eggs are set and golden, 15 to 20 minutes. Remove egg "crust" from the oven.
- Melt remaining 1/2 tablespoon butter in a skillet over medium heat. Add onion and green bell pepper; cook and stir until softened, about 5 minutes.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Cook sausage in the same skillet until browned, about 5 minutes. Drain on paper towels.
- Combine tomato puree, garlic powder, onion power, oregano, basil, salt, and black pepper in small bowl to make pizza sauce.
- Top egg crust with pizza sauce, mozzarella cheese, onion and green pepper mixture, bacon, and sausage.
- Bake the pizza in the preheated oven until cheese is melted, about 10 minutes.

MY PIZZA DOUGH (FAT FREE)
I sometimes use this pizza dough as a substitute for my grandmother's recipe (which contains leaf lard). This recipe works, but I prefer Nana's, LOL ;) NOTE: The 2 hour "cooking time" is the rising time for the dough.

Steps:
- Dissolve yeast in 1/4 cup water, let stand for about 5 minutes.
- Dissolve salt in 1 cup of warm water, place in a large bowl; add yeast and about 2 1/2 cups of sifted flour to the bowl - stir well to make a soft dough.
- On a board, place remaining flour, make a well in center and add the dough to the well.
- Knead the remaining flour into the soft ball of dough, turning the dough 1/4 turn as you knead and add flour, until dough is smooth and elastic and does not stick to hands or unfloured board.
- Cover dough and let rise in a warm place for about 45 minutes.
- Divide dough into 2 equal pieces, knead each piece for a few minutes, shape each into a ball, cover with a cloth and let rise for about 1 hour 15 minutes or until doubled.
- Place the dough on a floured board and pound it lightly to deflate it.
- Work and stretch each piece of dough until large enough to cover a round 12-inch pie plate (flouring both sides of dough to keep it from sticking to the board, hands or pie plate/pizza pan).
- Add sliced tomatoes and toppings as desired, bake in preheated 400° oven for 20-30 minutes, remove from oven, let cool for 5 - 10 minutes before slicing, serve hot.
