Summer rolls are sometimes mis-called spring rolls. They are similar, but with one key difference. Spring rolls are often wrapped in a dough like paper and then deep fried for a crisp and crunchy exterior. Summer rolls, on the other hand, are wrapped in rice paper and served uncooked.

1/4 cup liquid aminos OR tamari OR soy sauce
1/4 cup apple cider vinegar
1/4 cup freshly squeezed lime juice
3 tablespoons honey
1 tablespoon toasted sesame oil
1 clove garlic, minced
2 tablespoons minced ginger
1 teaspoon red pepper flakes
1 scallion, thinly sliced
1 tablespoon arrowroot starch, whisked with 2 tablespoons cold water
14 oz. shitrataki noodles, drained and rinsed well OR 14 oz. cooked rice noodles
1 teaspoon sesame oil
8 rice paper wraps

Steps:

  • Add all the dipping sauce ingredients into a saucepan except the scallions and arrowroot starch. Bring to a simmer.
  • Remove from the heat and add in the scallion.
  • Pour out 1/2 cup of this for dipping. Add the arrowroot starch mixture to the remaining sauce and whisk to combine. Heat over medium heat until thickened.
  • Pour over the noodles, and add in the remaining teaspoon sesame oil. Toss to combine. Set aside.
  • Fill a shallow dish with hot water and place a damp kitchen towel on your work surface. Line up all your prepped veggies for assembly. Submerge one rice paper into the water.
  • Once softened, about a minute or so, remove and carefully spread out on the damp paper towel.
  • Top with cabbage.
  • Then noodles.
  • And the remaining ingredients.
  • Fold in the two short edges.
  • Fold over one long edge.
  • Roll like a burrito. Repeat with the remaining rolls.

3 tablespoons finely chopped onion
1 small garlic clove, minced
3/4 teaspoon dried hot red pepper flakes
1 teaspoon vegetable oil
3 tablespoons water
1 tablespoon creamy peanut butter
1 tablespoon hoisin sauce
1 teaspoon tomato paste
3/4 teaspoon sugar
For summer rolls
1 ounce bean thread noodles (cellophane noodles)
1 tablespoon seasoned rice vinegar
4 (8-inch) rice-paper rounds, plus additional in case some tear
2 red-leaf lettuce leaves, ribs cut out and discarded and leaves halved
1/4 cup fresh mint leaves
1/4 cup fresh basil leaves (preferably Thai)
1/2 cup thinly sliced Napa cabbage
1/4 cup fresh cilantro leaves
1/3 cup coarsely shredded carrot (1 medium)

Steps:

  • Make sauce:
  • Cook onion, garlic, and red pepper flakes in oil in a small heavy saucepan over moderate heat, stirring, until pale golden, about 4 minutes. Whisk in remaining sauce ingredients. Simmer, whisking, 1 minute, then cool.
  • Make summer rolls:
  • Cover noodles with boiling-hot water and soak 15 minutes, then drain well in a sieve. Pat dry between paper towels and toss with vinegar and salt to taste.
  • Put a double thickness of paper towel on a work surface and fill a shallow baking pan with warm water. Soak 1 rice-paper round (make sure there are no holes) in warm water until pliable, 30 seconds to 1 minute, then transfer to paper towels.
  • Arrange 1 piece of lettuce on bottom half of soaked rice paper, folding or tearing to fit and leaving a 1-inch border along edge. Spread one fourth of peanut sauce over lettuce and top with one fourth each of mint, basil, cabbage, and noodles. Roll up rice paper tightly around filling and, after rolling halfway, arrange one fourth of cilantro and carrot along crease. Then fold in sides and continue rolling. Transfer summer roll to a plate and cover with dampened paper towels.
  • Make 3 more rolls in same manner. Serve rolls halved on the diagonal.

8-inch spring roll wrappers
Fresh chives (optional)
Creamy Peanut Dipping Sauce
Spicy Hoisin Dipping Sauce
1 avocado, thinly sliced
1/2 cup fresh basil leaves
1 medium carrot, cut into matchsticks (1 1/2 cups)
1 small cucumber, cut into matchsticks (3/4 cup)

Steps:

  • Pour boiling water over vermicelli rice noodles and soak 15 minutes. Drain and rinse. Divide into 8 equal portions. Fill a wide, shallow bowl with cool water. Working with one spring-roll wrapper at a time, soak until pliable, 20 seconds. Transfer to a flat surface and smooth.
  • Place a layer of fillings on bottom third of wrapper, leaving a 1 1/2-inch border. Top with a portion of noodles and another layer of fillings.
  • Fold bottom of wrapper tightly over fillings.
  • Roll over once, tuck in sides, and finish rolling. If desired, add 3 fresh chives and continue rolling to enclose them. Transfer roll to a plate and cover with a slightly damp paper towel. Repeat to make 8 summer rolls. Serve immediately with dipping sauces, or refrigerate, up to 2 hours.

16 oz firm tofu ( - cut into ½ inch strips)
3 - 4 cups spring mix or shredded lettuce
1 cup shredded red cabbage
1 avocado ( - cut into ½ inch strips)
4 oz dried vermicelli rice noodles ( - cooked according to the directions)
1 cup fresh herbs ( - cilantro, basil, mint (use any combination))
rice paper wrappers ( - I used 10 inch wrappers (25 cm))
¼ cup vegan fish sauce ( - (See Note 1 for other vegan alternative); For non-vegetarians: substitute with regular fish sauce)
¼ cup sugar
⅓ cup water

1 Tablespoon chili garlic sauce ( - (optional))

Steps:

  • For each sauce, set aside the garnish and mix together all the ingredients in a medium size bowl. Add the garnish right before serving. Makes 3/4 cup peanut sauce; makes 3/4 cup hoisin sauce; makes 1 cup of Vietnamese dipping sauce (nuoc cham).
  • Cut the block of tofu into 1/2 inch strips. Add a teaspoon of oil to a pan over medium high heat and fry the tofu strips until they are golden brown on both sides. About 4 - 5 minutes. Set this aside.
  • Add about a third inch of water to a large shallow dish to dip the rice paper wrappers in. Dip one sheet of rice paper wrapper in the water for two seconds and place it on a flat surface. (see Note 2)
  • Starting with the side closest to you, add the mix greens/lettuce and shredded red cabbage on top of the rice paper wrapper, leaving an inch of wrapper on the edge to grab ahold of later. This will provide a barrier between the vegetable filling and the delicate rice paper wrappers.
  • Next place the peppers, carrots, tofu, and avocado on top of the mixed greens. Finally add the vermicelli rice noodles and fresh herbs on top of everything. You should have a stack of the filling piled on top of each other.
  • (Optional) For presentation: if you prefer to see the colorful vegetables through the wrapper, lay them flat on the rice paper wrapper in the center. As you're rolling it up, you should be able see the vegetables through the rice paper.
  • Starting from the end closest to you, pick up the inch of wrapper left uncovered and roll it up a quarter of the way.
  • Continue rolling until all the filling is rolled into the rice paper wrapper.
  • Fold the left and right side of the wrapper towards the center and continue to roll it all the way up.
  • Place the summer roll on a plate and let it sit for 1 minute or until the wrapper is no longer tacky. The surface should still feel soft and pliable but it should not feel sticky since the excess water should be absorbed by now.
  • Cut each summer roll crosswise into about 2 inch pieces and arrange them on a plate. Serve with the peanut, hoisin, and Vietnamese dipping sauces.

1/2 cup rice wine vinegar
2 tablespoons sugar
2 teaspoons salt, divided
1 small seedless cucumber, peeled
1 medium carrot, peeled
1 small jicama, peeled
1 large green papaya, peeled, halved length-wise and seeded
1 teaspoon fresh lemon juice
2 teaspoons fresh cilantro
1 teaspoon canola oil
1 ounce rice vermicelli noodles
6 (8 1/2-inch) dried rice spring roll wrappers
8 leaves Bibb lettuce, ribs removed, torn into small pieces
Peanut sauce, recipe follows

Steps:

  • Combine vinegar, sugar, and 1 teaspoon salt in a small saucepan. Cook over medium heat, stirring until sugar is dissolved. Remove from heat and let cool completely.
  • Slice cucumber lengthwise into long 1/8-inch-thick strips. Cut each strip length-wise into 1/8-inch-wide pieces. Slice the carrot, the jicama and the papaya in the same way. Combine the cucumber, carrot, jicama and papaya in a large bowl. Toss with the vinegar mixture, lemon juice and cilantro.
  • Bring a medium pot of water to a boil. Add oil, noodles and remaining salt. Boil until noodles are tender, about 2 minutes. Drain and rinse under cold water. Noodles should remain in a bowl of cool water until ready to use.
  • Before filling the rolls, transfer vegetable mixture to a colander to drain. Gently press out excess liquid. Drain the noodles and arrange on a baking sheet. Cover loosely with a damp towel.
  • Set up a large shallow bowl of very hot water. Slide a spring roll wrapper into the water. Wrapper will become pliable after about 45 seconds. Remove it from water and lay it flat on paper towel. Place lettuce on the bottom half of the wrapper. Arrange a 1/4 packed cup of vegetables over the lettuce. Spread out 1heaping tablespoon of noodles over the vegetables. Roll wrapper up, tucking in the ends as you go. Roll as tightly as possible.
  • Repeat with remaining wrappers. Trim off the ends of the rolls. Cut each roll in half and each half in half on a diagonal. Stand rolls on the flat end to serve. Serve with peanut sauce.

Steps:

  • Dip a rice-paper wrapper into a bowl of warm water for 5 seconds; transfer to a clean work surface (the wrapper will still feel hard but will soften as it sits).
  • Lay a piece of frisee on bottom third of rice paper; top with some carrots, daikon, pepper, scallions, mint, and cilantro.
  • Roll, tucking in one end as you roll and leaving the opposite end open. Place roll on a plate; cover with a damp paper towel. Continue filling and rolling rice paper until all ingredients are used. Do not refrigerate. Serve within 30 minutes.

40g fresh mint ("húng cây")
100g bean sprouts without the yellow part (optional) ("giá")

  • Prepare the prawns In a saucepan bring water to a boil with a pinch of salt. Add prawns and simmer for 1 to 2 minutes until pink. Remove prawns and cool in iced water. Peel and cut in 2 parts prawns and then set aside.
  • Prepare the pork Heat the oil in a wok over medium heat. Sear pork for 1 to 2 minutes until lightly browned on all sides. When pork cool thinly slice it.
  • Wrap and roll! To make the fresh rolls briefly dip a rice paper in a bowl of water until soft (or just wet a little bit the rice paper with your fingers). Remove and place on a dry surface and smoothing it with your fingers.
  • Place the lettuce julienne onto the rice paper close to your body with a bit of rice noodles and top with some basil, mint and bean sprouts.
  • Add a line of 3 pieces of pork then a line of 2 to 3 pieces of prawns. Fold the 2 sides parallel and roll up tightly, press to seal with a little bit of water.
  • PEANUT DIPPING SAUCE Prepare and mix all ingredients in a bowl and stir well. Adjust chili at your convenience and add more Hoisin sauce if you prefer the dipping sauce more salted. (Keep in a fridge for 2 days only)
  • Serve the fresh spring rolls with a bowl of peanut sauce on the side.

4 ounces baby spinach, stemmed
4 ounces enoki mushrooms
3 medium carrots, julienned
6 ounces extra-firm tofu, julienned
1 bunch fresh mint leaves
12 spring roll wrappers
1/4 cup creamy natural peanut butter
2 tablespoons hoisin sauce
1 tablespoon soy sauce
1 tablespoon sriracha hot sauce
1 teaspoon fresh lime juice
1 medium clove garlic, grated
3 tablespoons fresh lime juice
2 tablespoons fish sauce
2 tablespoons sugar
1/2 teaspoon sriracha hot sauce
1 clove garlic, minced

Steps:

  • For the summer rolls: Bring a large pot of water to a boil. Add the mai fun noodles and cook until softened, 1 minute. With tongs, lift the noodles out of the water and drain; reserve the hot water for rehydrating the spring roll wrappers.
  • Lightly grease a baking sheet or serving platter with oil to prevent the finished summer rolls from sticking. Clear a large work surface in front of you. Along the far end of the surface, line up the spinach, enoki mushrooms, carrots, tofu, mint and mai fun in that order. Set the spring roll wrappers and reserved hot water to one side of you.
  • Take one spring roll wrapper and dip it into the hot water; it will soften quickly. As soon as the wrapper softens, lift it from the water and lay it flat and smooth on the work surface. Arrange 3 spinach leaves in a horizontal line across the center of the wrapper, leaving a 1 1/2-inch margin on either end. Top with a few pieces each of enoki and carrots. Place 2 or 3 pieces of tofu above the spinach, so the tofu and spinach lie parallel. Place 4 mint leaves above and parallel to the tofu. Top the carrots and mushrooms with about 1/4 cup of the mai fun.
  • Lift the end of the wrapper closest to you up and over the filling, tucking it slightly underneath with your fingertips. Gently shape the roll, giving a gentle tug to keep it taught. Begin rolling toward the back end of the wrapper, then fold the sides in toward the center of the roll to close off the ends. Continue rolling to the end of the wrapper. Place the summer roll on the oiled tray. Repeat to create 12 rolls.
  • For the peanut sauce: Whisk together the peanut butter, hoisin, soy sauce, sriracha, lime juice and garlic in a medium bowl. Whisk in 4 tablespoons water. The sauce should be a thick enough to coat the back of a spoon but still drip off lightly. Add another tablespoon or two of water if the sauce needs thinning.
  • For the nuoc cham: Whisk together the lime juice, fish sauce, sugar, sriracha, garlic and 3 tablespoons water in a small bowl. Refrigerate until ready to use.
  • Serve the summer rolls with the peanut sauce and nuoc cham.

100g Sriracha Tofu (CLICK THROUGH TO RECIPE)

1/2 Red Capsicum / Bell Pepper, julienned
1/4 cup Fresh Cilantro
Peanut Hoisin Dipping Sauce

Steps:

  • Place a damp tea towel or dish cloth onto a clean surface and fill a bowl with warm water. Dip a rice paper wrapper in the water for 20 seconds or until softened, then lay the wrapper on top of the damp tea towel.
  • Pile your fillings up in the middle bottom of the wrapper (be careful not to overload), then fold the bottom and sides of the wrapper over the fillings like an envelope. Roll up tightly and set aside. *NOTE this step is clearly demonstrated in step by step photos in this post*

water for boiling
4 oz. (115 g) rice noodles or rice vermicelli (or Maifun rice noodles)
4 oz. (115 g) peeled and deveined shrimp
2 leaves fresh lettuce, sliced
6 sheets Vietnamese rice paper
2 oz. (56 g) carrot, peeled and cut into matchstick strips
4 tablespoons hoisin sauce
1 tablespoons creamy peanut sauce
4 teaspoons apple cider vinegar
1/4 cup warm water
sugar to taste
1 tablespoon roasted peanuts, roughly chopped or pounded

Steps:

  • Add the water to a pot and bring it to a boil. Add the rice noodles and cook per the package instructions, stirring occasionally. Drain and rise under cold water, set aside.
  • Combine all the ingredients for the Hoisin-Peanut Sauce together in a small bowl. Whisk it to mix well. Transfer to a dip bowl and garnish with the peanuts.
  • In another small pot, bring some water to boil. Cook the shrimp for about 1 minute, or until the shrimp are completely cooked. Drain, let cool, and slice in half lengthwise. Set aside.
  • Divide the vermicelli, shrimp, lettuce and carrot into 6 equal portions.
  • To assemble the summer rolls, dip one sheet of the rice paper in a big bowl of water. Shake off the excess water and quickly transfer it to a clean, dry and flat working surface, for example, kitchen countertop or a chopping board.
  • Place the rice noodles on the bottom part of the rice paper.
  • Add the sliced lettuce and carrots.
  • Place 3 shrimp halves on top.
  • Fold the bottom side of rice paper over the filling securely, then fold the left and right sides of the rice paper over the filing. Make sure the filling is secured tightly.
  • Continue to roll the summer roll over, as pictured below. Repeat the same until everything is used up.
  • Cut the Summer Rolls diagonally in the middle into halves, place them on a platter, and serve immediately with the Hoisin-Peanut Sauce.

3/4 to 1 cup cooked shrimp
1 to 2 cups bean sprouts
1/2 cup fresh Thai basil, roughly chopped
1/2 cup fresh coriander , roughly chopped
1/4 cup carrot, shredded
3 to 4 spring onions, cut into matchstick pieces
For the Optional Tamarind Dipping Sauce
1/2 cup water
1/2 teaspoon tamarind paste
2 teaspoons sugar
1 tablespoon soy sauce, or wheat-free soy sauce for gluten-free diets
1 tablespoon fish sauce, or vegetarian fish sauce
1 heaping teaspoon arrowroot powder , or cornstarch
3 tablespoons water
1 clove garlic, minced

Steps:

  • Gather the ingredients.
  • Set rice wrappers aside. In a cup, stir together the soy sauce, vinegar, fish sauce (if using), and brown sugar.
  • Place rice noodles, shrimp, bean sprouts, Thai basil, coriander, carrots, and spring onions in a large mixing bowl and drizzle the soy sauce mixture over. Toss to mix.
  • Then form the rolls.
  • Fill a large bowl with hot water (but not boiling, as you'll be dipping your fingers into it). Start by submerging 1 wrapper into the water. It should soften after 30 seconds.
  • Remove the wrapper and place on a clean surface. Add another wrapper to the hot water as you fill and roll the first one.
  • Place a heaping tablespoon of roll ingredients toward the bottom of the wrapper. Spread out the ingredients horizontally (in the shape of a fresh roll).
  • Fold the sides of the wrapper over the ingredients, then bring up the bottom.
  • Tuck the bottom around the ingredients and roll to the top of the wrapper.
  • To secure the roll: Wet it with a little water on your fingers and press (like sealing an envelope).
  • To serve, place your platter or bowl of rolls on the table along with the dipping sauce.
  • Eat with your fingers; keep lots of napkins nearby.
  • Gather the ingredients.
  • In a saucepan over medium heat, mix together water, tamarind paste, sugar, soy sauce, fish sauce, arrowroot powder dissolved in 3 tablespoons water, 1 clove minced garlic , and dried chile flakes, if desired.
  • When near boiling, reduce heat to low, stirring until sauce thickens.
  • Taste for saltiness, spiciness, and sweetness, adding more fish sauce (instead of salt), more sugar, or more chile flakes as desired.
  • The sauce can be served warm or cold.

1 lime, segments of
1 tablespoon Dijon mustard
1 tablespoon brown sugar
1/4 cup grapeseed oil
1/4 cup Thai basil, whole
1/2 lb bean sprouts, hair removed
1 medium red bell pepper, julienned
1 medium carrot, peeled, julienned
1 lb smoked tofu or 1 lb tempeh, julienned
10 -15 rice paper sheets, 10 to 12 inches diameter, rehydrated
salt and black pepper, to taste

Steps:

  • In a bowl whisk together juice, lime, mustard and sugar.
  • Whisk in the oil and season.
  • Toss with all the vegetables and tofu.
  • Check for seasoning.
  • Lay out 1 wrapper and place a small mound of mix near the bottom.
  • Roll bottom towards the middle.
  • Fold in both sides and continue rolling.
  • Finish roll and let rest.
  • Individually wrap each roll with plastic wrap.
  • Will hold for 2 hours in the fridge.
  • Remove wrap, slice on the bias and serve on top of extra salad.
