EASY COCONUT SHRIMP

Golden, sweet, and crisp, coconut shrimp is a crowd-favorite finger food and it always flies off the serving platter especially if you serve it with spicy sweet dipping sauce. Coat raw shrimp in a flour mixture, then dunk into beaten eggs, then cover in your coconut breadcrumbs topping before frying.

1/3 cup all-purpose flour or whole wheat flour (spoon & leveled)
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 large eggs, beaten
3/4 cup Panko bread crumbs
1 cup sweetened shredded coconut
1 pound raw large shrimp, peeled and deveined with tails attached
3-4 Tablespoons vegetable oil or coconut oil*
optional for topping: 1 Tablespoon finely chopped cilantro
3 Tablespoons Thai chili sauce
6 Tablespoons orange, peach, or apricot jam or preserves

Steps:

  • Start with 3 medium bowls. Combine flour, salt, and pepper in one. Beat the eggs in the second bowl. Combine Panko and coconut in the third bowl.
  • Dip the shrimp into the flour, then the eggs, and then dredge the shrimp into the coconut mixture, pressing gently to adhere. You want a lot of coconut on each shrimp. Set the coated shrimp aside on a plate as you coat the remaining shrimp.
  • Add enough oil to cover the bottom of a large skillet over medium heat. Fry the coconut shrimp in batches such as 7-8 shrimp at a time- do not crowd them in the pan. Flip after 2 minutes and fry the other side for 2 minutes or until golden brown. We prefer ours a little darker, so I fry each side for about 2:30-3 minutes.
  • Place the finished coconut shrimp on a plate lined with a paper towel as you fry the rest. Sprinkle with finely chopped cilantro. Mix dipping sauce ingredients together and serve with shrimp.
  • Cover and store leftover shrimp in the refrigerator for up to 3 days.

3/4 cup pineapple juice
1 package (14 ounces) sweetened shredded coconut
1 pound large shrimp, peeled and deveined
Oil for deep-fat frying
Optional: Apricot preserves, sweet-and-sour sauce, plum sauce or Dijon mustard

Steps:

  • In a bowl, combine the flour, seasoning, egg and pineapple juice until smooth. Place coconut in a shallow bowl. Dip shrimp into batter, then coat with coconut., In an electric skillet or deep-fat fryer, heat oil to 375°. Fry shrimp, a few at a time, until golden brown, about 1-1/2 minutes, turning occasionally. Drain on paper towels. Serve with dipping sauce or mustard if desired.

18 uncooked jumbo shrimp (about 1 pound)
1/3 cup cornstarch
3/4 teaspoon salt
1/2 teaspoon cayenne pepper
3 large egg whites
2 cups sweetened shredded coconut
Oil for deep-fat frying
APRICOT-PINEAPPLE SALSA:
1 cup diced pineapple
1/2 cup finely chopped red onion
1/2 cup apricot preserves
1/2 cup minced fresh cilantro
2 tablespoons lime juice
1 jalapeno pepper, seeded and chopped
Salt and pepper to taste
Lime wedges, optional

Steps:

  • Peel and devein shrimp, leaving tails intact. Make a slit down inner curve of each shrimp, starting with the tail; press lightly to flatten. In a shallow dish, combine the cornstarch, salt and cayenne; set aside. In a bowl, beat egg whites until stiff peaks form. Place the coconut in another shallow dish. Coat shrimp with cornstarch mixture; dip into egg whites, then coat with coconut., In an electric skillet or deep-fat fryer, heat oil to 375°. Fry shrimp, a few at a time, for 1 to 1-1/2 minutes on each side or until golden brown. Drain on paper towels., In a bowl, combine salsa ingredients. Serve with shrimp and, if desired, lime wedges.

1/3 cup all-purpose flour
2 egg whites, lightly beaten
1 1/3 cups flaked coconut
oil, for deep-fat frying
1 (12 ounce) jar pineapple preserves
1 tablespoon pina colada nonalcoholic drink mix, thawed

Steps:

  • Butterfly shrimp by cutting the inner curve of the shrimp deeply, but not all the way through.
  • Press to flatten on your cutting board.
  • Dredge the shrimp in the flour, shaking off excess.
  • Then dip into the egg whites and then into the coconut.
  • Fry shrimp in a deep fat fryer or deep skillet, a few at a time, for 1-1.5 minutes or until golden brown.
  • Drain on a clean paper bag.
  • To make dipping sauce, warm the preserves in a small skillet until it melts, and stir in pina colada mix.
  • Serve warm dipping sauce with fried shrimp.

1 tablespoon minced fresh ginger
1 -2 tablespoon fresh minced garlic (or to taste)

1/2-1 teaspoon dried chili pepper flakes (optional add in for more heat)
1 medium red bell pepper, seeded and chopped
1 -2 teaspoon Thai red curry paste (or to taste)
1 teaspoon curry powder (or to taste)
1 (15 ounce) can coconut milk
2 tablespoons soy sauce
1 tablespoon brown sugar
black pepper
salt (optional)
chopped green onion (optional)

Steps:

  • In a bowl combine the peeled shrimp with ginger and garlic; toss to combine.
  • Heat sesame oil in a large skillet (or wok) over medium-high heat.
  • Add in shrimp and cook for 3-4 minutes or until pink, stirring occasionally (the shrimp will not be cooked through) remove to a plate and set aside.
  • Add in the bell pepper, curry paste and curry powder (and chili flakes if using) to the skillet; cook for 2 minutes stirring occasionally.
  • Stir in coconut milk, soy sauce and brown sugar; cook stirring for about 3 minutes or until the curry paste dissolves.
  • Add in the partially cooked shrimp back into the skillet, season with black pepper and salt if desired and cook for 2 minutes.
