4 slices bacon, diced
1 large onion, chopped
1 1/2 tablespoons minced garlic
2 sprigs fresh thyme
1 lb dried navy beans, rinsed and picked over
1 cup coffee, brewed
1/2 cup emeril's kicked up bam b q barbecue sauce or 1/2 cup your favorite barbecue sauce
1/4 cup packed dark brown sugar, plus 1 tablespoon
1 1/2 tablespoons creole mustard or 1 1/2 tablespoons other whole-grain brown mustard
1 tablespoon molasses
1 teaspoon red hot sauce
1/4 teaspoon black pepper, freshly ground
8 cups water
2 teaspoons salt

Steps:

  • Preheat the oven to 300°F
  • In a heavy cast-iron Dutch oven, cook the bacon over medium-high heat until the fat has rendered and the bacon is crisp, 4 to 6 minutes. Add the onion and cook, stirring, until it is softened and lightly caramelized, 3 to 4 minutes. Add the garlic and thyme, and cook for 1 minute longer. Then add the beans, coffee, barbecue sauce, brown sugar, mustard, molasses, hot sauce, and pepper, and stir to combine well. Add the water and salt, raise the heat, and bring to a boil. Cover the pot, transfer it to the oven, and bake for 2 hours, undisturbed.
  • Remove the pot from the oven, and stir the beans. Re-cover the pot and continue to bake until the beans are tender, about 1 hour longer.
  • When the beans are tender, remove the cover from the pot and continue baking until the liquid has reduced to a thick, saucelike consistency and the beans are thick and flavorful, 1 to 1 1/4 hours. Remove the pot from the oven, and remove the thyme sprigs. Adjust the seasoning if necessary, and serve the beans either hot or warm.

1 bag dried navy beans, soaked overnight
One 6-ounce can tomato puree
1/2 cup brown sugar
1/4 cup molasses
1 tablespoon dry mustard
8 slices bacon, cut into 1-inch pieces
1 large onion, diced
1/4 cup cider vinegar
Kosher salt

Steps:

  • Drain the beans, cover with fresh water and bring to a boil. Simmer for about 1 hour.
  • Drain and rinse the beans, then transfer them to a slow cooker insert. Add the tomato puree, brown sugar, molasses, dry mustard, bacon, onion and 1 1/2 cups water and stir to combine. Cook on low until the sauce is thick and syrupy, 8 to 10 hours.
  • Before serving, stir in the cider vinegar and season to taste with salt.

2 racks baby back ribs
6 tablespoons Emeril's Rib Rub spice blend
1 1/2 teaspoons salt
1 teaspoon freshly ground black pepper
1 teaspoon celery salt
Emeril's Sweet Original Bam BQ Barbecue Sauce, or your favorite barbecue sauce

Steps:

  • Preheat the oven to 300 degrees F. Line a large baking sheet with a piece of aluminum foil that is large enough to cover the pan twice (you will be folding this over the ribs and sealing it).
  • Arrange the ribs, meat side up, in one layer on the prepared baking sheet. In a small bowl, combine the Rib Rub, salt, pepper, and celery salt, and stir to combine. Divide the seasoning evenly between the 2 slabs of ribs, coating them well on both sides. Fold the extra length of foil over the ribs, and seal it tightly on all sides. Place the baking sheet in the oven and bake, undisturbed, for 2 1/2 to 3 hours, or until the ribs are very tender.
  • Preheat a grill to medium-high (or leave the oven on).
  • Remove the baking sheet from the oven and peel back the foil so that the ribs are exposed. Using a basting brush or the back of a spoon, coat the meaty side of the rubs lightly with barbecue sauce. Place the slabs of ribs, meaty side up, on the grill and cook until the barbecue sauce is thickened and lightly browned, 5 to 10 minutes. (Alternatively, return the baking sheet to the oven and continue to bake the ribs, without the foil covering, until the barbecue sauce is thickened and lightly browned, 20 to 30 minutes.)
  • Plating / Assembly: Remove the ribs from the grill (or oven), and let them cool briefly. Then cut between the ribs and serve, with additional barbecue sauce on the side if desired.

1 (15 ounce) can pinto beans, drained
1 (15 ounce) can lima beans, drained
1 (16 ounce) can great Northern beans, drained
1 (12 ounce) bottle chili sauce
2 tablespoons brown sugar
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
2 tablespoons molasses
3 slices bacon, cut in half

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • In a medium baking dish, mix kidney beans, pinto beans, lima beans, great northern beans, chili sauce, brown sugar, Dijon mustard, Worcestershire sauce and molasses. Top with bacon.

3 cups dried navy beans
water, to cover
1 ½ cups ketchup
½ pound fully cooked ham
1 ½ cups water
½ cup brown sugar
¼ cup molasses
1 ½ tablespoons onion powder
1 tablespoon dry mustard
1 tablespoon salt
1 tablespoon Worcestershire sauce
¼ teaspoon ground black pepper

Steps:

  • Place beans in a large pot and cover with plenty of water. Cover pot with a lid and soak beans for 8 hours or overnight. Drain and fill pot with fresh water.
  • Cook beans over medium heat until tender, about 1 hour. Drain beans, reserving the water for later use.
  • Place beans, ketchup, ham, 1 1/2 cup water, brown sugar, molasses, onion powder, mustard, salt, Worcestershire sauce, black pepper, and 1 cup reserved bean water in a slow cooker. Add more bean water as needed if beans get too dry.
  • Cook on Low for 7 to 9 hours.

1 large onion, chopped
1 cup ketchup
1/2 cup packed brown sugar
1/4 cup honey
1/4 cup molasses
1 tablespoon Worcestershire sauce
1 teaspoon kosher salt
1 teaspoon ground mustard
2 medium red apples, cored and cut into 1/2-inch pieces (do not peel)

Steps:

  • In a skillet, cook bacon until crisp. Remove with a slotted spoon to paper towels.
  • Add sausage to drippings; fry for 5 minutes, stirring often. Drain and set aside.
  • In an 5-qt. slow cooker, combine the beans, tomatoes, red peppers, onion, ketchup, brown sugar, honey, molasses, Worcestershire sauce, salt and mustard. Stir in the bacon and sausage. Cover and cook on low for 4-6 hours, or on high 2-3 hours.
  • Stir in apples. Cover and cook on low 2 hours longer, or on high 1 hour longer.

1 package (16 ounces) dried great northern beans
2 smoked ham hocks (about 1/2 pound each)
2 cups water
1 medium onion, chopped
2 teaspoons garlic powder, divided
2 teaspoons onion powder, divided
1 cup barbecue sauce
3/4 cup packed brown sugar
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
2 teaspoons hot pepper sauce, optional

Steps:

  • Rinse and sort beans; soak according to package directions. Drain and rinse beans, discarding liquid., In a 4-qt. slow cooker, combine beans, ham hocks, water, onion, 1 teaspoon garlic powder and 1 teaspoon onion powder. Cook, covered, on low 8-10 hours until beans are tender., Remove ham hocks; cool slightly. Cut meat into small cubes, discarding bones; return meat to slow cooker.
