Here's how to make the very best falafel sandwich! The ultimate vegetarian sandwich, this recipe tastes just like restaurant style.

1 recipe Classic Falafel (or Baked Falafel)
6 Flatbreads or pita bread*
1 recipe Quick Cucumber Sauce (or Tzatziki), Cilantro Sauce, or Tahini Sauce
1/2 cup hummus (optional)
2 medium tomatoes, chopped or 1 cup cherry tomatoes, halved
3 cups chopped romaine lettuce or green cabbage (or sliced cucumbers)
1/2 small red onion, sliced
Chopped cilantro, flat leaf parsley, or dill, to garnish
Optional: Storebought harissa, roasted eggplant for an over-the-top sandwich

Steps:

  • Make the falafel. (Note: The dried chickpeas must be soaked overnight.) Use the refrigeration time for the falafel dough to do the steps below.
  • If using homemade bread, make the flatbread (or make it in advance: it stores well!). If using store bought bread, warm the bread before serving in a 300 degree oven for a few minutes until pliable.
  • Make the sauce: either Quick Cucumber Sauce, Cilantro Sauce, or Tahini Sauce.
  • Chop the tomatoes, lettuce, and red onion.
  • Slather the bottom of the pita with hummus or some of the sauce, then add the falafel, chopped vegetables, and chopped herbs. Liberally spoon over the sauce.

2 cloves garlic, peeled and roughly chopped
1/4 cup coarsely chopped red onion, plus 1 small red onion sliced 1/8 inch thick

1/4 cup coarsely chopped fresh cilantro
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1/4 teaspoon paprika
1/2 teaspoon salt
2 tablespoons freshly squeezed lemon juice
1 tablespoon tahini
1 large egg, lightly beaten
2 tablespoons all-purpose flour
1/4 cup hulled sesame seeds, toasted
1/2 cup vegetable oil
3 pitas, cut in half
1 small head lettuce (such as Bibb or Boston)
2 medium tomatoes, sliced
1 recipe Spicy Tahini Sauce

Steps:

  • Place half the chickpeas in the bowl of a food processor; pulse until chopped. Set aside in a bowl. Place remaining chickpeas, garlic, onion, parsley, cilantro, coriander, cumin, paprika, salt, lemon juice, and tahini in food processor; process until a coarse paste is formed, about 30 seconds. Add to bowl of chopped chickpeas; add egg, flour, and sesame seeds. Stir until combined. Shape into 12 two-inch patties.
  • Heat oil in a large skillet set over medium heat. Add patties; cook until golden brown, 3 to 4 minutes per side. Remove from oil; place on a paper-towel-lined tray.
  • Fill pitas with lettuce, tomato, onion, and falafel. Drizzle with tahini sauce; serve.

2 cans (15 oz. each) chickpeas (garbanzo beans), drained
1/2 cup old-fashioned or quick-cooking oats
1/4 cup KRAFT Real Mayo
1 small onion, coarsely chopped
2 cloves garlic
1 tsp. ground cumin
1/2 cup fresh cilantro, chopped, divided
1/2 cup sour cream
2 Tbsp. tahini
2 tsp. lemon juice
1 cup chopped English cucumbers
1 cup chopped seeded tomatoes
1/4 cup KRAFT Greek Vinaigrette Dressing
2 Tbsp. oil, divided
6 whole wheat pita breads (6 inch)

Steps:

  • Process chickpeas, oats, mayo, onions, garlic, cumin and half the cilantro in food processor until smooth. Shape into 18 (2-inch) patties, using about 2-1/2 Tbsp. chickpea mixture for each. Place in single layer on baking sheet. Refrigerate 15 min.
  • Meanwhile, mix sour cream, tahini and lemon juice until blended. Refrigerate until ready to use. Combine cucumbers, tomatoes, dressing and remaining cilantro.
  • Heat 1 Tbsp. oil in large skillet on medium heat. Add half the falafel patties; cook 3 min. on each side or until browned on both sides. Remove from heat; cover to keep warm. Repeat with remaining oil and patties.
  • Top each pita with 3 falafel patties, about 4-1/2 tsp. sour cream mixture and 1/3 cup cucumber mixture.

2 cups dried chickpeas (Do NOT use canned or cooked chickpeas)
1/2 tsp baking soda
1 cup fresh parsley leaves, stems removed
3/4 cup fresh cilantro leaves, stems removed
1/2 cup fresh dill, stems removed
1 small onion, quartered
7-8 garlic cloves, peeled
Salt to taste
1 tbsp ground black pepper
1 tbsp ground cumin
1 tbsp ground coriander
1 tsp cayenne pepper, optional
1 tsp baking powder
2 tbsp toasted sesame seeds
Oil for frying
Tahini Sauce
Pita pockets
English cucumbers, chopped or diced
Tomatoes, chopped or diced
Baby Arugula
Pickles

Steps:

  • (One day in advance) Place the dried chickpeas and baking soda in a large bowl filled with water to cover the chickpeas by at least 2 inches. Soak overnight for 18 hours (longer if the chickpeas are still too hard). When ready, drain the chickpeas completely and pat them dry.
  • Add the chickpeas, herbs, onions, garlic and spices to the large bowl of a food processor fitted with a blade. Run the food processor 40 seconds at a time until all is well combined forming a the falafel mixture.
  • Transfer the falafel mixture to a container and cover tightly. Refrigerate for at least 1 hour or (up to one whole night) until ready to cook.
  • Just before frying, add the baking powder and sesame seeds to the falafel mixture and stir with a spoon.
  • Scoop tablespoonfuls of the falafel mixture and form into patties (1/2 inch in thickness each). It helps to have wet hands as you form the patties.
  • Fill a medium saucepan 3 inches up with oil. Heat the oil on medium-high until it bubbles softly. Carefully drop the falafel patties in the oil, let them fry for about 3 to 5 minutes or so until crispy and medium brown on the outside. Avoid crowding the falafel in the saucepan, fry them in batches if necessary.
  • Place the fried falafel patties in a colander or plate lined with paper towels to drain.
  • Serve falafel hot next to other small plates; or assemble the falafel patties in pita bread with tahini or hummus, arugula, tomato and cucumbers. Enjoy!

1 (15 ounce) can no-salt-added chickpeas, rinsed
½ cup chopped fresh flat-leaf parsley
½ cup chopped fresh cilantro
½ cup grated red onion, plus 1 cup thinly sliced, divided
¼ cup panko breadcrumbs
1 tablespoon tahini
1 teaspoon grated lemon zest
2 tablespoons lemon juice, divided
1 teaspoon ground cumin
¼ teaspoon salt
1 large clove garlic, grated
1 cup thinly sliced English cucumber
1 ½ tablespoons extra-virgin olive oil
4 (10-inch) whole-wheat wraps
2 cups loosely packed arugula

Steps:

  • Preheat oven to 350 degrees F. Line a baking sheet with foil; coat with cooking spray.
  • Pulse chickpeas, parsley, cilantro, grated onion, panko, tahini, lemon zest, 1 tablespoon lemon juice, cumin, salt and garlic in a food processor until a coarse meal forms, 10 to 12 pulses, stopping to scrape down the sides as needed. Shape the mixture into 4 (1/2-inch-thick) patties (about 1/2 cup each). Arrange the patties on the prepared baking sheet; coat tops with cooking spray. Bake for 10 minutes. Flip the patties; coat tops with cooking spray. Continue baking until golden brown, 10 to 12 minutes.
  • Meanwhile, combine sliced onion, cucumber, oil and the remaining 1 tablespoon lemon juice in a medium bowl. Let stand at room temperature, stirring occasionally, for about 20 minutes.
  • Remove the patties from the oven; let cool for 5 minutes. Cut in half.
  • Meanwhile, place wraps directly on oven racks; bake until just warmed through, about 1 minute.
  • Add arugula to the cucumber mixture; toss to combine. Place the warmed wraps on a work surface; top evenly with the arugula mixture, falafel halves, tomato slices and tahini sauce. Working with 1 wrap at a time, fold 1 side of the wrap over the center and roll up burrito-style. Wrap the bottom half with foil to hold the wrap together.

2 tablespoons freshly chopped parsley leaves
1 small onion, roughly chopped
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1 tablespoon minced garlic
1 lemon, juiced
Pinch salt and freshly ground black pepper
Chick pea flour, if needed
3 tablespoons grapeseed oil, for searing
4 Mediterranean flatbreads, no pockets
Arugula, for garnish
Cherry tomatoes, halved, for garnish
Red onion, sliced thin, for garnish
Smokey Tahini Sauce, for garnish, recipe follows
1/2 cup tahini paste
2 tablespoons extra-virgin olive oil
1/4 cup water
2 cloves garlic, minced
1 lemon, juiced
1 tablespoon freshly chopped parsley leaves
2 teaspoons smoked paprika
1 teaspoon salt

Steps:

  • Heat a grill pan until hot.
  • Drain the chick peas. Place in food processor along with cilantro, parsley, onion, cumin, cayenne, garlic, lemon juice, and salt and pepper. Pulse until well blended. Consistency should be in the form of a paste. Place mixture in a bowl and form into 2-inch patties (see Cook's Note).
  • In a large skillet over medium-high heat, add grapeseed oil. Add patties and cook for 3 to 4 minutes on each side. Remove from pan and place on a paper towel lined platter to drain. Set aside and keep warm.
  • To a hot grill pan, add flatbread to mark and warm on each side for 1 minute. Remove. Add 2 to 3 patties to each warm flatbread. Top with some arugula, tomato, onion and Smoky Tahini Sauce
  • In a bowl, whisk all ingredients until a creamy consistency is reached.

  • The first step is to soak the dried chickpeas in water for 24 hours. They will double in size after doing so. Then, drain the chickpeas from the water thoroughly.
  • Add the chickpeas along with all the other ingredients under falafel mix into a food processor and blend for several minutes until paste-like. This may take a few minutes and may require using a rubber spatula to scrape the sides down. You may have to do this in 2 batches depending on the size of your processor.
