EASY GREEK-STYLE EGGPLANT RECIPE
All-star eggplant recipe, prepared Greek style! Eggplants cooked to velvety tender perfection with chickpeas and tomato. A perfectly satisfying meatless dinner or side dish. Low-Fat. Vegan. Gluten Free.

- Heat oven to 400 degrees F.
- Place eggplant cubes in a colander over a large bowl or directly over your sink, and sprinkle with salt. Set aside for 20 minutes or so to allow eggplant to "sweat out" any bitterness. Rinse with water and pat dry.
- In a large braiser, heat 1/4 cup extra virgin olive oil over medium-high until shimmering but not smoking. Add onions, peppers, and chopped carrot. Cook for 2-3 minutes, stirring regularly, then add garlic, bay leaf, spices, and a dash of salt. Cook another minute, stirring until fragrant.
- Now add eggplant, chopped tomato, chickpeas, and reserved chickpea liquid. Stir to combine.
- Bring to a rolling boil for 10 minutes or so. Stir often. Remove from stove top, cover and transfer to oven.
- Cook in oven for 45 minutes until eggplant is fully cooked through to very tender. (While eggplant is braising, be sure to check once or twice to see if more liquid is needed. If so, remove from oven briefly and stir in about 1/2 cup of water at a time.)
- When eggplant is ready, remove from oven and add a generous drizzle of Private Reserve EVOO, garnish with fresh herbs (parsley or mint). Serve hot or at room temperature with a side of Greek yogurt or even Tzatziki sauce and pita bread.

- In a large skillet, combine potatoes and broth: if necessary, season lightly with salt, to taste.
- Bring to a boil over medium-high heat, cover partially and reduce heat to medium.
- Cook until potatoes are almost tender and most of liquid has evaporated, about 6 minutes.
- Transfer to separate bowl and set aside.
- In same skillet, melt butter over medium heat.
- Add onion and cook, stirring often, until softened, about 5 minutes.
- Stir in oil, eggplant, and 2 tablespoons plus 2 teaspoons water: season lightly with salt to taste.
- Cover, reduce heat to medium-low and cook until eggplant is tender, stirring occasionally, about 5 minutes.
- Add garlic and flour and cook, stirring, 1 minute.
- Reduce heat to low, stir in milk and cook uncovered, stirring, 2 minutes.
- Stir in reserved potato mixture.
- Cover and cook, stirring occasionally, until hash is thick and saucy, 5-7 minutes.
- During last minute of cooking, sprinkle cheese over hash.
EGGPLANT PINTO HASH
I created this recipe to use an eggplant and zucchini that I had just bought, then decided to add some pinto beans I'd previously cooked. I am posting it here to keep track of the recipe for myself. It may need to be modified and I will update it if I do. This is a very low sodium recipe, unless you use canned pinto beans.

- Peel the eggplant and onion, then cut eggplant, zucchini and onion into 1/2 inch pieces.
- Heat oil in a very large large frying pan.
- Add vegetables and cook slightly. (Add water if it gets dry.).
- Add diced tomatoes, basil and oregano. Cover pan with lid and simmer until vegetables are tender.
- Add pinto beans and water or liquid from beans. Stir. Cover and cook until heated through. Serve immediately.

ASIAN STUFFED EGGPLANT WITH HAWAIIAN-STYLE PORK (OR TURKEY) HASH
This is a dish that combines two things that I really like... eggplant and pork hash. Pork Hash in Hawaii brings back memories of the hunabutta days (childhood) when the man in the manapua (steamed Chinese bun) man would come around and sell his wares, kind of like the ice-cream man in the states. But instead of getting ice-cream, one could get pork hash, half moon, manapua, fried noodles, candies, almond cookies and other stuff. Pork Hash is kind of like a meatball wrapped in a won ton wrapper. It is usually served with chinese mustard mixed with soy sauce. Coleman's dry mustard mixed with soy sauce is a close approximation, and is the recommended accompaniment to this dish. You could also use a chinese black bean sauce or a sweet and thick teriyaki sauce. Good eating!

- Combine pork or turkey, eggs, green onions water chestnuts garlic, ginger powder, pepper, sesame oil, oyster sauce, sugar and soy sauce in a large bowl. Mix well (I like to use my hands).
- Cut a wedge out of the eggplant. Stuff the pork mixture into the newly created pocket. (I always overstuff).
- If desired, put the wedge back on top of the eggplant.
- ***NOTE***There will be alot of stuffing left over. This can be made into "pork hash" burgers or made into pork hash. To make pork hash, place about 1 tablespoon of the mixture on to the middle of a wrapper. Wrap up the sides, leaving the top open and unsealed.
- Put stuffed eggplant and pork hash into a steamer, and steam for about 30 minutes.
- Serve with soy sauce mixed with dry powdered mustard, or sweet and thick teriyaki sauce or chinese black bean sauce.
MAUREEN ABOOD'S EGGPLANT WITH LAMB, TOMATO AND PINE NUTS
With its layers of golden eggplant, cinnamon-scented lamb, and sweet tomato sauce topped with melted cheese, this traditional Lebanese dish is made for celebratory meals and gatherings. Even better, it's just as good served warm or room temperature as it is hot from the oven. It also reheats well, meaning that you can bake it the day before, and reheat it before serving if you like. Pull it out of the refrigerator, let it come to room temperature for an hour, then reheat it covered for about 40 minutes at 350 degrees.

- Heat broiler and line a baking sheet with foil or parchment.
- Brush both sides of eggplant slices with 2 tablespoons olive oil and sprinkle with 1 teaspoon salt. Arrange slices on prepared baking sheet and broil in batches until they are deep mahogany brown, turning once halfway through, 5 to 7 minutes per side.
- Adjust the oven to 375 degrees with rack positioned in the center.
- In a large skillet, heat 1 tablespoon of the remaining olive oil over medium heat. Add onion and sauté until translucent, but not browned, stirring occasionally, about 5 minutes. Add garlic and cook until fragrant, about 1 minute. Add ground lamb or beef, stirring frequently and breaking up meat into very small pieces with the side of a metal spoon. Season with remaining teaspoon salt, cinnamon and pepper. Sauté until meat is just cooked through. Taste and add more salt or pepper, or both, as needed.
- In a medium skillet, melt butter over medium heat. Add pine nuts and reduce heat to medium-low. Stir nuts to coat them with butter and continue stirring constantly until nuts are golden brown, 2 to 4 minutes. Keep a close watch over the nuts; they can burn quickly once they begin to brown. Transfer nuts to a bowl while still warm and salt them lightly.
- Coat a 13-by-9-by-2-inch baking dish with remaining 1 tablespoon of olive oil. Spread 1/2 cup of tomato sauce in the bottom of the dish. Lay 1/3 of the eggplant slices in a single layer over the sauce, covering as much surface area of the bottom of the dish as possible. Spoon half the meat evenly over eggplant. Pour 1/3 of the remaining tomato sauce evenly over meat. Sprinkle with 1/3 of the pine nuts. Layer again with eggplant, meat, tomato sauce and pine nuts. Finish with a layer of eggplant and cover with more tomato sauce, sprinkling top with pine nuts.
- Pour 1 cup warm water around the perimeter of the baking dish. (Sauce will thicken as it bakes.) Cover pan with foil and bake for 90 minutes. Remove foil and top eggplant evenly with mozzarella. Bake for 15 minutes longer, uncovered, or until the cheese is bubbling and golden. Serve eggplant warm, over rice.

- Dice eggplant into small cubes. Place diced eggplant on a double layer of paper towels, sprinkle generously with salt, and set aside for 20 minutes. After 20 minutes the eggplant should be very wet (I call this eggplant sweat). Use another double layer of paper towels to press down on the eggplant, extracting as much liquid as possible. Repeat process. *I know this seems repetitive, but the drier the eggplant, the crispier it will get!
- Heat 1/4 cup of olive oil in a large, heavy bottomed skillet over medium-high flame. Add eggplant, stir to coat, and let cook, untouched, for 3 minutes. Carefully flip the eggplant and let it cook for another 3-4 minutes - untouched. Once golden brown and crispy, remove eggplant from the pan with a slotted spoon and transfer it to a clean plate close by.
- Add the remaining 1/4 of oil, and then add the tomatoes. Cook on medium-high for about 8 minutes, stirring occasionally, until the tomatoes are blistered and bursting. Return eggplant to pan, stir in hot sauce, and cook for another 2 minutes. Stir in chopped herbs. Remove pan from heat. Add salt and pepper as needed.
