FAMOUS ITALIAN RESTAURANT DIPPING OIL
This is an incredible dipping oil for crusty Italian bread served by a famous national chain.

- 1. Combine all ingredients in a medium bowl except olive oil. Whisk in olive oil until it reaches the olive oil to spice ratio that you like. (Some like more, some less. I use about 1 cup.) Pour into small, shallow oil dipping bowls and add a few drops of balsamic vinegar to each. Serve with warm Italian bread.

- If serving immediately, place the spice mixture in a shallow plate. Drizzle the desired amount of extra virgin olive oil over, serve. Wait to combine extra virgin olive oil and dry spices until right before serving.

- Grab an entire bulb of garlic and slice a little less than 1/4 of the top off, just enough to expose the cloves. Drizzle with olive oil and seal into a pinched pouch of aluminum foil. Roast anywhere from 40-60 minutes, depending on your oven and patience. Once the house starts to smell like heaven, resist the urge to dive in to the oven and spread the entire thing on toast. Better yet, roast a second bulb so you can do exactly that!
- Alternatively, you can roast the garlic ahead of time and store in the fridge for up to four days, and simply whip this up whenever you're ready for some serious dippage. I typically roast a few bulbs and use the golden cloves in recipes throughout the week.
- Once the garlic is ready, the cloves should practically be bursting from the bulb. Remove anywhere from half the cloves to all the cloves in the entire head of garlic and blend together with the olive oil using a food processor or blender.

- Divide the olive oil into 3 parts in individual, small, and shallow dipping bowls. Add about 1-2 tablespoons of balsamic vinegar into each bowl. Adjust the amount of balsamic vinegar to your taste. 2 tablespoons of vinegar is right up my alley but feel free to adjust the amount to your taste preference. Begin with a tablespoon and add more if desired.
- Add the crushed or minced garlic (1 garlic per bowl), if using. If you’re not a fan of garlic, feel free to leave it out. I love garlic so I added it but it’s not required. Place a pinch or 2 of the herbs of your choice. For extra flavor, use freshly chopped herbs. Stir.
- Generously sprinkle with grated or shredded parmesan cheese on top. This for me is what makes this dip so yummy so don't omit unless you don't like it. Mop up all that yummy sauce with freshly warmed crusty bread!
