These Oatmeal Waffles are such a delicious breakfast. Light, fluffy, and full of flavor. Also, these healthy waffles are packed with oats and made without unhealthy processed sugar. Super simple and taste amazing.

Number Of Ingredients 8

1 3/4 cup rolled oats
1 cup oat milk
1 medium egg
1/4 cup coconut oil (melted and cooled)
1/4 cup maple syrup (or honey)
1 teaspoon vanilla extract
1 teaspoon baking powder
Pinch of salt

Steps:

  • Start with preparing and measuring all the ingredients. I like to use measuring cups.
  • Take the blender and add all ingredients. Note: add wet ingredients first for easier blending.
  • Mix everything at high speed until you get a smooth texture.
  • Taste the batter and add additional sweetener if you think the mixture is not sweet enough.
  • Let the batter rest for a few minutes.
  • Turn on the waffle maker and let it heat until it's hot (the green light must be on).
  • Coat waffle plates with cooking spray or melted coconut oil using the brush.
  • Pour the batter onto the hot waffle plates, close the lid and allow the waffles to cook. Depending on your waffle maker it will take between 8-10 minutes per batch.
  • Once baked, remove waffles from the waffle maker and place them on a cooling rack. Fresh baked waffles will be soft when you take them out of the waffle maker but they will harden as they cool on the rack.
  • Repeating the process with the rest of the batter. Make sure to grease the waffle plates before adding the batter to prevent sticking.
  • Transfer cooled waffles to a plate.
  • Add toppings (optional): I used banana, blueberries, and maple syrup. Be creative here and add toppings you like.
  • Serve and enjoy!

10 to 12 bushels apples (for standard 40 gallon kettle), peeled and quartered
Apple cider, to cover the apples in the kettle
3 pounds sugar, or to taste
Cinnamon, either powdered or oil, several small bottles, to taste
Clove, either powdered or oil, several small bottles, to taste

Steps:

  • Cook the apples in the cider, stirring continuously for nearly 8 hours. In the last hour or so, add the sugar. Stir in the flavoring. Once butter is thick enough to stick to an upside down saucer, the butter is done and ready to be canned.

4 pounds assorted apples, peeled and chopped
2 cups apple cider
1 cup packed light brown sugar
Kosher salt
1 tablespoon fresh lemon juice
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
Pinch of ground cloves

Steps:

  • Preheat the oven to 250 degrees F. Combine the apples, apple cider, brown sugar and 1/2 teaspoon salt in a large ovenproof pot or Dutch oven over medium heat. Bring to a simmer, partially cover and cook until the apples are soft, about 20 minutes.
  • Remove from the heat and stir in the lemon juice, cinnamon, vanilla and cloves. Puree the mixture in a blender in batches until smooth (or use an immersion blender).
  • Return the mixture to the pot and bake, uncovered, stirring every 30 minutes, until thickened and deep amber, 2 1/2 to 3 1/2 hours (the timing will depend on the kind of apples you use). Remove from the oven and let cool completely, then transfer to an airtight container and refrigerate up to 5 days.
  • Try it on: Pancakes, waffles, yogurt, oatmeal, grilled cheese, PB&J, biscuits, cornbread or pork chops

3 pounds apples, peeled, cored, and cut into 1/2-inch chunks
1 pound light brown sugar
2 teaspoons cinnamon
1 teaspoon allspice, preferably freshly ground

Steps:

  • Place the apples in a large, heavy-bottomed pot over low heat. Cook, uncovered, for 1 1/2 hours, stirring occasionally. Add the brown sugar and spices; continue cooking over low heat, stirring occasionally, until very thick, about 30 minutes more. To test for doneness, place a spoonful of the mixture on a white plate and let sit for 20 seconds. If a ring of liquid forms around the apples, there is still too much liquid in the mixture. Continue cooking and testing until no ring forms.

Steps:

Bake according to manufacturer's directions; do not open during baking. Use fork to remove baked waffle. Top with fresh fruit and yogurt.
